LOL Gail, I think old Mel deserved you! Doubt he changed his ways at all, but at least you may have legitimately annoyed the old goat back then! :)

I have finally dropped for the evening, but still need to work on some laundry. I have been going non-stop all day - dog walk (in light rain), a good 35 minute workout, four hours with a client in his workplace (turned out the 'weird' noise I kept hearing was rain dumping down like from a big bucket on his warehouse roof!), grocery run, and then two more billable hours at home on another client's stuff. I'm sorta tired...

Eating = atrocious.

When I do the ribs, country style (which are my favorite) or the other types, I just add minimal amount of moisture in crockpot, then after they're cooked one can add whatever type of sauce they want if they want a regular bbq sauce, which yes, IS loaded with carbs and sugars, at least most of them are. I have made my own sauce, using brown sugar twin for the sugars in them and it was okay, but it's been so long ago, I've forgotten and don't have the recipe any more. It was tomato sauce based tho, not ketchup since ketchup has quite a lot of sugar too unless you get the low sugar kind.

I put a sprinkle of dry rub on them sometimes as well. I like to keep some pre-cooked and in the freezer in individual portions for a ready lunch or dinner.

@GLC2009. I don't blame you for "parting company" with your former boss. There's no excuse for not giving the prize away to the person who "won" regardless of how they might have appeared. Good for you!!

all this talk of corned beef reminds of a food kiosk i worked at when i was 17. i think it was called mel's smoked meats and old mel was a cheap guy. once in awhile he would offer to make me a sandwich and then he would use the 2 ends of the rye bread (you know how small they are) and that would be the 'sandwich' he was offering. and he would act like it was such a generous thing he was doing. if you actually wanted a real sandwich, you didn't get a staff discount or anything.
i had it with him when he offered nhl tickets to the 25th customer of the day and the 25th customer was a woman who he thought didn't look like a hockey fan. so, he wanted me to not give them to her, but, wait for someone who looked like a hockey fan (i guess you had to be a beer bellied man wearing a hockey jersey, i don't know).......anyway, i told him that was cheating and i wouldn't do it. i gave the tickets to the woman and she was over the top at getting them and being able to take her hockey loving husband or son or whoever to the game.
needless to say, we parted company. i thought he was a cheater and he thought i didn't listen to my boss very well. he was probably right. i've been self employed most of my life.

I have a wonderful recipe shared, named "Exotec's MIL Riblets." It's awesome. Neither overly sweet nor spicy, but very flavorful. When I don't crock-pot with a sweeter sauce, I make these. They're my favorite, actually. I use the little trim-ends of ribs (for some reason they seem to taste better than the whole ribs). By the recipe I've got shared, the amount of rib tips is 4 pounds, and it makes 8 servings. I think the carb count is about 14 or so.

I've got a corned beef going in the crock pot at the moment. It's been "bathing" for the greater portion of the night! LOL I'm not usually a corned-beef aficionado...but I do it occasionally. It seemed like the right occasion! Normally, when I've done it in the past (from Mother's recipe!) I've roasted it with a mustard-and-brown sugar glaze. But that comes out more like a roast (naturally), and I was hoping for the more moist and tender stewed or simmered variety. Maybe I'll pull it out when it's done and put my glaze on it anyway, just for a few. But then...hmm...I'll have TWO cooking containers to clean. Maybe not! hehe

I've been on some sort of binge in the markets lately...so I can't see or even wiggle a thing in my refrigerator! I've got a ham in there that desperately needs cooking, if only to open up space! But DH has to make a run to the grocery to pick up a couple things, since I can't seem to get out of one without a load of things that look and sound like the right things which I have no space for. Ack.

I was mentioning on another thread somewhere about how we used to enjoy making numerous meals on weekends to portion out to homemade frozen dinners. Looks like this is a weekend for it!

Otherwise, it's a beautiful day here, for a change. I'd had fond notions of excursioning to some local flea markets...but I think I'd better spend what energy I have in the kitchen today. Maybe I can get myself out of bed early enough to flea market tomorrow.

I did babyback pork ribs in the crockpot a few weeks ago and did a spicy dry rub with lots of different spices and seasonings. Use your favorites. They were so good!

Saturday: grilled steak this afternoon with tossed salad. My favorite meal. We just got our 1//4 of a cow this week, so have plenty of beef to last me for a while. One reason I love this low carb - I love beef! :)

What do you all put on your ribs when you cook them? Doesn't BBQ sauce have carbs in it? I would love some ideas of how to bake and cook in the crockpot.

I woke up this morning feeling like doodoo too. So far all I have had is a cup of strong coffee. I have to study and figure out what to take for food to our women's group tonight. I lead the group and we are going through a book called Born to Create by Theresa Dedmon. Tonight we are going to use our imaginations and do some writing exercises. It should be fun. We painted the last few months and it was really fun.

Woke up feeling awful this morning, so I took one of everything in the cabinet: sudafed, guafeneisin, loratadine, ibuprofen, vitamins and supplements. Washing it down with decaf. Waiting for it all to kick in and make me able to get a shower.

DH and I have tickets for a really cool performance at Heinz Hall this afternoon. The Pittsburgh Symphony is playing the soundtrack music for a screening of the Wizard of Oz, DH's all time favorite movie. He's psyched but freaking out over the traffic and crowds that will be downtown for St. Paddy's Day activities, so I'm taking charge of the transportation. You would think we were planning to go abroad for a week! I had to print the trolley schedule and map for him and he's counting exact change for the fare... Just chill, brother, it's only Pittsburgh! (I worked "downtown" for eight years so this is absolutely no big deal, but I find that a lot of suburbanites like him are intimidated by the idea of driving there or navigating the streets. Getting called for jury duty stresses people out more from having to take a bus than the actual function of having to potentially serve on a jury! LOL!)

Pittsburgh IS a little tricky to get around for two reasons: the downtown streets' "grid" is partly based on triangles, not just rectangles or squares; and there are a lot of one way streets or streets with bus lanes. Other than that - the streets go up and the avenues across.

Went last night and had acupressure after work....I forgot how painful that can be....lol, but it helps me feel so much better. I was diagnosed with lupus and have been very fatigued lately.

Reading to dogs sounds so fun....Exhausting for sure.

I have 2 slabs of ribs ready to be slow baked, can't wait.

Good morning everyone. Maw the library sounds fun with the animal reading but exhausting too! That's a lot of short attention spans in one room!

On the treadmill in a few, clean house, grocery then outside with kids. Suppose to be 70 today!

I know I should do corn beef and cabbage but not my favorites. I don't think my folks are even planning which is very unusual!

Off to the library soon to work all day. We're doing ARF (Animal Reading Friends) this morning, so I'll be supervising about 4 dogs and their owners and all the little kids who come in to read to the dogs. It's fun but it means about 2 hours on my feet. Then regular reference desk work for the rest of the day. Then I have to stop at Krogers and get the corned beef and cabbage (both on sale there at great prices) to have for supper tomorrow night. And then home to clean up the kitchen and living room so they are presentable when I have people over to help eat the corned beef and cabbage.

My cat was a real pest last night, starting about 2:30. Seems like I spent the whole rest of the night fighting with her as she kept jumping up on me or the nightstand or the pillow or all sorts of other places she wasn't supposed to be. And of course every time she woke me up I had to go to the bathroom!

Hope you're all having a great weekend. My thermometer says its almost 60 out, which I don't really believe but it's nice to pretend it's true, even though I won't be able to take advantage of it. This time last year I already had part of my garden in.
