Suzy, GREAT RECIPES!!!! Sherry, Ive made that cocao pudding and it it absolutely FANTASTIC!!! you would NEVER know there is avocado in it.. my family loved it!!! but it doesnt keep well,so only make it fresh.

Try this one, it's YUMMY !

Chocolate Pudding
1 avocado, diced
1/2 c agave nectar
1/4 c cocoa powder
1/4 c water
2 T vanilla extract
1/4 t sea salt
Place avocado, agave nectar, cocoa powder, vanilla extract and sea salt in a blender. Gradually add 1 tablespoon of water at a time to achieve a creamy consistency. Chill and serve.Makes four servings(1/2 cup each).

I food a professional lifestyle concept in denmark and the avocado is not longer a vegetable.. They stuff this little gem into the bread list because of its carbs a avocado equals 30 grams of bread lol..

Emeril Lagasse's Avocado Soup

2 to 3 servings
Ingredients

* 1 large ripe avocado
* 2 cups chicken stock
* 3 tablespoons fresh lime juice
* 1 teaspoon chopped fresh cilantro
* 2 teaspoons sherry
* Salt and pepper

For the Salsa:

* 1/4 cup cooked corn kernels
* 2 tablespoons cooked black beans
* 1/4 cup sour cream
* 1 tablespoon finely diced red bell pepper
* 1/2 teaspoon chopped garlic
* 1 teaspoon olive oil
* 1 lime, juiced
* Fresh cilantro, chopped
* Salt and pepper

Directions

Peel and mash the avocado. Place the avocado, chicken stock, lime juice, cilantro, and sherry into a food processor. Puree until smooth, season with salt and pepper. Refrigerate for 1 hour. For the salsa. In a bowl combine the corn, black beans, peppers, garlic, olive oil, and lime juice. Season to taste with salt and pepper. Serve the soup in chilled cups topped with the salsa and fresh cilantro.

A very simple recipe from Tyler Florence.

Mashed Avocado with Lime

Ingredients

* 2 ripe avocados, halved, pitted, and peeled
* 1 lime, juiced
* 2 tablespoons chopped fresh cilantro leaves
* 1 teaspoon salt

Directions

Put all ingredients in a mixing bowl and mash with a fork until the avocado reaches the consistency of a chunky salsa. Chill before serving.

Salmon & Avocado with Sesame Soy Dressing
Gourmet Magazine
2 servings

Ingredients

* 3 tablespoons soy sauce
* 12 ounce salmon fillet, cut in half
* 1 tablespoon rice wine vinegar
* 1 teaspoon Asian sesame oil
* 1/8 teaspoon sugar
* 2 teaspoons fresh ginger root, peeled and grated
* 1 garlic clove, minced
* 1 chilled firm ripe avocado
* 1 teaspoon sesame seeds, toasted

Directions

Preheat broiler. Brush salmon with 1 tablespoon of the soy sauce. Place on a baking sheet and broil salmon for 10 minutes or until it is cooked through. In a small bowl whisk together, remaining soy sauce, rice wine vinegar, lemon juice, oil, sugar, ginger, and a pinch of salt until sugar is dissolved. Quarter pit and peel avocado and cut crosswise into 1/2-inch slices. Add avocado to dressing and gently turn with a rubber spatula to coat. Plate salmon and divide avocado and dressing between them. Sprinkle sesame seeds over avocado.

Avocado Compound Butter from Alton Brown

Ingredients
6 ounces ripe avocado meat, approximately 2 small avocados
1 tablespoon freshly squeezed lemon juice
2 ounces unsalted butter, softened
1 garlic clove, minced
1 tablespoon freshly chopped cilantro leaves
2 teaspoons ground cumin
Kosher salt and freshly ground black pepper

Directions
Peel and pit the avocados. Place all ingredients into the bowl of a food processor and process until well combined. Place mixture onto a sheet of parchment paper and shape into a log. Place in the refrigerator for 3 to 4 hours. Slice and serve with grilled fish or chicken.

