I USED COCONUT OIL FOR A SKIN MOISTERIZER..SEEMS TO WORK WELL THEN I READ THAT IF YOU SWISH IT AROUND IN YOUR MOUTH IT WOULD HELP WITH GUM PROBS. AND ALSO MAKE YOU FEEL LESS LIKE EATING AT NIGHT..TRIED IT..SEEMED TO HELP MY GUMS..PLUS I DID HAVE A FEELING OF NOT WANTING TO EAT AFTER DOING IT..BUT I DIDN'T KNOW IF THAT WAS REAL OR PHSYCOSEMATIC?

I love coconut oil! I love it on my multigrain healthy bread. I spread it on after toasting the bread. Way better tasting than butter in my opinion. :)

Just joined this group I use the organic coconut oil from Costco and I like to put 2 tablespoons on my asparagus and rost them in the oven 375 degrees for 20 min yummy

My mom has Alzheimer's, so after some recent publicity about the benefits of coconut oil for Alz, I remembered that I had a BIG tub of Nutiva EVCO. I don't know why I ever stopped using it! Everytime I cook with it, I find myself licking the spoon because I love the coconutty flavor, and don't want to waste any bit of it.

Now that I am motivated to help mom's brain function, I use it for almost everything! When making mom's favorite muffins, I replace the vegetable oil with coconut oil, and wow, does it improve the flavor! I use it for stir-fries, and also made crunchy fried chicken thighs. I put about 1/2 tsp in my morning coffee, along with some cinnamon (no sweetener). I like how the residue in the coffee moisturizes my lips. I also add about 1 Tbsp to my morning smoothies.

I started this about two weeks ago, and I am down 2 lbs. To be fair, I have been conscious of what I am eating, and exercising on a more regular basis. I wouldn't say coconut is a miracle weight loss product, but it is certainly an important part of my family's healthy life-style!

coconut oil massaged into the hair and scalp, then a warm towel for 30 minutes or so makes one fantastic hair conditioner too!! (shampoo it out afterwards).

I also have very low thyroid.
I suggest starting by using CO in place of other fats when possible. The recommended dosage is 2-4 tablespoons per day, but you want to work up to that.
You can fry with it, bake with it, make mayonnaise, use it on your skin...
Check out the recipe thread. Lots of great ideas in there.

I get a tbsp of EVCO in daily by adding it to my 1st coffee of the day. I use agave syrup to sweeten, almond milk vs. creamer and the CO adds another layer of nutty goodness.

Last night I had half a MIM and had coconut butter on it. It was wonderful!! I like that even better than peanut butter..... (I had put unsweetened cocoa powder in the MIM, so it was chocolate coconut)... Yummmmm

I will say the Nutvia brand has a better taste then the one i bought from LiveSuperFoods. Nuvia I can actually eat from the spoon, nice and creamy and tasty. I have been cooking steel cut oats with fruit from my morning breakfast and I just add tbsp of coconut oil to it. Yummy! My other new addiction is coconut butter by Artisana. Love it! I dont know what it is but it seems lately when i have coconut oil I have noticed a surge of energy. Its amazing:)

Good question. From what I understand, EVCO is better, but refined is still good.
Because CO is not effected the same way other fats/oils are with high heat. I get Spectrum cold pressed refined CO for foods that I don't want that coconut taste in, like mayonaisse.

last week i had oatmeal a few days and this is what i did and it was good. microwave 1/2 cup old fashioned oatmeal, 1 tablespoon ground flax seed, 1 tablespoon coconut butter and 1 teaspoon cinnamon with 1 cup water. then stirred in about 6 sliced fresh strawberries and 1/2 to 1 cup refrigerated coconut milk. it was very filling too.

I "discovered" this no-cook technique about a year ago, just love it. I usually mix the oats with soy milk and a little sweetener and let it soak in the fridge overnight. I bet it would be heavenly with coconut milk.

I've mixed oats, water and/or milk (any kind) and whatever dried fruit I have on hand put in the fridge overnight and viola! a quick, filling and tasty breakfast in the morning.

I usually have some refined coconut oil on-hand just because it is less expensive and I can pick it up without taking an extra trip just for it. I do have some virgin, organic now--a tiny jar that is almost gone. emoticon

Now that I know to put the coconut meat into my food processor and just whir it into a paste, I am going to get my little ax out and see if I can get a fresh coconut opened! I will poke a knife tip in the "eyes" and pour out the coconut water for drinking, first. My dad used to bring coconuts and do this, then open them with a hammer on a thick cement entryway.

For a crust, I have used coconut oil in oil-crust recipes. I am gluten-free now, too, and did use some GF flour with the online recipe and liked the results. It is definitely not flaky, but is a decent crust with a nice taste and texture.

