Spring contract is ending - phew I survived the most stressful season yet at camp for me -- Monday summer season begins - hopefully it is better... But first I must survive a BBQ Thursday for 175+ and another one on Friday for 350+ . There is a weekend off the last one Noni and I have together until --- whom knows when.....

Three days in a row! And Noni has three days too? Enjoy!
I also am off work until Wednesday. I'm hiking in the Presidential range in NH. There's some snow, but not much, and the bug season hasn't started yet.
Back to work for me next week, things will be crazy busy for a while, so I'm going to enjoy myself while I still can.

I'm off three days - three days ... Yes YES
So far I am up early - laundry started - coffee made - cooked eggs for Noni and me. I wrote two postcards and I'm going to place my food order in for Tuesday delivery.. ( ok that is work - but once I do it I don't have to think about it again - do I ?)

Then the decisions of what to do on this long weekend -- hoping to go on a bike ride in Vancouver area some where..
- not too warm or sunny where I am right now...

Sunday was my turn to work - Noni was off... I was to have the whole day off on Saturday but I couldn't leave Noni all alone so I worked in the morning to help her out then I went to the Vancouver area... Sunday after lunch was finished I was off, so Noni and I went to Stanley Park to ride together.. Surprisingly what one can do with your free time if you actually get moving...

It sounds Iike we're in the same position. We have two locations, three owner/chefs. I run one location and expect people who get paid for an hour's work to do an hour's work. My two partners run the second location and expect that the staff should be happy. Not that I want unhappy staff, it's just that I think you can be happy and get some work done at the same time. They think that I ask too much. All the staff think that one of the others is " motherly" the second is "fun" and I'm the strict one with standards. One day a couple of weeks ago I went over to the other location right at the end of their lunch service to borrow something. I walked into the kitchen, one of the bosses was cleaning the panini grill, the second was at the pot sink doing dishes and two of the staff were leaning against the counter watching them. They were eating cookies. I was furious. I blurted out, "what's wrong with this picture?" They glared at me. They expect the staff to wait on the customers and do a few small chores but not too much else, because they think that it's important for the staff to be" happy", as if by working for pay is an unhappy thing. I run things differently at my location, and truth be told many of the staff prefer to work with me because I give them responsibilities and challenges and teach them things.
My assistant is a different matter. I'm getting worked up just thinking about her.

I do relate .. I thought last year was my best one ever .. Yet the owner said he wasn't happy with my relationship with my staff -- I too harsh .. So this year I am not going to make them work - meet my standards ..
However the owner always tells me what I want and expect is correct - just how I say it.. Well how do you get young people to work without insulting their sensitive feelings .. I don't know..

So I don't get a relief cook this year .. Those they interviewed didn't meet camps environmental attitudes.. So it remains just my wife and I - but we will relieve each other to get a day off..

Also I didn't get a pay raise - but a wait and see if I don't insult any sensitive feelings in the next two months or so then we will talk about an increase..
I want to leave... But my pay remains good for the six months I do work...
So I'll bite my tongue and only do the minimum- no extras that I normally did in the past..
I did lots of over time hours, lots of extra special meals - and we will try to get through this six months
- he did increase my wife's pay some..

Been having some poor sleep this week, stressing about work issues. In the grand scheme of things these are minor issues and I'm not sure why they're bothering me so much. Over the past forty five years I've worked in many different environments under less than great conditions and with some questionable coworkers. Typical restaraunt stories. Perhaps it's my age, that this is getting to me so much. I just can't seem to overlook the little things any more.
I'm tired of redoing my assistants work. Is it too much to ask for some consistency?

Nice commute! You do live in a scenic area.
We are obsessive cleaners also. The best are the looks I get for having workers clean all the refrigerator gaskets. Every day.

This was me doing some work on Sunday.
But first I had too begin cleaning the kitchen from the inactivity of the last six months


almost ready to go .. I now will get the toothbrush out and clean those hard to get places - I have a high standard when it comes to the safety and well being of the food and prepping areas - start off the season the best we possible can be because once the two hundred guess begin to arrive - the standard doesn't lessen - but the maintenance is harder to keep. We are a very primitive trailer kitchen yet we are cleaner than many restaurants I have worked in or have peaked in while visiting their establishments. Blame that on the fact I was a military chef and many years in hospital kitchens.