Cajun Guacamole


Ingredients
2 Fresh California Avocados, about 1 pound
1 Tbsp. fresh lemon juice
1/2 cup finely diced red bell pepper
1/2 cup small cherry tomatoes (cut in halves or quarters, if large)
1/4 cup thinly sliced green onion
3 cloves garlic, finely chopped
1/2 tsp. chopped, fresh thyme leaves or 1/4 rounded teaspoon dried
1/2 tsp. salt
1/4 tsp. freshly ground black pepper
1 pinch cayenne pepper

Instructions
1. Coarsely mash (DO NOT PUREE) avocados; stir in lemon juice. Fold in remaining ingredients.
2. Guacamole is best made as close to serving as possible. For short-term storage, seal in an airtight container with a piece of plastic wrap against the surface of the guacamole.

A couple of Guacamole recipes.

Mexican Guacamole

1 avocado
1/2 tsp. cumin
1/2 tsp. dried oregano
1 tsp. chili powder
pinch sea salt

Blend until creamy and let sit in refrigerator for 1/2 hour allowing the flavors to harmonize.

Ron's Guacamole

1 perfectly ripe avocado
1 Tbs. honey
1/2 Tbs. lemon juice
1 tsp. garlic powder
1 tsp. simulated chicken base
pinch cayenne
1/2 tsp. onion powder

Blend until creamy and let sit in the refrigerator for 1/2 hour allowing the flavors to harmonize.

Another way to try to eat cottage cheese!

Lite Guacamole

1 cup low-fat cottage cheese
1 tbsp grated sweet onion or 1-1/2 tsp dried onion flakes
1 clove garlic, minced, or 1/8 tsp garlic powder
1 tsp salt
Pinch of cayenne pepper
2 tsp lemon or lime juice
1 ripe avocado, peeled and cut in chunks
1 tomato, peeled and chopped

Place cottage cheese, onion, garlic, salt, cayenne pepper, lemon or lime juice, and avocado in a food processor or heavy-duty blender. Process until smooth. Pour into serving dish and fold in chopped tomato. Cover with plastic wrap, making sure the plastic touches the entire surface of the dip, and refrigerate for 2 hours.

Serve with baked low-fat corn chips or cold vegetable crudites such as celery or carrot sticks. Use within 24 hours.

Yield: about 2 cups, 15 calories per tablespoon.

Bobby Flay's Crunchy Avocado Salad
4 servings

2 ripe avocados, peeled, pitted and diced
2 ripe beefsteak tomatoes, diced
1/2 cup pitted nicoise olives, roughly chopped
1 cup canned chickpeas, drained, rinsed and drained again
2 tablespoons roughly torn flat-leaf parsley
1/4 cup champagne vinegar
1/4 cup extra-virgin olive oil
1 teaspoon ground cumin
1/2 teaspoon smoked paprika
Salt and freshly ground black pepper
2 ounces blue corn tortilla chips

Gently toss the avocados, tomatoes, olives, chickpeas, parsley, vinegar, olive oil, cumin, paprika, salt and pepper in a large bowl. Crumble the chips over the top and serve.

Marinated Avocado
6 to 8 servings

1 red onion, thinly sliced
3 lemons, juiced
8 ripe avocados, peeled, pitted, and halved
1/2 cup extra-virgin olive oil
1 tablespoon finely minced garlic
Gray salt
Freshly ground black pepper
1/4 cup minced Italian parsley leaves

Slice the red onion and put it in a bowl with the lemon juice. Dice the avocado, add it to the bowl, and toss well to coat. Add the olive oil and garlic and season with salt and pepper. Just before serving stir in the parsley.

Avocado Pizza

1 pizza crust or 1 large pita bread
3 tablespoons tomato paste
1 garlic clove, chopped finely
1/4 cup green onion, sliced
1/2 cup mushroom, slices
1/3 cup olive, sliced
100 g cherry tomatoes, sliced
1/4 cup reduced-fat mozzarella cheese
1/2 cup basil leaves
1 avocado

1.Preheat oven to 180F.
2.Spread pizza base with tomato paste, garlic and shallots.
3.Arrange mushrooms, olive and cherry tomatoes around base. Sprinkle with cheese. Put in oven and bake for 20 minutes or until everything is golden.
4.Remove from oven and serve topped with avocado and basil leaves.

Found this recipe at RecipeZaar.com. It sounds different!

Fusion Avocado!

Ingredients:
1 avocado, pitted and halved
1 teaspoon soy sauce

Garnish:
wasabi (optional)
pickled ginger (optional)

Directions:
1.Take a spoon between the meat and skin to loosen.
2.Pour 1/2 teaspoon soy sauce over each half of avocado.
3.Scoop out with a spoon and enjoy!