More and more I am eating my fats raw--even going to 3-minute eggs instead of hard-boiled, and chicken breast instead of the whole chicken. I can pull the skin off myself and the dog likes it. I think this is better for me. I eat nuts as raw as I can, but found out from The Renegade Health Show that almonds sent from California have to be pasteurized. They still call them raw because they are not well-roasted!

I wish our national-leadership would learn how to use words for communication instead of for deceit! And advertising has been out of control for decades. I read a sci-fi story once about how advertisements were EVERYWHERE. I saw it coming, too, and it almost is as bad as that story made it out to be. YUCK.

I've used coconut oil for butter, cutting the amount by about 1/4 and adding back 1/4 in liquid, for the more-sensitive recipes that I don't make much anymore. For other fats, I use 2/3 to 3/4 as much in coconut oil, since it is more liquid once warmed. It works out, and the extra flavor, even using refined coconut oil, is better than most of the recipes were to begin with.

I think it depends on the recipe. can see it working very well in unbaked and raw cookies and bars. I THINK it would work fine in cooked cookies and baked items... I haven't tried so I can't say for sure. I could see making some awesome icecream with it maybe. lol
I like eating right off of the spoon. It's so yummy!

The only GF product that I like is Trader Joe's brownie mix, I add extra coco, use coconut oil and I add 1 cup of Psyllium powder. But, that said, I think just eating normal foods that don't have gluten is fine. I don't think I really need all that other stuff. Its fun to eat, but need is a very strong word.

Btw, I love the coconut oil. I use the refined in my oatmeal and in stir frys. I haven't tried it in a smoothie yet. I thought it would get clumpy because it sets up so fast. Maybe I will make one for dinner.

I'm not a huge fan of GF anything... Although, I did make a MEAN GF Fish batter and I did find ONE good bread recipe (Ancient Grain GF Bread). Anything from the store is just starches and crap and rice flour. Tastes like cardboard. BLECK!
I got Elana's Almond Flour cookbook and I also ordered a coconut flour cookbook. Those will be what I try and use for those occasional baked goodies.

Don't know about "wise". I rather think I'm the old fashioned fool who still thinks she has to impress people who eat her food...well, it really is a lot of fun sometimes even when stressful. But foolishly I jump into making something spectacular like that beef pie with Guinnes Stout in it. OMG!!

I've never attempted a crust with one of those GF mixes. Maybe I should give it a go--I have so many doubts...sigh

Annie I agree the wise women of the world are the crust makers!! The rest of us it is too much! the only one I ever got right the first time was a cream cheese one that has everything I am intolerant to in it!! emoticon so now it is nut and a GF ginger snap one! I am too afraid of GF flours to even mess with it if I can't do gluten properly!! emoticon

I don't make flaky crusts except at holiday or special times. For me, as yummy and easy as the nutty crusts are, they just don't work for everything. Though I don't personally eat wheat hardly at all, when I bake for others then I really appreciate the combination of wheat flour and butter for a grand crust. I mean how the heck could I make my famous Steak and Guinness Pie using a nutty crust. No way, wouldn't work...I don't think anyway.

Amber... if you like the fruit juice in there there's nothing wrong with it. I don't that's all. Just a personal thing. I don't drink store bought fruit juice ever. (except 2 tbsp of aloe vera juice in my smoothie)
Simply personal... nothing wrong with it at all.

Also, I don't eat grain anymore, so I never have to worry about making a pastry crust, but I have used coconut oil and almon meal to make a FABULOUS pie crust. Don't even need all the bother to make pastry. Geez! It was such a pain anyhow. Too much fuss. lol

Shortening:
Vegans like to use palm oil in place of shortening. I have tried that and it's just, sort of, okay. Can't get the nice flakiness that I shoot for with pastry. I have doubts that coconut oil would work either cuz it melts so quickly into such a fine oil and I don't think it would maintain the "pockets" necessary for a flaky pastry such as a pie crust. I always use butter to make pie crusts and it works very well.

And using coconut oil on anything that is warm, like hot cereal or toast there really isn't any reason to heat it first. It melts faster than butter so just plop it on, swirl it in, spread it, or whatever. When I was doing oats more often I frequently put a "pat" or two of coconut oil on my oatmeal; or any hot cereal I ate.

Thank you SO, SO much Laura for this new team and all this chat about coconut butter. This is great and your knowledge makes getting a quick education easy for us.

Laura, our store quit carrying the plain stuff, too. Ours just has the kinds mixed with fruit juice. Is there any advantage/disadvantage to having the fruit juice in with it? Other than sugar?

My grocery store has it (Blue Monkey brand) at Save-On-More. But I can also get it at the health food store; they have several brands. I used to get O.N.E. but I can't find the plain stuff anymore. Just coconut water mixed with other fruit juices.

Refined coconut oil would be interchangeable in recipes with virgin. The consistency is exactly the same.
Coconut water is really healthy, but almost completely VOID of fat. I use coconut water all time in smoothies and shakes.

