This week, I got back to my vegetarian diet plan, adapting a recipe for a stuffed pepper soup made with ground turkey and brown rice. I substituted quinoa for the meat and grain to provide protein and added some sunflower seeds to replace saturated fats with healthier unsaturated fats. Although I made this recipe in a slow cooker, I like to sauté the onions and garlic before adding them to the mix in order to caramelize and sweeten the onions.

Staying with my vegetarian diet has been more of a challenge the past few weeks because I've been eating more meals with my partner's family, following his dad's death, and none of them are vegetarians or especially venturesome regarding foods beyond their habitual meat-and-potatoes fare. So I can cook for them, and then not eat what I've prepared or let them cook and not have much of an alternative. Last night, I skipped eating with them and just made myself another improvised vegetable red curry. It was fine, but not a completely satisfactory solution.

My new recipe for this week came from the Vegetarian Times: a red curry vegetable soup. In addition to the curry paste, coconut milk, and vegetable stock , the recipe called for cauliflower florets, green onion, green beans, and diced (canned) tomatoes. I chopped up a quarter of a large yellow onion instead of the green onions and substituted a cup of chopped kale for the green beans. It was still very good.

Last night, I opted -- later in the afternoon -- to eat at home. So I scrounged around to see what I had on hand that I could put together. I ended up with pasta primavera inflected with Asian vegetarian. I cooked up a serving of brown-rice pasta. while that was going, I melted some ghee in an iron pot, and added a half-tablespoon of kapha churna spice mix. When the spices were fragrant, I dumped in a diced red bell-pepper and sautéed it for five minutes. Then, I added a couple of cups of chopped savoy cabbage and a diced, peeled apple. After squeezing a half lemon over the veggies, I put a lid on the pot and lowered the heat, allowing everything to cook for the twelve minutes it took for the pasta to cook in its own pot. When the pasta was ready, I drained it, put it in a pasta bowl, and spooned about half of the veggie mix over top. It was quite nice, and I have enough veggies to have something similar -- perhaps with quinoa or brown rice -- for lunch.

I ordered some Thai red curry paste on line and put together a vegetable red curry with whatever veggies were on hand -- cauliflower, chard, parsnips, carrots, onion. I also used coconut milk and coconut oil plus a tablespoon of warming Ayurvedic spices that I have on hand for my kapha dosha. It came out surprisingly well.

Last night, I finally tried making my own almond milk. I'd already made a quart of hemp milk, so I was confident that the almond milk would turn out all right. Following Janet McKee's recipe, I soaked the slivered almonds for 8 hours, then drained and rinsed them. I dumped the soaked almonds into my Ninja blender with 4 cups of filtered water and a teaspoon of vanilla [skipping the optional sweetener], and turned it on for about 3 minutes, until the almond granules looked about more like powder than sand. Then, I drained the mix through a nut-bag into a glass container, getting 4 cups of milk. I used a half-cup this morning for my breakfast smoothie.

My most recent try at vegan cooking was a recipe for falafel burgers. The results were not completely satisfactory. They came out drier than I expected. I think the problem was with the chickpeas that I used. The recipe called for canned, but I started with dried chickpeas that I rehydrated. Although I followed the directions for rehydrating them, they were still harder than they should have been for the falafel burger recipe. The flavor was OK, but next time, I'll either use the canned chickpeas or soak them them longer.

This week, I improvised a bit, using a few leftovers with some fresh produce. I ended up with a vegan stew that included kale, endamame, mushrooms, and asparagus with some garlic, coriander, and parsley for seasonings. It turned out pretty well.

Today I tried another recipe from Janet McKee's cookbook, "Fabulous Recipes for Vibrant Health." This one was a vegetable stew with a spicy hot pepper sauce. Like the other McKee recipes I've tried, the preparation really brings out the textures and flavors of the various ingredients. I know I'll be making this one again, soon.

I teach yoga at a wellness clinic that also emphasizes nutrition as a healing practice. At a recent session there, one of the nutrition specialists provided a sampling of healthy foods, along with recipes for them, so that we could make them at home. One recipe was for an alternative to creamy cole slaw. It calls for
* 1/2 head Napa cabbage, shredded
* 1-2 Tbs miso paste
* 1-inch piece of fresh ginger root, peeled and minced
* 1/2 cup olive oil
Put the cabbage in a bowl. Blend the other ingredients in a food processor, pour over the cabbage, and mix.
Let stand for 10 to 20 minutes for flavors to blend, and serve. [Makes 4 servings]

I've made it several times, adding some sliced baby bella mushrooms once. Good and good for you.

This week I've made a recipe for apples (2) and brussels sprouts (12). Unless the sprouts are really small, trim the stems and quarter them. You can also remove any wilted or discolored leaves. The apples should be peeled, cored, and chopped. Heat a Tbs of olive oil in a skillet, and sauté a quarter-cup of chopped onion or shallots until wilted. Add the sprouts and apple and cook for 5 to 10 minutes -- until the sprouts are a brighter green and just starting to brown. If you want to spice it up a bit, add a quarter-tsp. of cayenne pepper when sautéing the onion or use a half-tsp of garam masala.

My latest recipe adaptation is for hot cocoa. I've stopped using packaged cocoa mixes like Swiss Miss Diet or Low Sugar. Now, I'm using Hershey's Special dark cocoa [1 Tbs] with 6 oz. of unsweetened/unflavored almond milk and 2 packets of stevia sweetener. I know the stevia is somewhat controversial, but the most recent recommendations I've been able to find suggest that less than 4 packets per day should still be safe. I try to use no more than 2 in a day.

Last night we had a butternut squash and apple soup, adapted from a recipe that I found in the Spark Recipe pages: http://recipes.sparkpeople.com/recipe-deta
il.asp?recipe=58827. In fact, there are dozens of variations on this basic recipe listed with it. My adaptation replaced half the water with vegetable stock and the seasonings with an Ayurvedic spice mix for my kappa dosha. My family really enjoyed it. I'm sure I'll try some of the other variations in time over the winter.

Among my motivational posters on my Spark Page is one that says try a new vegan recipe each week. This week, I reworked my stuffed pepper recipe yet again to make it more vegan. The bell peppers [red and green] came from my biweekly box of organic produce from the CSA. The stuffing consisted of brown rice, TVP reconstituted with vegetable broth, a half cup of breadcrumbs, a teaspoon of cayenne pepper to perk it up, and a quarter cup of egg whites [which makes the recipe lacto-ovo vegetarian, rather than vegan]. First, a slice the peppers in half, clean out the seeds and ribs, and bake at 375F for 15 minutes. While the pepper halves are baking, I mix together the cooked rice [1 Cup], the reconstituted TVP [1 Cup], the breadcrumbs, the egg whites, and the cayenne pepper. That makes enough filling for 4 medium peppers. After filling the half-pepper shells, I bake them for another 15 to 20 minutes and serve.

This week's newly adapted recipe was for moussaka, substituting TVP for ground turkey. Instead of making a béchamel sauce, I did use a cup of Alfredo sauce from a jar because I was running out of time, but the results were still satisfactory -- still vegetarian and tasty.

As I move into a more vegetarian diet, I'm really enjoying the opportunity to try new fruits and vegetables. Many times, I'll seek out a recipe from SparkRecipes.com. Last night, for example, I made a quinoa and pomegranate salad, as part of my dinner. Like so many of the recipes I try, it wasn't especially complicated. [I did have to check out some video tips for extracting the edible portion of the pomegranate: scoring the skin and then pulling the fruit apart under water was quite helpful.] The recipe was also seasonally apt: pomegranates are generally available between October and December.
