Maybe instead of just listing what we've tried,
we could include a way to enjoy it?

Endive? Plain? In a salad? I have no idea
same with bok choy

I'm including a way to cook kale.
It's okay, but I really don't consider it a potato chip like snack. LOL

Baked Kale

Preheat oven to 425 degrees.
Prep: 5 minutes Cook: 10 minutes

2 cups fresh kale leaves
Olive oil nonstick spray
Dash salt, or more to taste

Place kale leaves on a baking sheet sprayed with olive oil nonstick spray.
Spritz leaves with the nonstick spray and sprinkle with salt.
Bake in the oven until crispy, 5 - 8 minutes, for a potato-chip-like snack.
MAKES 1 SERVING
PER SERVING (entire recipe): 64 calories, 1g fat, 212mg sodium,
13g carbs, 2.5g fiber, 0g sugars, 4.25g protein --

I have tried several new whole foods lately-Butternut Squash, Spaghetti Squash, Kumquats and blood oranges. All of them tasted good to me.

Thought I got light color beets, but they turned out to be more like a turnip, which I haven't eaten for a long long time. Not too bad, but I still am not fond of em. emoticon

Tried passion fruit while in Mexico. They are cut in half and you eat the little seeds inside which are tart. I thought they were good, others didn't like it.

baby bok choy is one of the veggies I have been on a kick with lately, with bean sprouts and anything else I can stir fry. It is so crisp and fresh.

GALA apples...from Washington; red and yellow and crunchy. Sold here (rural central MS) in a bag and were small. I am not sure if they have medium or large sizes, but I like them.

I love butternut squash, I grew them last year as well and I've still got several left. I make alot of soups in the Winter and squash adds a nice sweetness. I've also roasted it and served it mashed like potatoes; it's great with pork and chicken.

I grow beets every year in my garden and I always cook up the greens, they're fantastic.

This isn't new to me but I had a craving for a fennel salad so I bought a couple of heads and I'm going to make fennel orange salad tonight.

Indeed... there is a talent to eating pomegranate seeds and NOT getting the juice on your clothes is part of it emoticon

We had a strawberry rhubarb pie for my moms 85th birthday party over the weekend YUMMERS... it sure brought back memories of my grandmas cooking. She would make rhubarb without the crust and we would eat it warm. It's such a lovely color and falls right between those sweet and sour taste buds emoticon

Eating a gold nugget squash as I type emoticon My biggest complaint about winter squash is the hard outer shell... I was afraid I was going to cut off a finger trying to score it so I could soften it in the microwave and then slice it in half for baking/microwaving. I love the fact that fresh whole winter squash can sit on the counter for weeks and is much cheaper than the cut up version which has a shorter shelf life. I bought a big bag of cut up frozen butternut squash from Costco to try (that would be the best of both worlds)... as far as the gold nugget goes, nothing special and clearly not worth losing a finger over. I'll stick with acorn and butternut this winter. emoticon

I didn't know that about orange cauliflower..
So happens last night I cooked cauliflower and 1/2 of an golden beet. Put butter and allspice and mashed..it was good.

Taro root. It's like a potato, but with a ton more fiber.Very delicious! I like it baked in the microwave with salt and oil. I've been told it's really good in soups and stir-fry. You can find small or large ones (the size of a papaya) at an Asian Food Store.

I've recently tried kohlrabi for the first time, thanks to my CSA. They've been giving me two or three every week for the past month running, so I've started to get creative. So far, I've tried roasting it, steaming it, eating it raw in a salad, adding it to curries and stir fries, and pureeing it into soup. All have been really, really good. I don't think I ever would have tried kohrabi if it hadn't been handed to me in a box, but I'm so glad I did!

I sometimes add 2 slices of cooked, low sodium bacon to cream soups. It gives it a rich tastes and in a big pot, a little bacon goes a long way.

Cauliflower is an old standby vegetable for me.
I used it to make not so creamed cream of spinach soup.
It was very low in calories, thick and rich tasting.
Later today will make some cream of corn soup.
Will let the team know how it turns out.

Thanks for sharing how you prepare your parsnips & rutabagas, it sounds so good I'm excited to make it!!

3 km time 35 minutes, 10.45 km pace. Goal 6 minute pace 18 minute time.
