PaperArtsy, I tried making cheese this year also, and really liked the results. The thing that I didn't expect from it was how perishable it was--it went bad in under two weeks so I wasn't able to enjoy all of it. I froze all of my whey, and am looking forward to learning how to use that up one of these days. Anyone have a suggestion?
