Glad that you have a little time to yourself to stop in! I know that this is your super busy time of the year!
We are busy but not as busy as it will get once the fall semester starts up in a couple of weeks. I'm trying to get my staffing numbers up. Partners decided to " let go" my assistant. To be fair, she wasn't worth the money that we were paying her, but at least she was something. Now I have no one, at least until we find a replacement.
Always something.

. This afternoon I took Noni to the lake for swim.

it was too cold for me to make the plunge today. Yesterday was perfect - hot, calm, and sunny - not today. Today was windy, overcast and a chill in the air.

On a positive note I found my sunglasses laying in the muck where I put the kayak in yesterday.

I went on a short hike, to Alice Lake Provincial Park earlier this month, I left Noni in the kitchen to serve our guess after I had prepared the meal. This me time was so needed.
I brought our little MSR camp stove to make tea and heat up some chili down by the river.
All in all I spent three hours just relaxing soaking up some sun and unwinding mentally.







The baby was left home too

The season keeps crawling forward.. I do have a good front of the house coordinator now but the dishwasher boys are driving us all crazy. There is hope of improvements- when is October?

I had two days off together with my wife and we left camp and went to our condo. Today is my mothers birthday so we celebrated it with her.
Yesterday we drove to Vancouver and watched Tarzan, I enjoyed it.

Spring contract is ending - phew I survived the most stressful season yet at camp for me -- Monday summer season begins - hopefully it is better... But first I must survive a BBQ Thursday for 175+ and another one on Friday for 350+ . There is a weekend off the last one Noni and I have together until --- whom knows when.....

Three days in a row! And Noni has three days too? Enjoy!
I also am off work until Wednesday. I'm hiking in the Presidential range in NH. There's some snow, but not much, and the bug season hasn't started yet.
Back to work for me next week, things will be crazy busy for a while, so I'm going to enjoy myself while I still can.

I'm off three days - three days ... Yes YES
So far I am up early - laundry started - coffee made - cooked eggs for Noni and me. I wrote two postcards and I'm going to place my food order in for Tuesday delivery.. ( ok that is work - but once I do it I don't have to think about it again - do I ?)

Then the decisions of what to do on this long weekend -- hoping to go on a bike ride in Vancouver area some where..
- not too warm or sunny where I am right now...

Sunday was my turn to work - Noni was off... I was to have the whole day off on Saturday but I couldn't leave Noni all alone so I worked in the morning to help her out then I went to the Vancouver area... Sunday after lunch was finished I was off, so Noni and I went to Stanley Park to ride together.. Surprisingly what one can do with your free time if you actually get moving...

It sounds Iike we're in the same position. We have two locations, three owner/chefs. I run one location and expect people who get paid for an hour's work to do an hour's work. My two partners run the second location and expect that the staff should be happy. Not that I want unhappy staff, it's just that I think you can be happy and get some work done at the same time. They think that I ask too much. All the staff think that one of the others is " motherly" the second is "fun" and I'm the strict one with standards. One day a couple of weeks ago I went over to the other location right at the end of their lunch service to borrow something. I walked into the kitchen, one of the bosses was cleaning the panini grill, the second was at the pot sink doing dishes and two of the staff were leaning against the counter watching them. They were eating cookies. I was furious. I blurted out, "what's wrong with this picture?" They glared at me. They expect the staff to wait on the customers and do a few small chores but not too much else, because they think that it's important for the staff to be" happy", as if by working for pay is an unhappy thing. I run things differently at my location, and truth be told many of the staff prefer to work with me because I give them responsibilities and challenges and teach them things.
My assistant is a different matter. I'm getting worked up just thinking about her.

I do relate .. I thought last year was my best one ever .. Yet the owner said he wasn't happy with my relationship with my staff -- I too harsh .. So this year I am not going to make them work - meet my standards ..
However the owner always tells me what I want and expect is correct - just how I say it.. Well how do you get young people to work without insulting their sensitive feelings .. I don't know..

So I don't get a relief cook this year .. Those they interviewed didn't meet camps environmental attitudes.. So it remains just my wife and I - but we will relieve each other to get a day off..

