I use all of kale and I use beet greens. As for the fruit, I pickle them or roast them. I have cubed them and tossed them raw in salads and also shredded them. Rawfoodforkids on YOUTUBE has a cabbage, beet, apple, orange salad that might interest you and your wife: youtu.be/2_bzwuRjKVc - she roast the beets.

Beets are an exlir that will clean your colon, so it is wise to consume only a small amount of raw juice at a time. I have added a 1/3 cup of juice to a green smoothie - I was enlightened emoticon

family likes them roasted I eat the greens, but not the bulb/fruit as my blood sugar spikes and I get icky to much sugar in those ruby beauties for me :(

thank for the info, I am not to fond of beets but I do like the greens, how do you keep the beets. I have some pickled but my wife can't stand vintner. her doctor told her to eat them

Some video I watched several months ago mentioned that the stems were acidic so I avoid them. I'm sure I get enough roughage with the rest of the plant. The stems get cut up and put in the compost. There I have some healthy worms working on them.
I do use beet greens and beets but not too often. The greens are gone long before the beets.

Yup, I use the beet stems and leaves in green smoothies. I use the beets themselves in smoothies along with fruit. Strawberries are good along with watermelon.

I use the whole kale leaf and stem but don't use beets at all so can't help there