Less then two weeks then I'm back to work -- oh my













So yesterday I took Noni up to the highlands where Dalhouise and I had hiked at the beginning of February. We did the same rout s without getting lost this time. What I noticed was it seemed so much shorter to reach the end point then when I did it the first time. Much more comfortable hiking in known territory then going into the unknown.

So these are our signs of Spring bursting upon our beings, and take note of the Dalhouise wallowing in a little creek bed..

This days was the first time this year that Noni came out riding with me. I'm sure it won't be the last, but our days are numbered for the freedom to just drop everything and go out to enjoy the sunshine and warmth. Camp season for me begins in about 15 days and 20 days for Noni. I really hope that this year I do get more opportunity and have energy to go out riding / walking / hiking more during the summer then I have had in the last few seasons. Still trying to figure out why my handheld GPS and computer won't work together - haven't geocache in so long now which makes me sad.

What a great companion you have there!
Looks like spring is on its way where you are! I can see a difference in the light, but it's still cold and we have a lot of snow on the frozen ground.
My partners are talking about firing my assistant and getting a replacement for her ( or maybe finding a replacement and then firing her), but I'm resisting the idea. She causes me a lot of extra work for sure, but at least I know what I've got in her. I'm afraid I'll get less, or someone worse in some way. They do all the employee management, hiring, firing etc. they haven't been doing terribly good at that, but it's our agreement. She's the best assistant that they've hired for me so far.
What I'm wondering is whether to warn her that she's in danger of being fired if she won't step up her game. I've tried different ways to motive her, I've tried talking to her about her attitude. I've tried positive reinforcement, I've tried tough love. I think that she thinks she's doing a good job, but when it comes down to it, it's just a job for her. She has no passion for food. She rarely if ever samples things. She listens but never asks questions. She shows no interest in learning about food, but she does seem to love the "managing" part of the job.

I was sitting here remembering my lament about not having a bike because someone stoled it - that was two years ago now. I have replaced it and I do enjoy getting out exploring. I really need to do more riding - that is the goal for this year.
Anyways here are is a summary of my ride earlier this week

I peddle up this steep - real steep hill and at the top is the hospital - how convient I thought to my self as my heart pounded in my chest.



















One of my highlights was seeing this

I can't wait till the rains stop so I can go out once more..45 days or so before I'm back at camp in the kitchen unable to go for walks and ride so easy

. Let's hook up Dalhouise



So on Monday we celebrated Family Day Holiday by heading north 45 minutes to go see a water falls we heard about. On route we stopped to let Dalhouse out to get some exercise and we ended up snowshoeing. We heard dogs barking just up the road so we went exploring.
( left Dalhouse in the car at this spot - worried he would be dog food for these other working pups..

So after church and lunch we went out the door for an afternoon walk. Another new area for us. There is always an under currant of fear.. Getting lost, meeting a bear or a cougar - these thoughts must be put down or else we would never get out side.. If we give in to these fears where would it stop ? -- fear of driving along the highway ( car accidents) fear of terrorist, fear of gang doings and thuds, all the possibilities are ceaseless.. We now live in perilous times if we listen to the news on the TV.. But then again staying home is not safe either with so many earthquakes and fires happening... Fear is no way to live.. For me I will trust in the Lord Jesus and accept all that comes my way and get outthere and Live.

Well supper turned out well, --- too bad I couldn't get my self in the picture.. My first time cooking lamb on the BBQ - excellent.. However I put some back into the oven to over cook it because I know Noni doesn't like rare and I was not sure about our guest.
No picture of the cake.. Forgot we were having such a great time talking and then devouring it that it slipped the mind .. it was a simple graham cracker crust cake with pudding and cream cheese filling.

