I got home late tonight and really had very little time or energy to throw together a decent dinner, I thought. I had a thin chicken breast but I knew I wanted to spice it up a bit. It occurred to me to make a quick chicken curry, so I poured some coconut yogurt on it and some curry powder and stuck it in the oven at 350.
I didn't think it would be that good without onions, garlic, tomatoes, apples, etc. but I was in a hurry. I had some leftover root veggies so I threw those in the mix. Well it came out great...so simple. Truly if I had had the time I would have sauteed the chicken and put in the other proper curry ingredients, but even prepared so simply and quickly, it came out good. When I was all done eating it I remembered that I used to always have to have rice with curry, but it didn't need rice...the root veggies provided a contrast to the chicken. It was nice to eat my chicken with some sauce on it.
To substitue for rice bases I have heard people suggest beds of cooked cabbage or zucchini and I think the root veggies work well too.
