I am experimenting with a "regular" grill pan and something to weigh down a plate on top of it. I know that may sound barbaric but I love the way my grilled cheese sandwiches used to come out doing it this way.

I'm cheap!

I got a square pan that has grill groves on the pan and top with a handle from target and I think it was called a panini maker and it works great.

I definitely love my Cuisinart Griddler. Using it as a panini press is easy - and only one of the many functions it can do.

A Foreman grill will not give you even pressure. The back hinge is fixed, not flexible.

I flatten panini's in my George Foreman grill since I don't use it for meat. Works fine. I would really love a real panini maker though.

I have a Cuisinart Griddler. It's a 5 in 1 grill, and it's really worth the money if you want a panini press that can function as other things. I prefer multipurpose appliances.
