I use all of kale and I use beet greens. As for the fruit, I pickle them or roast them. I have cubed them and tossed them raw in salads and also shredded them. Beets are an exlir that will clean your colon, so it is wise to consume only a small amount of raw juice at a time. I have added a 1/3 cup of juice to a green smoothie - I was enlightened
Some video I watched several months ago mentioned that the stems were acidic so I avoid them. I'm sure I get enough roughage with the rest of the plant. The stems get cut up and put in the compost. There I have some healthy worms working on them. I do use beet greens and beets but not too often. The greens are gone long before the beets.
