Maybe pasole could be made the same but substitute pieces of cauliflower instead...of course then you would actually have to make it yourself instead of ordering it from a Mexican restaurant.

I make posole but sub in small bits of cauliflower for the hominy, which I love, but can't eat anyway because it can cause blockages. If you don't overcook it, it's a very good sub and doesn't really change the taste at all.

As for water chestnuts, I've never looked at the carb counts on them because they also cause blockages.

I have tended to stay away from both of those foods for that same reason. Not worth the carbs to me.

Oh wow, good thing they were persistent! I often wonder that about water chestnuts: one can says 2g/serving net, and another says (for same serving size) 7g net! I tend to think the higher one is probably correct, but not a single can of the exact same style and size among 3 varieties has the same carb count. Bah! :)


Advice is what we ask for when we already know the answer but wish we didn’t.

I've posted before about Juanita's Mexican Style Hominy. Judy Barnes Baker, who wrote Carb Wars, said that she had checked with the company about the very low carb count (10 total carbs per half cup, 4 grams of fiber, so 6 net carbs) and they assured her that it was the result of testing and was correct. Someone recently asked her again, she asked the company again, and they, again, insisted it was right. Then someone who didn't believe it convinced the company to retest it (the original testing was 60 years ago!) and the numbers came out very different. Now they're saying 19 total carbs, 3 grams of fiber, for a net of 16 carbs per half cup! A huge difference!

Anyway, wanted to pass that on since I have recommended the hominy in the past. It's a shame, too, because it's cheap!
