We went to several of our neighbours and shared Turkey soup and Rosemary bread with them that we had extra from our Christmas dinner, we lived here for almost five years and really haven't met our neighbours. This was a good try to do so - they see us especially me from being on council or walking the dog Dalhouise .. Anyways one of our neighbours last night returned the gester by bringing us some apple pie she made - her first ever she told us... It was pretty delicious

Out the door I went with with my camera that was placed inside a zip locked bag inside the camera case inside a dry bag. Dalhouise and I had our rain coats,on and down the trail we went at the Squamish estuary. Met two joggers - no other hikers out so it was peaceful with only the sound of pouring rain ringing in my ears.
I stopped to watch some buffleheads Ducks and harbour seals swim in the Squamish River, as well as some mallard ducks and canadian geese. I didn't take the camera out of its sealed bags as it was just pouring

I fired up the BBQ tonight the first time since the spring. Mi had to go buy propane -!wow to get a new tank and gas it cost me 80'dollars

Spring is over weekend away from work and mentally preparing for what is to come.
Last meal of the spring season was 250 guest that I cooked hotdogs and hamburgers for. With several salads ... OFF
Staff training begins Monday
Saturday summer camp begins with 180 people registered and most the summer is this high. Noni and I have our hands full these up and coming days

Back to work. First meal was a smoked ham with bone in glazed with honey and marmalade - cream corn and scallop potatoes
Actually I have been working for a month now but today all 20 spring staff have arrived. For this week I am feeding 21. And then next it goes up to 175 souls....

Craziness - that would describe me- I went out walking and hiking again for hours and hours yesterday. Some was easy walking in the city of Vancouver and then I went back to the rugged trails of Lighthouse Park where I climbed hills and descended mountains... then because I missed a couple of caches I redid parts that I had past by mistake. Noni was so tired near the end that she stayed in the car as I rehiked.
Not only that before we went home I stopped at another Park and walked around it as well enjoying the scenery - it was amazing...
Today my body is screaming at me - don't push it so much in one day - do more everyday not all at once..
You know I will not listen ....

there is something special about being out in the rain and standing still and watching rain drip form your wide brim hat.
I was out walking and geo caching in the pouring rain yesterday and I came to this conclusion as I signed the log book - with head tilted down to sign the log book I watched the water drip off of my hat and I felt satisfied and happy.

Squamish Estuary who knew it was so large and had different trails almost like separate parks. In the morning I went out with Dalhouise hiking the newer section on the west side of the channels for about two hours - came home ate lunch and then went out again with Noni and Dalhouise for another two and half hours. The second section is on the eastern side of the river and channel closer to town and the first developed.
Birds were there but not as many as I would expect - it was warm but the wind certainly was cooler when we first started out but we warmed up quickly as we moved.
Almost surprised a naked lady...
I was taking some pictures - talking to Noni and then walked a few steps and came unto an opening / beach area and there was a lady standing with a towel around herself and her clothes in a pile nearby. Was she naked maybe not -- but I think so.
It is too cold to swim - but I think she was sun bathing - trying to get a jump on her tan.
She seemed to be embraced - but who knows..
By the time we returned home Noni was getting sore again so today's length was just the right hike for her..

I have this book "Best Hikes and Walks of Southwestern British Columbia" and my goal is to hike as many of these hikes as possible in 2014
This hike is listed as easy - OK it was easy but very long - Noni and Dalhouise and I started at Park Royal and walked all the way to the Capilano Lake and Cleveland Dam and over to the hatchery and then back to the parked car.
Noni pedometer read 25,000 steps - about 12 miles and it took us about six and half hours.
-- OK we stopped to take pictures and I looked for Geo caches and of course just to look around and enjoy the scenery.

I have been out and about around the pond and estuary these days and one can't help but notice that the increase in bird songs and chirps not to mention the actual flutter of wings.
Because of my mother - when I was a little boy she would ask every spring for me to find some pussy willows for her and now when I am out and about I am seeing them.
Spring is definitely whispering it's arrival now.

I went hiking with my friend on the Chief a hike to the First Peak: 1.5-kilometre trail with an elevation gain of 540 metres. (1771.65 feet)
- Next day - I am a little sore but doing well - not going to tackle the other peaks for a few weeks though..

