I weigh in daily, but I don't freak when my weight changes by two or three pounds either way - I gain and lose a lot of water weight based on the temperature and humidity, eating processed (high sodium) foods, and my menstrual cycle, so as long as I'm in that range, I'm content. If I get more than four pounds from my goal weight either way, then I deliberately correct while the change is small enough to correct easily.

For the first year, I weighed in officially every Sunday. Sometimes, I would check between weigh-in days to see how I was doing. Recently, another team pointed me to a cool online website called WeightGrapher.com, where you log daily weights and it calculates a moving average. I do like this better as it evens out the weird bumps up or down that you can get from an off day, or perhaps a day with too much sodium.
