Hello there , I buy my flours from Goodness Direct online shop in UK but I make my own oat flour by grinding gluten free oats . I think Tesco also sell Spelt and Rye flours. I like to bake this bread in a conventional oven but make the dough in my bread machine, I do not use steam but I see no reason not to if you want to. As I am vegan I do not use milk of egg and bake as is . The bread is very tasty so do try i it . Gluten can be inflammatory but spelt has very little so is suitable to use.
I hope you do try it but do not expect it to rise as well as an ordinary loaf as it is more like a pumpernickle loaf but very tasty . This is now my staple loaf . I more often than not do the dough cycle and then cook it in a conventional oven. You could also add a tbs of molasses to ring the changes . I hope you enjoy it as much as I do. Blessed be... Jan

I am sorry I do not know a "no Knead " recipe as I tend to stick to that which works for me as I have a bread machine. I use 300 grams of spelt flour ,100 grams of rye flour , 100 grams of oats that I grind and 2 tsp of dried yeast , 1 tsp salt , 1 tbs sugar ( the only time I ever use sugar but I might try coconut sugar next time ) , 1 oz of sunflower spread and 425 mls of warm water . You can mix and knead by hand but I bought my machine to take away the hard work !! Also it can be baked in a conventional oven at 150 deg C for about 40 mins if you use the dough only program and transfer t a tin and let rise for about 45 mins before baking.
I tried the Vegan 21 day challenge and felt so much better that I am now Vegan and it does help . I cut out all dairy and went almost gluten free ( I make my own bread from spelt flour and gluten free ots and rye.) and I am losing the excess weight too.
What do you eat an an anti inflammatory diet. I have done some reading but I am curious as to the practical application. Are you successfully losing weight? Any help would be greatly appreciated and I am sorry if this has been asked before but I didn't find it in the threads anywhere before.