Sandwiches are goooood. Here they are open. I used to close my sandwiches but now I have to admit I don't. A few less calories (half the bread) and I have gotten to feel like I can really taste the stuff in the sandwich if I don't put a top on it. But...I am imagining a nice fat sandwich now with two slices of bread and it does sound good!

gaining is the name of the game - going to Moms today for our second Christmas dinner.
I will cook a turkey for my mom on Christmas day - those times are so special to her - so as long as I have her and I am able I will put out a spread for her..
I also plan on going to the Asian market to buy a cooked duck - she hasn`t had that in years - old - old tradition for her - so I am going to surprise her..
But just think of all that food a small turkey - duck and all the trimmings - I guess I will be eating left overs for a while -- I wonder if I can invite anyone else over

Seen over 9 mallard ducks - 1 house sparrow - 2 Eastern Towhee - 1 Hooded Merganser when I took Dalhouise out for his morning walk.
Interesting there is more wildlife in my neighborhood surrounded by highways and housing than in the Provincial Park
Do you have any idea why this might be so?????

Depending on where you work they might have sick leave or something of that nature.
Another change you better be careful you will get use to making changes.
Christmas season - you will be needed - and I am sure once that they can see that you and your husband can work together without problems - you might get full time, or at least a good reference point to move you in the right direction that you want.

Camp - haven't made any decisions yet. Noni has applied to a couple of spots - I am waiting till January before I make any decisions. Will talk to the owner and depending on this conversation I will know if he wants me back and conditions and if I want to go back or not.
At this time of year other camps will also begin thinking about staffing ....
and I have been running in my mind that maybe I should look at some of our out of the way seasonal resorts. They will pay well - it will still fit into the lifestyle I want.

OKwell today was my last day. I began to understand that this is how it was going to be and I would be fighting against the tide. It just wasn't for me. The staff came to me to complain about her and I realized that a lot of this has been going on for a long long time and I would never change her. I actually like her personally but I just couldn't take the chaos.


Soooooo.Patrick had a couple of people go on sick leave all of the sudden yesterday. Do they have a paid sick leave system where you are? It is really an abused system here in Norway. Anyway the timing is bad for the hotel with Christmas coming up so I got lucky in a way and they need extra help now. I have something through the holidays anyway. I think the owner is hesitant to bring on me full time because I am Patricks wife. Maybe she will change her mind though.

Have you decided if you are going back to the camp next season?

that sucks..
I can not say I always label my food - but it is covered and refrigerated as soon as possible after the meals.
I should label - there has been a couple of times I found something way after the fact - and I could not remember when it was made or served last - then I have to throw it out.
More often or not it becomes the question was this gluten free - or was this vegetarian or not?

Hang in there - but keep your eyes open maybe something else more suitable will come across your path

I think my new job is not going to be a good one for me, I am only 9 days in and I am really discouraged with the dirty kitchen and lack of organization....nothing labeled, nothing covered...things left out overnight. This is the owner doing this so I feel hopeless ...I do not want to be running around after her cleaning up. Also, she seems to think that I should be a super fast machine who knows what to do already. I need to be trained in just like anyone else...I get more efficient and faster once I understand my job. UGH!

Normally I head out the door around ten AM - but today I was up a little earlier and so at nine I started getting dress to go out side when my wife asked if I wanted her to come too. Of course - but hurry up and get dressed as I am almost ready now..
WE take a 45 minute walk around the pond - across the river and after a short jaunt on paved sidewalks stepped gingerly down the embankment into more woods after crossing the river on another bridge.
The SUN is shinning - Oh what a blessing to walk in the sun holding my lovers hand,

Stopped to look at more spawning salmon - looked up and counted twenty Canadian Geese in flight honking loudly.

On facebook I talk to my young dishwasher who was dismissed - I hear she is doing well and has moved back in with her parents -- I wonder if the parents are happy about that?

On my walk today in the light drizzle, I observed several Canadian Geese in flight and a bushy tailed Grey squirrel scurrying up a tree, but didn't see any eagles. Walking around the pond in some sections it smelled of rotten salmon from the last run in September. I was looking for ducks or other pond birds but none were to be found.
I am told several eagles have arrived down the road about a mile have been spotted

I don't think you can close the Spark team...lol! This team is hard Marty. We are chefs...we eat too much, drink too much and don't exercise enough...we don't think we have the time. Not you and me (I mean in general)...but I was once like that. I don't know what the answer is with regards to the team. Maybe change the logo? Can you change the name to make it more appealing? Even the most active teams can have low points... You do a good job though. Heck. I'm still here!

well my time in the government office came and went as I applied for EI the funds that will keep us fed and mortgage paid for the next 5 months.
It was not so bad - but always humbling..

