Way to go Dolphin....I think on Saturday I am going to try making those oatmeal/yogurt pancakes...Gabby says they are good.

I am a waffle junkie. Well, I use to be. Before starting this diet. I use to make the traditional waffles with white flour, oil, eggs, milk, etc. I haven't had one of those delicious waffles since starting this diet and today I changed that. I used the flaxmeal muffin recipe, but made them in the waffle iron instead! I did tweak the recipe a little bit, instead of using oil, I used natural applesauce. I like my waffles crisp on the outside and soft on the inside, but this recipe didn't make it that way. So once the waffles were done, I popped one in the toaster oven on toast briefly to get that crispy outside. Perfect! I always eat my waffles without butter or syrup anyway, so once it was done toasting I ate it right away. I will definately be making flaxmeal waffles again. It only made 8 waffles, but that is four days of waffles, so I'm happy.
