It is wonderful! I've also done it with banana, mango, cashews, & dates. Yum! (You start with the cashews, as they take the longest to "cream" up.

Oh, boy, I just made Banana Soft Serve "Ice cream"

11 frozen bananas (I always seem to have an abundance in the freezer)
1 can coconut milk

break apart the bananas
throw everything in the food processor
blend/process until smooth
(you may have to scrape down the sides of the container a few times)

Yes, I overdid it on the amount.

Original recipe(s) I found online had either:

no coconut milk and added vanilla (nothing else)

or

added sweetener, cocoa, and cooked quinoa

I haven't tried either way, but I'm very happy with my version.