It is good to begin a new job - but it is even better some times to end a job that is causing too much stress and troubles.
I do not know if I will come back next year - so much craziness went on this year. I should have a EI cheque to to provide for the next 6 months as I look for a better solution for me.
Winding down now - this is the last week of camp - two groups 40 and 90 people will be staying with us until Friday lunch. Then a couple of days of shut down and I go back to the condo and recover.

well this is either going to be a good thing or a bad.
- I left camp to go to Indonesia to be with my wife for the funeral - my boss said he will not pay me for the 6 days we both miss work...
- he is hiring two friends of camp chefs who will take my place..
-- but when I planned the menu I had to order foods pre made and bread items which I normally make from scratch
--- when I get back they will either appreciate me more or realize they can hire another person who might be a better kiss ass for camp life..

made it through the day - sales person brought me eight jugs of milk 32 L of Milk for Tuesday breakfast when he came to get my food order that is being delivered on Tuesday.
I was able to empty the freezers of many part bags and older things to feed the 135 campers two meals on Monday all because the office staff did not get to me the paper work of who was coming and when on time before the last order date and so I did not place an order..

how am I to plan when the schedule is wrong both in times and number of people?
So ticked.. a lot of the girls have gone out for day hikes making bag lunches and then camping out over night so in house I an feeding the remaining campers.. however I cooked for 75 people and then just before lunch I was told I have 50 people !!

Time says meals was to be served at 12:30 and then I was informed it is 12:45

what a weekend - only feeding 18 adults and 6 - 8 children but it felt like I was feeding 180.
The owner wife held a family reunion - and I was to given a outline of a menu for me to add too - order the food and money was no option to buy the best I could.
Noni was to make desserts and snacks -
It is all over now - I think everyone was supper happy - but talk about full days and many hours in the kitchen.

The end is in sight - some where between October 15 and 21 I will be finished - done.for this contract term.
Almost everyone goes home on the 15th - the remaining days depends on how many people remain to close the camp down - cleaning - moving everything around - closing buildings and winterizing. In the past it has been done within one day and another time it took three.. it depends on the motivational levels of these people I guess and exactly what the owner wants to happen.
The owner when I asked him said I was free and clear to book any flights after the 22 because he knows we might be going back to Indonesia after camp is finished. this ensures enough time in case I am required longer to feed the staff - the kitchen is the last placed closed for the winter.

Family camp weekend - only 51 people coming and 11 of these are camp staff - tI know half of the remaining numbers are children -- so it will be a easy weekend.
I also get my new dishwasher - hired my friend - I hope he works OK - another young lad - he came to work last year with me for a few days as a volunteer -

what do you do when the dishwasher person put too much water in the scallop potatoes - I used processed potatoes today - told him what to do and I went kayaking. When I returned - well it was so soupy -- so I added instant potato powder to thicken it up - it worked great

Well we are back to one dishwasher for the last week of camp - I tried once again to get the first dishwasher rehired - but the owner said NO.

The young lad is burned out - getting worse everyday - - he has to hang on we have three more days..

Oh my gosh!!! That is all soooo horrible! So very wrong! Some people truly just don't care. I am sorry you ever had to deal with any of it in the first place. She has no business working with food. You had to get rid of her. For sure. No guilt about that.

Food safe - you have the course - you know right from wrong - commonsense
--I caught the person - mopping our juice counter top table with a floor mop because there was a spill
- sweeping the eating table tops with a floor broom
- placing pure bleach in a spray bottle - un labeled to clean public service areas ( we have proper chemicals for that - which are food safe.
- trying to put food from her plate back into a serving dish
- double dipping her drinking cup into a pail of juice to refill it
- smoking and not washing her hands after
- not washing her hands enough from moving from task to task
-
then we get into just bad work ethic like dropping - spilling a lot of food
- throwing away my reading glasses
- sweeping her work area - then flinging the debris just out into the other dining room area so someone else has to sweep it up and collect it to garbage cans
- not being able to lift the required juice containers
- not cleaning her work area attracting so many flies and ants
- pouring way too much chemicals into the hand pot washing waters and the washing machine when washing the kitchen cleaning cloths
- not remembering how to set up serving utensils for service
- complaining ad grumbling about doing hte job to my other young helper ( she was only here for a short time and she was becoming more disruptive - what will she be like after a long period)
I just could not trust her and in a week from now my other young helper leaves to go back to school - NO way could I rely on this older person - so disappointing - I thought she would mentor the younger but it turned out I need the young one to supervise the older who had on her application at least acknowledged taking a food safe course and other work experience.
-- I should had know from the interview - she said her last employer yelled at her a lot.....