I love barbecued lamb. I hope that your dinner went well, what did Noni make for dessert?
I went skeet shooting with the big guy yesterday, it's a great stress release for me. My staff changes from day to day - I certainly am not the scheduler here- and my Thursday andFriday crews leave me terribly tense.

We have company coming for supper. So I'm cooking a lamb shoulder on the BBQ slowly. Also I am cooking carrots, squash, potatoes, garlic on the BBQ as well.
I am helping Noni clean our condo, so dusty and picking up stuff and hiding in another room - you know what I mean right...

Don't over do it, get some recovery time..
Staff -- I have to agree with everything you said .. Just thinking about it makes my blood pressure rise... This year at camp I don't get staff... Oh yes they will hire program people who will all do a rotation I the dish area / front of house. I won't be their immediate supervisor - people say I demand too much from them and makes them up set - so the office director is taking over their supervision and I m to keep quiet and accept that the work ethic will be their responsibly. Yes I still give out job responsibilities but that is all if it is not done correct I tell office director.....
This is going to be chaotic ... But if that is what the owner wants so be it ... I will bite my tongue and close my eyes.

My wife began a new job and I was telling her all about going 5 to 10 minutes early just yesterday..

What a beautiful area you have for hiking in!
I loved the idea of Dalhouise eating from a spoon. Perhaps my imagining it was funnier than the video would have been.
The swelling has finally gone down on my foot. Working our typical 12-14 hour days in the kitchen isn't the best way to recover, but what can you do. Some days I just despair with the work ethics out there. I have 36 part timers and my one full time assistant, and so few of them actually impress me with their habits. I think that for many of them, they were never taught how to work by their parents. Some of them have shown the ability to learn, though. I'm kind of sad that I have to teach something like that. They should already know this by now. Or am I being unreasonable? A couple of my workers will arrive a few minutes early, but most just run through the door as the clock is striking. I tell them, if you're not ten minutes early then you're late, but they don't get that concept.
I've been thinking lately that I'm going to start confiscating phones at the door. Pretty sad. Gosh I could go on and on.

I wish I could post a video - it is so adorable Dalhouise eating from the spoon.
My FB and instagram has a video.

Noni wanted to give Dalhouise the left over rice from our restaurant meal ... I say he won't eat it. She mixes it with the beef juice and a couple of beef chunks and we get our doggie container. Well here is the proof - I was wrong - first time in my life honest......
Dalhouise did eat all of it but only after she fed it to him from the spoon. When we offered the container he just turned his nose away in discuss

Yesterday I dropped a no. ten can on my foot and broke two toes. It happens and I had to still work today but I had hoped to leave early and elevate it for a bit. Didn't work out because my assistant "wasn't feeling very well" and had to leave early herself. I'm the boss so I need to suck it up and stay I get that but it kind of perturbed me. She just doesn't take this job seriously. It isn't a priority for her. I'd dump her if I thought I could replace her easily.

Noni was asked to make another birthday cake this week.
Wow another week flew by.. Where did it go?

I had to rescue Dalhouise this week. First time was more serious. I went to camp to speak with the owner about some new equipment. While I was inside the office Dalhouise was outside running around exploring the winter wonderland. Meeting over I open the door and there was a huge wolf staring at me only a few yards away.. Dalhouise was at the door.. I think if I was a few minutes later it would had been a different outcome. The wolf took off as soon as I step out the door.

Today Noni and I went to church, came home and there was No Dalhouise to meet us at the door... Strange... We proceed to take off our coats and still No Dalhouise - I go into the living room before Noni ... There curled up sound a sleep on a pillow on the couch sleeps Dalhouise.
What he knows he is not allowed to be there, I quickly shake him and give a gentle tug to the floor.. Phew"........ If Noni saw this he would had gotten a scolding....
Dalhouise owes me....

I was sitting on the couch.. Enjoying the birds feeding on my balcony watching the morning pass by... It was sunny... Then it became cloudy ... Noni said it was going to rain... I better get my butt out the door. Dalhouise and I bundle up with our rain gear and head out..
We ended up walking the shoreline of the Manquam River down to the Squamish River.

