An OMM/MIM, split, buttered, broiled (to make it drier and stiffer and more like toast), then spread with peanut butter. It sounded so good when I was planning and fixing it, but for some reason the peanut butter didn't really work with the OMM/MIM. Live and learn. It wasn't bad, just not as good as I had expected.
This morning I had a 'loaded' 2 eggs omelet, cooked in butter. I 'stuffed' it with canadian bacon, Jack & Colby Cheese (1oz), red onion and mini sweet peppers.
I sauteed the red onions and mini sweet peppers lightly in some butter first and then threw in the Canadian bacon and let that cook....then I made the omelet, and after flipped it over, sprinkled the cheese over top, and then stuffed it full of yumminess, lol
*drooool* Even after 30 days of doing this..I'm still drooling uncontrollably, haha
I've been making a variety of different omelets..and stuffing them with all kinds of goodies. This morning I made a two egg omelet stuffed with sauteed mini sweet peppers, red onion, mushrooms and topped with 1oz of finely grated cheese. (Sharp Vermont Cheddar, Sharp & Mild Cheddar)

I wasn't very hungry this morning, so I skipped breakfast before church. (I do NOT recommend this). I did have a cup of coffee with Splenda and half & half (anyone try Bullet Proof Coffee?) I had some cottage cheese and fresh blueberries when I got home as well as another cup of coffee (made the same way). Now, I'm sipping on some water while I surf the SP website)

Be very careful with the grapefruit if you take meds. It turns out that grapefruit interferes with enzymes in the gut. These enzymes prevent the uptake of certain meds so the manufacturers up the dosage to compensate. Taking grapefruit allows the full dose into the system which can be very bad!

One of my "go to" breakfasts today - yogurt with blueberries, walnuts (or almonds or sunflower seeds), cinnamon, and flaxmeal. Sometimes I add some grated orange peel and/or another spice - nutmeg, cloves, 5 spice powder, ginger, etc. And a big mug of tea with cream and splenda.
Our fridge looked a bit strange lately - SIL's fat free half and half next to my heavy whipping cream!
I usually have a 3 egg cheese omelet cooked in butter. If I have a slcie of bacon or a sauage I cut back to 2 eggs.
To change things up I have had vanilla chia seed pudding with 4 strawberries and a little HWC. Houndlover gave me this idea and it is delicious. I think that it is about 20 carbs with the berries and HWC but very high in fiber and fat so it is sustaining. I am planning on having this twice a week as a break from eggs.