Anyways - what choice did I have??? I did not enjoy letting her go - I don't like messing with people lives in a negative way and it is never good to be out of work if you need the money.

Cross overs --- I began my cooking career by this. I cooked at KFC as my shared first job - so when I moved to Banff Alberta and went into a hotel looking for a job they asked me what did I do? I said I was a cook at KFC - OH you are a cook. They hired me instantly and brought me into the kitchen - I had never seen a real kitchen before and certainly never a flat top grill. I started the next morning as the breakfast cook.
I worked for about two or three weeks straight - had my first weekend off - brought my wife from Ontario to join me who was about eight months pregnant at this time. Went back to work on the Monday morning to find out I did not have a job. The tourist season had died. I was told to wait around for a couple of months then the next tourist season would begin. I could not and did not.
Banff is a ski resort area - that particular year the season was late in starting which didn't help me much either.
But two things always stick in my mind -- just how quick a cook's career changes and it whetted my appetite to be a cook. Ultimately I joined the army to get my training as a Cook with the sole purpose to go to work in children's camps - so I have been pretty lucky because I have lived my dream.

It is nice that you are appreciated! We are in a crossover couple of weeks...conference groups and businesses coming to an end for the season and the tourists are starting to show up. Busy with two distinctly different types of guests! One more week of this, then all tourists til the summer is over.

So I got scolded from the owner today because the winnie staff of the weekend complained about me.
I then got mad at the owner - told him he was lucky I didn't get sick... and I asked him if the group that was here did they not like my food I served.... Yes they loved my food - but I have to treat all the staff the same. Well sorry I do have favorite staff - and yes I do treat them better.

Breakfast and Lunch is finished - supper to go in the oven soon. I am baking a ham - baked potatoes (changed this from scallop) because we have so many milk allergies here this weekend. A lot of the children asked me to serve corn again - I served it last night and they ate all of a 5pound bag - so I will serve it again and raw carrot sticks.
I have made quinoa - stuffed zucchini ---- some have cheese for my regular vegetarians and some don't for the vegans.

Lunch was hamburgers and hot dogs salad bar soup -- vegetarian garden burgers and hot dogs and special ground round tofu for my vegan clients

This is the same for us. Some how the only people who are going home early and are able to take days off are office people. Yup yup yup...feel like we are down in the pit!

I am sorry about your kitchen staff...I know how hard they are to come by...especially good ones. We have a really good one we will lose in August.

upper management you are probably correct. I am only a slave.
I have all the responsibilities to run this kitchen and cook the meals - plan the menu - shop (order) for the menu execute the menu - make sure everything is Food safe and is in good working conditions - but still the very low on the totem pole of management
-- found this out more so with the dismissal of my kitchen staff who I fought to save... even though I always knew it

Chicken fingers and baked french fries for lunch - ate too many.
Supper baked ham and scallop potatoes and corn. I ate too much ham but no potatoes.
I did eat a small serving of the vegetarian lasagna.
Definitely ate too many sweets - cookies - haystacks and butter tarts

Today at lunch served turkey rice soup salami, pastrami, roast beef, ham, turkey. Potato chips and a full salad bar to 50 campers.
Supper I am cooking spaghetti and meat balls and Caesar Salad and Home made bread.
Desert is a chocolate cake and snack chocolate chip cookies

The unemployment time is done. The vacation is over.
I have moved to the cabin in the woods where I work. The kitchen is dirty - the sinks pipes froze over the winter so I have no running water in the kitchen and the drain is also not working because the septic pipe broke over the winter - but here I am and started the cleaning.

Great news!

I had to write job descriptions for our key crew members recently as well. Since they were for in-house use, I was very detailed, but if I need to use them for recruiting, I'll simplify them. Funny how an organization can go for 41 years without job descriptions ... or a business plan.

Anxiety gone - today I met with the owner of the camp over lunch. he paid and also brought me a gift that he promised to give me last October...
It was a good lunch. I have a start up date confirmed.
He wants me to create a job description for the three positions in the kitchen
A.
1. For my wife who Bakes and Prepares Salad bar
2. Dishwasher person
3. Front of the house / dishwasher person

B. Submit a Nine day menu plan

C. Tally the meal numbers I serve last year - to compare with budget
