If you like really great sandwiches, have you heard of gorilla sandwiches? Some Whole Foods carry them but not ours. I make them myself and my family loves them. They are a bit time consuming but they are so fun.
2011 Goals: 1. gym class 4+ x/week 2. run/walk 40+ miles/week 3. lose my last ten pounds by June 1st 4. maintain my weight for the rest of 2011 5. Train for my 60-mile walk 6. Eliminate my quilt UFOs by actually finishing everything I have started
This was another creation of mine, and it is so good! The fresh basil is extraordinary on this sandwich and really plays off of the other flavors.
Ingredients: Bread (I used home-made tepenade bread with sesame seeds) garlic hummus tomato sprouts lentils roasted red peppers marinated portabello mushrooms red onion baby arugula 1 large leaf of basil splash of balsamic vinegar cucumber
Smear the hummus on the bread. Add the sprouts and lentils. slice the onion, tomato, and cucumber thinly and layer. Add rest of the ingredients and dash some balsamic, and voila! again, and great sandwich. Slice in half because this one is a monster! lol
