I almost forgot an old, old diet recipe my Mom used to make. It was simply green beans with stewed tomatoes and tuna. This was back in the 70's. emoticon

I just like putting canned salmon on a big mixed vegetable salad with homemade italian or balsamic vinaigrette. I tried converting my salmon pattie recipe using flaxseed instead of flour but it didn't turn out so well.

If you have a microwave at work and I'm assuminng you work or you wouldn't be asking this question - just take leftovers from your dinner the night before. Nothing says you have to have certain things at certain meals. A thermos of soup, or make a smoothie with fruit, greek yogurt, some skim or almond milk and a whey protein powder to take for lunch. I don't work but that's what I have for lunch. Just make sure the protein powder is whey and sweetened with stevia (Like Whey To Go brand).

There is a recipe in the book for Nicoise Salad which is basically tuna, lettuce, green beans, tomatoes, with olive oil and balsamic vinegar.

You could also make Tuna Muffins. I got this recipe from a friend of mine several years ago. You could probably switch out the mayo and use Greek yogurt in it's place. She has told me she sometimes adds French cut Green beans or chopped carrots to the muffins themselves. The recipe below is the way she gave it to me. They are good!

Tuna Muffins

3 cans tuna, drained
3 eggs
1/2 cup Parmesan
1/3 cup Mayo
1/2 cup chopped celery
1 cup peppers, red and green, diced
2 cups grated cheddar cheese (I use less cheese)
1 1/2 tsp onion powder or 1 Tablespoon grated onion

Mix all together in a large bowl, stirring well. Put into muffin pans which
have been sprayed with Pam (or your choice)
Bake at 350 degrees for 35-40 minutes, until browned on top.

Chopped green onions can be added. Salmon (or even chicken!) can be substituted for tuna
Can be frozen. Warm up quickly in the toaster oven

Note: This could be made as a casserole, served with a salad, green beans or
other veggie.

Does anyone have recommendations on how to eat canned tuna or salmon? I need some new things to eat for lunch as I am getting a little tired of ground turkey. Thanks for your help.