Also I didn't get a pay raise - but a wait and see if I don't insult any sensitive feelings in the next two months or so then we will talk about an increase..
I want to leave... But my pay remains good for the six months I do work...
So I'll bite my tongue and only do the minimum- no extras that I normally did in the past..
I did lots of over time hours, lots of extra special meals - and we will try to get through this six months
- he did increase my wife's pay some..

Been having some poor sleep this week, stressing about work issues. In the grand scheme of things these are minor issues and I'm not sure why they're bothering me so much. Over the past forty five years I've worked in many different environments under less than great conditions and with some questionable coworkers. Typical restaraunt stories. Perhaps it's my age, that this is getting to me so much. I just can't seem to overlook the little things any more.
I'm tired of redoing my assistants work. Is it too much to ask for some consistency?

Nice commute! You do live in a scenic area.
We are obsessive cleaners also. The best are the looks I get for having workers clean all the refrigerator gaskets. Every day.

This was me doing some work on Sunday.
But first I had too begin cleaning the kitchen from the inactivity of the last six months


almost ready to go .. I now will get the toothbrush out and clean those hard to get places - I have a high standard when it comes to the safety and well being of the food and prepping areas - start off the season the best we possible can be because once the two hundred guess begin to arrive - the standard doesn't lessen - but the maintenance is harder to keep. We are a very primitive trailer kitchen yet we are cleaner than many restaurants I have worked in or have peaked in while visiting their establishments. Blame that on the fact I was a military chef and many years in hospital kitchens.

Less then two weeks then I'm back to work -- oh my













So yesterday I took Noni up to the highlands where Dalhouise and I had hiked at the beginning of February. We did the same rout s without getting lost this time. What I noticed was it seemed so much shorter to reach the end point then when I did it the first time. Much more comfortable hiking in known territory then going into the unknown.

So these are our signs of Spring bursting upon our beings, and take note of the Dalhouise wallowing in a little creek bed..

This days was the first time this year that Noni came out riding with me. I'm sure it won't be the last, but our days are numbered for the freedom to just drop everything and go out to enjoy the sunshine and warmth. Camp season for me begins in about 15 days and 20 days for Noni. I really hope that this year I do get more opportunity and have energy to go out riding / walking / hiking more during the summer then I have had in the last few seasons. Still trying to figure out why my handheld GPS and computer won't work together - haven't geocache in so long now which makes me sad.

Hiking at Brohm Lake - Cheakamus loop Trail, High Trail, Connector Trail, Bridge Trail and the Alder Trail -- 5 hours of ascents and descents - up and down - is there any place level in BC? I am in pain, the pooch is limping, the wife is sore--- I think we took on too much...

What a great companion you have there!
Looks like spring is on its way where you are! I can see a difference in the light, but it's still cold and we have a lot of snow on the frozen ground.
My partners are talking about firing my assistant and getting a replacement for her ( or maybe finding a replacement and then firing her), but I'm resisting the idea. She causes me a lot of extra work for sure, but at least I know what I've got in her. I'm afraid I'll get less, or someone worse in some way. They do all the employee management, hiring, firing etc. they haven't been doing terribly good at that, but it's our agreement. She's the best assistant that they've hired for me so far.
What I'm wondering is whether to warn her that she's in danger of being fired if she won't step up her game. I've tried different ways to motive her, I've tried talking to her about her attitude. I've tried positive reinforcement, I've tried tough love. I think that she thinks she's doing a good job, but when it comes down to it, it's just a job for her. She has no passion for food. She rarely if ever samples things. She listens but never asks questions. She shows no interest in learning about food, but she does seem to love the "managing" part of the job.

I was sitting here remembering my lament about not having a bike because someone stoled it - that was two years ago now. I have replaced it and I do enjoy getting out exploring. I really need to do more riding - that is the goal for this year.
Anyways here are is a summary of my ride earlier this week

I peddle up this steep - real steep hill and at the top is the hospital - how convient I thought to my self as my heart pounded in my chest.



















