I love cauliflower, broccoli, asparagus, Brussel sprouts and red peppers roasted. I put coconut oil in a cookie sheet with sides. Put it in the oven while it heats up to melt the oil. Take it out as soon as oil has melted. Coat sliced veggies in oil and season to taste.
For fats I like avocado, coconut oil, and my new favorite is sesame oil on my salads. It has a slight nutty flavor and it is all I need to dress my salad. :-)
Radishes are one of my go to's and celery for veggies. Lettuce is low. My fats, especially right now doing a fat fast are cream cheese, sour cream and heavy whipping cream. I know others use cocomut oil which I haven't gotten yet. But adding butter to everything including meat and veggies is good. Also adding or just eating avocado is a fat source.

I'm trying to get back to eating more veggies. I think I went too LC and reduced them too much. I was inspired by a book I read recently talking about balancing carbs and fiber (I still don't eat grain, legumes etc) What are your favorites? I was a little surprised when I entered cucumbers to see 3 grams!
What are your thoughts on where your fats come from? There seems to be some debate on this.
I want to recommend smoked sea salt flakes. Got them at Kroger in a clear canister. Kind of gives a bacon essence to things. It's helping me cut down on bacon since I could eat a pound at a sitting probably!
I am starting my ticker again since starting low carb.
