We can make hamburgers with lettuce and tomatoes, take canned chicken and make a chicken salad-salad. Left overs from the night before. You can make anything for lunch that we can eat at dinner..

I like to bake a chicken or two sometime during the week, and snack on it whenever the mood strikes me. (The skins is sooo delicious, it's hard not to eat it all at once!)

I'm also an enthusiastic fan of eggs, at any time of day. Lunch is usually my breakfast anyway, since I'm not a hungry-in-the-morning kind of person.

When I'm home, I usually make some lettuce wraps with random sliced meat, chopped veggies, and mustard. Then I have berries or carrots on the side, or maybe a cup of soup. I mix it up a lot, so I don't get bored with it. When i'm in the office (cafeteria), I'll get a grilled chicken breast or burger with a side of grilled veggies or a huge taco salad.

Everydaypaleo.com has some good recipes for lunch, such as asian chicken lettuce wraps and stuffed avocados. Those are similar to the lunches I make, such as using leftover roasted chicken to make chicken salad as filling for lettuce wraps or stuffed avocados, yum!

Thank you for the feedback so far! :-) Websites would be good. We have an ebook-like recipe list that he has somewhere, we just haven't had a chance to glance at it yet... looking for more of a list of recipes rather than a pdf file every now and then.

There are plenty of websites with low carb cooking and recipes that work very well with a primal type diet. Do check them out. Otherwise go with what you normally eat...just think plants and animals.

I don't know about an actual lunch recipe...I think most people do some variation of leftovers, salads or lettuce wraps. Not many have the opportunity to make a recipe for their lunch...

My fiancÚ, William and I just started our Primal diet today, and are slowly sliding ourselves into it. I'm curious as to what types of lunches would be good to make, or to snack on. On a diet like this, I'm sure others have found it hard to find a good lunch to have. Dinner is always easy, and we can eat leftovers, but we're looking for actual recipes. If anyone can help, thanks. ;-)