Great Blue Heron

Sea Gulls

American Dipper







Now I am home back on the couch.. Watching over 40 Pine Siskins feed at my feeders with a few flurries of snow falling.
I hope you enjoyed our little hike

We have sun, not too cold.. So I asked Noni do you want to walk around the pond or hike around Brohm Lake. Once I was off the couch it was easier for me to make a decision as Noni wasn't giving me any clear directions.






Those stairs were a little tricky going up and down

This day began alittle dreary, I didn't have too much motivation to get outside.. Dalhouise didn't care about this mood - he wanted his walk. After Noni and I did go to the swimming pool - the pool felt cold today. The hot tub seemed extra hot.

I think that that's the key to getting through the winter, at least around here where we get so little sunshine, but so much snow. Get outside every day, no matter what.
I also think that most of my better nature photography occurs during the "unsettled weather" days.
If I get my planned recipe development project finished early enough I'll get out on my snowshoes this afternoon. Perhaps I'll get out even if I don't!

Today woke with a sore back, sat around for awhile, but finally I ask Noni if she wanted to go out.. Out the door we went. I parked the car at a different entrance to walk around Nexen Beach and some of the Estuary - took longer than I planned but it was a good time out.

We have absolutely no snow at all here now. It's the strangest winter season ever. My snowshoes are just sitting there in the corner gathering dust.
Looks like you had a good time. I'm so glad that Dalhouise got off leash for a bit, he's a fun trail companion!
Last week and the next three are my slowest weeks of the year, work wise. It's pretty dangerous for me, because if it isn't busy I get into all sorts of trouble with food. My step count goes way down because I'm sitting with family and friends, talking or playing cards or other sedentary activities.
Went to the gym with my middle daughter and her fiancée, but I never miss my strength training workouts, nothing's changed with that, it's my cardio that suffers.
I'm wishing for snow!

We are having some snow. I take Dalhouise outside. We walk on lease until we clear civilization - I let him go free and he turns around and head backs home.. I catch up replace the lease and continue on our walk. Half way around the pond walk I let him go free again.. We walk enjoying the snow till we get to the turning point.. One way is a long way home and one is short... Dalhouise takes the short trail..
What a funny dog !

So we braved the shopping terrors and drove to Vancouver to enter the mall. Traffic was out of this world. Crowds of human bodies filled every available space in every store / shop we entered- but we survived.
I had to buy Noni a gift.. I see this hot pot cooker... I grab it. Noni is with me and does t say a word... Once we get home I tell her this is going to be her Christmas gift.. .. Hey at least it is not a vaccume !
No it doesn't count... I'm informed... It is for both of us.
( next day I take Dalhouise out for a walk - stop in a store again and buy her a few personal things like chocolates and headphones.. That is personnel...)
Anyways we can't wait till Christmas - we open and use our HotPot ....
It was delicious ..









. It sure did taste good and I think very healthy and low in calories

Dalhouise didn't care.. He is just happy we are all home together

Oh my gosh but I sure do miss my line cook days! Prepping depends on the menu of course, but it's always been my perception that it's lower down on the food chain than line work. Does that even matter? I've worked in uber busy fine dining places where the line cooks don't get a minutes rest from the start of dinner service. I loved the pressure and the pace. I've also always enjoyed the prepping process. Stocks/sauces, chopping -my favorite, breaking down large cuts of meat, filleting fish.
For me, line work is easier on my back than prepping. When I prep I feel that I spend more time in one place, and have larger heavier things to haul around than on the line.
From what I've picked out of your posts from your summer job at the camp, I think that you would do just fine on a busy line. You're certainly organized and creative enough for it. The time passes so quickly there that you might not even notice any twinges that your back gives you.

Another day .. I am told Dalhouise sits in my spot most of the day. When he hears a noise in the hallway, or if the door slams extra loud he gets all excited hoping it is my return. I feel so bad for him.. But at least he is in a place he knows and Noni is with him so he isn't alone.
Yesterday I spent four hours on the line... I can't do that I will have to quit if the restaurant is planning on me being a line cook... Today I was in the back as prep cook .. This was so much easier on my body..
I am still lost on what I am to make... There isn't good recipies to follow..
But I think I can get through this..

