Sorry Rheyn, I must have misunderstood you. It sounded like you said you made hummus with garbanzo based flour but not with chickpea based flour.

Hi, Terry - No, I used dry chickpeas, but they needed to be rinsed too. After rinsing, you can dry them overnight like I did, or dry them in a warm oven.
ROSALIEESTHER- The roast turned out good, after all that. I don't know if I'm going to be a seitan fan (kind of rubbery), but the taste was good.
My food processor was newish and powerful so it was pretty scary when making the flour was so difficult for it. But it turned out fine!

I'm embarrassed to say I've never used it much (and I figure it's a very healthy flour to use). I made my own chickpea flour once years ago for some recipe (I can't remember what) and have never used it much at all since. But it's mainly because I'm still learning about "how" to use bean and nut flours in recipes. So far I've not really used them much.

What, aside from this roast, have all of you used chickpea flour for? I sometime put it in bread-y and seitan-y things, but I have never done the most obvious: made hummus with it. I have had garbanzo flour-based hummus before, though, and it was amazingly smooth and creamy. But you make it in a pot/pan (the number of handles doesn't matter, lol) and that's kind of hard to do with no cooking range.

K8, I've made chickpea flour before, but if I understood you right, you used canned beans, because you said you rinsed them...right? If so, next time use dried chickpeas--the kind that come in a bag and have had the water removed from them. (Like most dried beans are.) Don't rinse them...they need to be very dry to make flour. Best I recall it was pretty easy to grind them up, in that dry state. (But I'm like you--if you can buy it already ground, so much the better!!! Ha!)

If you can't find it at your store, you can get it on Amazon. Bob's Red Mill makes it, so if you have that brand in your area you should be able to find it.

Well that was a little scary. The directions said to put small amounts in, so I did. But for a while I thought the little chickpeas would be the winners in Beans over Blades. They weren't going anywhere! The FP did eventually win, but I'm still hoping I don't have a piece of unground chickpea in there. And the FP heated up a LOT. I couldn't even get the bowl to turn (so it would unlock & I could take it off) until the motor cooled down. Fortunately, it produced almost the 2/3 cup I needed, so I just filled in the remaining amount with almond flour and called it a day! I think I'd buy my chickpea flour in the future.

Help! I have a Seitan Mushroom Roast to make tomorrow and it calls for chickpea flour. I couldn't find any at the store yesterday. I have almond flour and oat flour. Think either of those would work? Thanks!
