I also make a pita sandwitch; I cut the pita in half (I get them whole) and put in a toaster and then the pita opens, I then put mayonnaise or salad dressing. I just put in a salad in the pita. I put in letuce, greens, cucumbers, broccoli, cauliflower, tomato, red pepper, onoin, zucinini, yellow squash, ect.

ok now I'm ready for lunch

Here is my ultimate sandwich: Sautéed eggplant, mushrooms, onions, greens (combination of spinach, collards, kale, ect) red pepper and tomatoes (not sautéed) with some raw cucumbers, roman and a little mayonnaise. All the veggies I can do raw or sautéed except the eggplant. The tomatoes don’t sautéed well, they get mushy.


That Chickpea salad is soo yummy, I have tried a recipe very similar.

Here are a few sandwiches I eat regularly:

black bean gardenburger with guacamole
hummus with spinach and peppers
hummus with cucumbers
grilled (fake) cheese with tomato
grilled onions with spinach and (fake) cheese

Hey GENTLEVIKING! I use a spoon and mix away. For a super fast prep, I pop all the ingredients in the food processor, seperately, to get them finely minced. Then I mix all with a spoon. Hope this helps!

Thanks for the chickpea recipe, Veganjas! But may I ask if when you say "mix" the ingredients together, do you mean just mix them with a spoon, or do you mean "blend" them together in a blender? Just want to make sure I do it right, because it sounds like it would make a nice sandwich spread.

I keep hearing good things about falafel burgers, but have yet to try them. I'll have to soon!

Bonjour! I like to make falafel burgers and chickpea sandwiches... simply make a falafel like you would, for any recipe - but instead of deep frying them, I make the batter into patties and bake them! I make about 8 at a time, and my hubby and I can make yummy sandwiches all throughout the week.

The chickpea recipe is a little "here and there", whatever I have on hand. What I usually add are:
1 cup chickpeas, mashed with fork (still flaky looking)
3 tablespoons vegan mayonnaise
2 tablespoons diced onion
2 tablespoons diced carrot
2 tablespoons diced celery
1 teaspoon Dijon mustard
Handful of currants, if desired
Handful crushed walnuts, if desired
Salt, pepper

Mix it all together until it is a bit "pasty" then, I add it in wraps, sandwiches, etc. etc.! Very yummy!

I also like to sauté mushrooms until very golden brown with onions and garlic; then I blend it into a paste with some nuts and herbs, and use this "pate" in my sandwiches...

I normally add all the normal "fixing" (tomato, lettuce, onion, etc.) to my sandwiches.

Michele, at first I thought your post read "vegan sammitch ideas" (cause that's what kids sometimes call sandwiches--sammitches! LOL!!! When I hear them called that, I get hungry right away, just thinking of those good sandwiches mom made us as kids.

I tend to rely a lot on sandwiches for lunch (probably too much). I tend to lean on veggie meats or hummus, so I've not been too creative yet. (I love some of the ideas folks have offered and want to write them down and try them!) I definitly need more variety in my sandwich eating, too!

I realized this weekend I make a vegan "hot dog" sometimes that I love. (Had never really thought of it as being vegan...but it is.) It's really just baked beans on a hot dog bun.

* hot vegan baked beans
*whole wheat hot dog bun
*onions (kinda a"must have" ingredient, I think)
* mustard, relish, veggie cheese, or whatever toppings you'd put on a regular hot dog. Note: the more toppings, the more it taste like a real hot dog.

Eat it with a fork, not with your hands (too messy). It's weird how it tastes surprisingly similar to a hot dog.

A sandwich that is southern in nature is a collard green sandwich. Greens are full of protein, so it makes a good sandwich even though it sounds weird.

I make my own version (which some folks may not like, but I do):

*Whole wheat bread
*Canned collard greens
*raw mushrooms
*onions
*condiment of your choice

Drain the greens and press out much of the liquid. Warm them (or warm first, then squeeze out liquid--your choice.) Put on bread, top with fresh sliced mushrooms and onions and condiment of your choice. (I think I often used thousand island...but haven't made one in a while and can't recall.)

Like I said, this one is an aquired taste and it's not the original southern way of doing it. I've actually never had a real southern collard green sandwich, yet. Our family never ate them, but some southerners did. It was more of an ethnic treat, but is growing in popularity. A local booth at a yearly festival here now sells them every year and I keep wanting to get me one, but the lines are usually too long!

i make a tempeh "chicken" salad (curry flavored, with apple walnuts and celery) and a garbanzo "tuna" salad (onion, parsley, celery, green olives, cucumber). both are made with a "deli" dressing made from silken tofu (nori, the kind in the container) with lemon juice or apple cider vinegar, nootch, mustard, turmeric, and both served either like a sandwich or as a wrap in a tortilla or collard leaf.

I enjoy eating sandwitches. Most tims there quick and simple. I have alist of sandwitces i eat. But im also looking for other ideas???? Please. The ones i currently eat : penutbutter, penutbutter an banana, banana, hummus, hummus an fresh pear slices, pinapple, tomatoe, fat frse vegan refried beans, an the newest straight from 21 day vegan kickstart recipe zuchinni an red bellpepper white bean all my sandwitches i eat on tortillias, whole wheat vegan rolls or whole wheat pita pockets now id like some more idea of other good sanwitches???