Happy old dog? I know one of those, too.
Being off work for a bit sounds good for you.
I have all three of my daughters and my only granddaughter up for a visit, we're going to be decorating cookies and working on this years gingerbread architecture. Have to plan out my menu for next week @ the cafe though, write up my dry goods order. I just hate the way dairy goes up in price so much right before the holidays.

The sunshine makes all the difference in the world. This morning Noni, Dalhouise and I walk for two hours along the Squamish River enjoying our time off together.
Later in the afternoon I go out the door alone to ride a different part of the Squamish River. I think I went too far and too late as it was quite dark when I returned.

Wow, those are great bald eagle pictures you got! We've been seeing a lot more bald eagles around here this year, there must have been a nesting pair in the hedge row up the road a bit.
I'm with Noni, I'd much rather be on the bike trail than the road.
Off today for a three day hike in the White Mountains. Hoping to hike Mount Pierce and Mount Eisenhower, but the weather will determine how much we can do. I just need to get away from work and expend some serious energy.

In my mind's eye I am in some far away location on a sandy beach frolicking in the waves.

So late in the afternoon Noni and I go on a bike ride. I was planning to go myself but all of sudden she has her jacket on and is coming. I didn't mind, but it made me change my route because she is scared to drive on the roads, so with her I need to stay on the bike paths.

Had an incident at the cafe today that still has me perturbed.
We make our own pickled red onions in batches of fifteen pounds of onions. Easy enough. A very distinctive sweet/sour Asian flavored pickle.
I had my assistant make them yesterday, she's done it before, she had a note card I wrote up with the proportions of rice vinegar to sugar to garlic, crushed red pepper, Szechuan peppercorns. I can't be standing over her. So today I wanted to use some on a salad with Gorgonzola, candied walnuts, red grapes, and I tried one. It tasted wrong. It tasted like a vinegary slice of red onion. Yuck. When I asked her about it, she told me that she decided on her own that 7 cups of sugar was too much, and so she just used 2. And she couldn't find the Szechuan peppercorns so she left them out. They just tasted awful, I couldn't use them and I couldn't fix them at this point. I want her to show some initiative, to think for herself, but this was just unuseable. A small quantity of pickles, not a big thing really, but indicative of a bigger issue we're having.

I, home here just watching the rain pour out of the sky, enjoying the wet visitors getting an easy meal at the feeders. Later today the plan is to go swimming at the local pool when it is half price. Monday to Friday between 11:30 and 1. You only pay two dollars per person instead of the normal five dollars. ( I think it is five) all I do know two dollars is a fantastic price.
Of course I will have to take Dalhouise out for a morning walk in this down pour before that swim .. Oh Dalhouise..

Dalhouise and I just came home from a quick morning walk.. 7c out side with a few sprinkles of rain falling. Soon I must go pick up my mother... We are going to drive 65 km to Vancouver to eat lunch at Swiss Chalete to celebrate our 6th year wedding anniversary with Noni.
After we eat we will go to one of the malls so that Mom can do some Christmas shopping. I hope to buy Noni some rain pants and possibly shoes for the both of us.

Terrorist .. I always now have this inner fear / anxiety / concern of being shot or blowup when I go to crowed areas.. Not only terrorist but sick wackos are in the big cities.. I like my smaller towns ... But just like the fear of Cougars , Bears - I gotta go

I almost got ran over today.
But I continued

So this is a new month.. Not working, and I must begin a new all over again.. I gained so much weight... going to bike ride, walk Dalhouise and go swimming two times a week.. That is the plan -let's hope I do it!

So sore, not from hiking but from cleaning the kitchen and packing and unpacking the car.
Yes - today is the last day to cook, the last day of this camp season, and it is Friday...
Been too busy really ro let all this sink in... But Today. This day I begin a six month weekend.
This day is also my last pay cheque also.. Well that doesn't cheer me up to much... Monday I will have to go into the government office and fill out so many forms to apply for employment insurance .. Never like this process... But so thankful it is available to us
Well I better get going, I have hungry staff waiting for breakfast.

