I blogged about how GOOD this, but I just wanted to share it with you here lol. This is totally going to be a staple lunch for me now.
"Ok, today I had 1 avocado mixed with 1 serving of SILKEN tofu. I emphasize silken, because that's the only kind that will work well for this. It really stretches the avocado, and the tofu has absolutely no taste, so you'll get all avocado flavor. It's just a great protein, low calorie filler. I just add a pinch of salt for my taste (I do that with avocado anyway). IT WAS SOOOOOO GOOD. I ate it like dip on slices of cucumber (a low cal, good fiber food right?). It was great... in total, that lunch was about 350 calories, and I was very full."