Nope. Not a dumb question at all...

The recommended daily dosage of coconut oil is 31/2 tbsps. If you only eat 1-2 tbsps that is OK. You will still benefit.
If you are looking for ways to get in your daily amount of coconut oil per day, but want other sources other than coconut oil, you can also get it from other coconut products...

Daily Dose Comparison (taken from Coconut Oil Miracle)

3 1/2 tbsps of coconut oil

7 oz fresh coconut meat (about 1/2 coconut)

2 3/4 cups dried, shredded coconut

10 oz of coconut milk


Now, Coconut butter is simply coconu toil with the fibre still intact and coconut cream is coconut milk with less water ( I have coconut milk that is much thicker than any cream I've ever seen. I can stand a spoon up in it. lol)
Anyhow, so I'm gonna say that the abopve two mentioned items are APPROXIMATELY similar is dosages.

Excellent way to start is frying. Excellent to pour a little warmed oil on your oatmeal. This morning, I warmed my oil up with some berries, then drizzled it over my coconut waffles, then topped it off with my extremely thick coconut milk. I'm gonna have some coconut shrimp for dinner. The fat from this and fat that is naturally oiccuring in the rest of my food will put me at my upper limit for fat intake today. So, make sure you guys are aware HOW MUCH you are eating. 4 TBSP a day is PLENTY! lol

Lastly, the refined coconut oil I have (Spectrum's expeller pressed) should be just fine to use. I use that stuff to make things that I don't want to taste like coconut. Like my mayonaisse. I actually prefer to use the virgin oil for most other things (I LOVE coconut). But, the good news is that coconut oil is not effected by high heat like other oils. There is no oxidization, so even if the refined stuff were high heat processed, it should still have the same benefits of virgin oil.
But, I still prefer the virgin over refined and I would recomend that anyone try to take the virgin oil as often as possible. Of course, there will always be times (or people) that make the use of the virgin oil quite impossible.

Good tips, Laura! Okay, here is what may be a dumb question for you... does drinking coconut milk, coconut water, eating coconut butter etc. give the same health benefits as the coconut oil? If not, what are some creative ways to introduce coconut oil into the diet? I have began using it for frying/cooking/sauteeing (LOVE IT!!) I normally use the non-coconut-smelly kind and then I use the extra virgin coconut oil on top of toast. What about adding it to oatmeal or something? Is that a good method? Obviously I am not looking for weight loss methods, but rather the health benefits. Ahem, baby belly... Lol!

One other question. I may have asked you this before (((forgive my BABY BRAIN))) emoticon but can the non-coconut-smelly (I think more refined -- help me here!!) be used in baking in place of shortening? I RARELY use shortening, but sometimes I like biscuits for dinner and do have a couple of cookie recipes that call for shortening.

Studies show your body digests MCFA's more easily than other fats. In fact, they follow a completely different pathway when eaten. They're sent directly to your liver to be metabolized and converted into a rapid source of energy. This leads to an increase in your metabolism, improving your chances for faster weight loss and providing more energy.

I believe that low-fat diets make your body crave fat. When trying to lose body fat, try to increase intake of healthy oils so you get a nutritious source of healthy fats in your diet. I find it helps reduce appetite and cravings for fatty food. Supplementing your diet with healthy fats (such as coconut oil, fish oils, flaxseed oil, or olive oils) will help sustain a feeling of fullness and may reduce food cravings.

The amount of weight you lose will depend on a number of factors...
Eating a healthy diet and including moderate exercise will play a key role to successful long term weight loss. If you wish to lose weight with coconut oil it should be a slow, gradual and healthy process.
Some people have reported losing up to 5 pounds a week using virgin coconut oil. Although, that may not be a realistic goal for everyone.

If you're going to try and lose weight with coconut oil, I think the best way is by gradually introducing it into your daily diet.

I originally started frying with it. I would use virgin coconut oil instead of vegetable oils. I also added some warmed oil to smoothies and shakes.

A little oil in some warm water before a workout can really boost yur energy (since the MCT turn quickly into energy)

Once you're used to taking 1 tablespoon of coconut oil a day, you can try slowly increasing this amount until you're consuming 2 to 3 tablespoons daily.


Conclusions:

Remember that weight loss should be done in a healthy and balanced manner. Eating a nutritious diet and getting plenty of physical activity will play a key role in reaching your weight loss goals.

It may be possible to lose weight with coconut oil because:

It gives your body the healthy fats it needs for optimal health and energy.

It may increase your metabolism - the medium chain fatty acids are digested faster resulting in increased metabolism and more calories burned.

May reduce your food cravings - You get a great source of healthy fat in your body, so you may feel satisfied and full, lessening your food cravings.

Remember that coconut oil is a not a one-stop, instant cure for weight loss. This healthy natural oil may help boost your metabolism and get you on the road to healthy manageable weight loss.