Well this is it, my last five days of working at camp till next year that is if the owner is renewing my contract. I always have some dout if he will or not... I am not the greatest people person, especially working 40 plus hours seven days a week. My meals are always great, on time, enough quantity, guality and variety enough.. But I exspect a high standard of work to be done by the dish crew and this is where all the trouble lies. The clinents are well fed and I am very good at keeping them happy with all their demanding meal requirements and pickiness.
We went from only one dishwasher when I began 7 years ago to 4 this year and they still have issues with doing the job at hand.. I don't have respect for young workers who agree to work but just want to sit around or talk to their peers or go play with the children, Do the job you were hired to do.. And so it well.
Oh well three days of feeding 80 to 100 people and two days of feeding 20 staff as we clean and store - closed down the kitchen ...

Yesterday was not a good walking day.. I did take Dalhouise out in the morning... But after that.. Church... A visit with mom .... Home and a long long nap.... That turned into a movie then a sleep
Now it is Monday morning and I must pack up and return to the camp... One more time ...

Next day ... The floor has been vacuumed - I was able to repair it.. The couch is useable once more and my car is ready for winter now... To top it off after waking up early.. Going back to bed I had a nice sleep in, only to be woken by Noni with a cup of coffee in hand.

Dahouise and I went out the door for a nice hour and half walk .

Today is an off day. I get a three day weekend... Hurray!
Wake up early to take my car to the dealership for the winter tune up and to rotate my winter tires onto the car. A couple of hours later I am phoned and told it is ready. I walk Dalhouse to pick it .. I'm told I have a leaky rear axisle 400 dollars - no it has to wait I want a second opinion.
I also need a 40 dollar inner air filter - OK - replace that. I pick up my keys and return to camp to store my tires. At camp as I reach for the tires in the back - they are my winter tires... They forgot to rotate them on.... I am extremely ticked off.... I phone them from camp... Bring it back and they will fix it now.. This drive to camp and back is 45 minutes each way... Not helping my stress levels on my off day...
Our vaccum belt broke and I am stressing as I take it apart trying to fix it.. I am not good with stuff like that ... I'm a chef ..
Earlier I had to do some repairs to our couch.. Springs were loosen and my wife has been nagging me to fix it since last year.. And so I did it today as well ... I think I fixed it.. So she should be happy now.. The vaccum still needs a new belt ...

Now I get to sit on my chair - watch some TV and try to relax...
Watching Star Trek helps a lot ...

Today's seen birds while we were out


I managed to almost get an whole afternoon movie in today sitting on the couch, before the Dalhouise demanded an outside walk. I was watching Marley and Me... So sad and looking at my Dalhouise knowing he getting up there in age as well I just had to take him out and enjoy a walk with my wife and Dalhouise.

I decide to eat my lunch on the deck next to our camp kitchen, I sit down, ah my water is still on the counter, I go into the kitchen to get it and when I turn around my lunch is being ate by a Stellar Jay

It took us 16 hours to prepare and serve this meal.. We feed 200 people every day three meals and it takes less time.. Go figure....
But this meal had so much from scratch cleaning, washing, chopping, dicing, peeling, measuring and actually cooking. Everyone was so happy... What more can we ask..
So we are now left with two weeks of work left.. With weekends off.
Down side of that .. We must look for other work.. Apply for EI insurance and have no income for at least 4 to 6 weeks.

Happy Thanksgiving
So this is today's menu that Noni and I are preparing for today's supper 125 mouths to feed.
Turkey 45 lb
Ham with bone 35 lb
Scallop potatoes
Mashed potatoes
Dressing
Gravy
Brussels sprouts
Turnip
Honey glazed carrots
Baked squash
Peas
Corn
Cranberries
Jelly mould
Home made bread
Honey cake
Apple pie
Pumpkin pie
Blueberry pie
Lemon merging pie
Butter cream cake
Cookies
Chocolate macaroons

- that is all I can recal at the moment .. Gotta get back into the kitchen