One of my highlights was seeing this

I can't wait till the rains stop so I can go out once more..45 days or so before I'm back at camp in the kitchen unable to go for walks and ride so easy

. Let's hook up Dalhouise



So on Monday we celebrated Family Day Holiday by heading north 45 minutes to go see a water falls we heard about. On route we stopped to let Dalhouse out to get some exercise and we ended up snowshoeing. We heard dogs barking just up the road so we went exploring.
( left Dalhouse in the car at this spot - worried he would be dog food for these other working pups..

So after church and lunch we went out the door for an afternoon walk. Another new area for us. There is always an under currant of fear.. Getting lost, meeting a bear or a cougar - these thoughts must be put down or else we would never get out side.. If we give in to these fears where would it stop ? -- fear of driving along the highway ( car accidents) fear of terrorist, fear of gang doings and thuds, all the possibilities are ceaseless.. We now live in perilous times if we listen to the news on the TV.. But then again staying home is not safe either with so many earthquakes and fires happening... Fear is no way to live.. For me I will trust in the Lord Jesus and accept all that comes my way and get outthere and Live.

Well supper turned out well, --- too bad I couldn't get my self in the picture.. My first time cooking lamb on the BBQ - excellent.. However I put some back into the oven to over cook it because I know Noni doesn't like rare and I was not sure about our guest.
No picture of the cake.. Forgot we were having such a great time talking and then devouring it that it slipped the mind .. it was a simple graham cracker crust cake with pudding and cream cheese filling.

I love barbecued lamb. I hope that your dinner went well, what did Noni make for dessert?
I went skeet shooting with the big guy yesterday, it's a great stress release for me. My staff changes from day to day - I certainly am not the scheduler here- and my Thursday andFriday crews leave me terribly tense.

We have company coming for supper. So I'm cooking a lamb shoulder on the BBQ slowly. Also I am cooking carrots, squash, potatoes, garlic on the BBQ as well.
I am helping Noni clean our condo, so dusty and picking up stuff and hiding in another room - you know what I mean right...

Don't over do it, get some recovery time..
Staff -- I have to agree with everything you said .. Just thinking about it makes my blood pressure rise... This year at camp I don't get staff... Oh yes they will hire program people who will all do a rotation I the dish area / front of house. I won't be their immediate supervisor - people say I demand too much from them and makes them up set - so the office director is taking over their supervision and I m to keep quiet and accept that the work ethic will be their responsibly. Yes I still give out job responsibilities but that is all if it is not done correct I tell office director.....
This is going to be chaotic ... But if that is what the owner wants so be it ... I will bite my tongue and close my eyes.

My wife began a new job and I was telling her all about going 5 to 10 minutes early just yesterday..

What a beautiful area you have for hiking in!
I loved the idea of Dalhouise eating from a spoon. Perhaps my imagining it was funnier than the video would have been.
The swelling has finally gone down on my foot. Working our typical 12-14 hour days in the kitchen isn't the best way to recover, but what can you do. Some days I just despair with the work ethics out there. I have 36 part timers and my one full time assistant, and so few of them actually impress me with their habits. I think that for many of them, they were never taught how to work by their parents. Some of them have shown the ability to learn, though. I'm kind of sad that I have to teach something like that. They should already know this by now. Or am I being unreasonable? A couple of my workers will arrive a few minutes early, but most just run through the door as the clock is striking. I tell them, if you're not ten minutes early then you're late, but they don't get that concept.
I've been thinking lately that I'm going to start confiscating phones at the door. Pretty sad. Gosh I could go on and on.

How's your foot today?



I wish I could post a video - it is so adorable Dalhouise eating from the spoon.
My FB and instagram has a video.

Noni wanted to give Dalhouise the left over rice from our restaurant meal ... I say he won't eat it. She mixes it with the beef juice and a couple of beef chunks and we get our doggie container. Well here is the proof - I was wrong - first time in my life honest......
Dalhouise did eat all of it but only after she fed it to him from the spoon. When we offered the container he just turned his nose away in discuss

Yesterday I dropped a no. ten can on my foot and broke two toes. It happens and I had to still work today but I had hoped to leave early and elevate it for a bit. Didn't work out because my assistant "wasn't feeling very well" and had to leave early herself. I'm the boss so I need to suck it up and stay I get that but it kind of perturbed me. She just doesn't take this job seriously. It isn't a priority for her. I'd dump her if I thought I could replace her easily.
