I don't think my cats caught my cold - I think it was just coincidence, then one got a cold and gave it to the other.

I'm better now - just trying to get my business off the ground so it's been a lot of rush and stress and loads and loads of calls ... the people I depended on doing stuff for the last month did nothing, so I'm scrambling last minute to do what I thought they'd been doing.

Anyway, yesterday wasn't the salad, I went for high calorie, get it in me quick food, so I had 2 vegi dogs on whole grain buns.

I don't know what I'm having today. Might be nothing. Sigh. These calls are important but take up so much of my time. If I had more time .... but I have a drop-dead deadline.

Gee Trillian, I hope you get better soon. My cats have been sneezing but I don't think they got my cold from last week.

Today for lunch I had a grilled portobello mushroom on rye with balsamic vinegar and onion, and a tossed salad with some bagel crackers.

Having a whole family sick isn't fun. I know it's not nearly the same as with kids, but late last year when I had a REALLY bad cold, my cats had colds too. It was miserable for all of us. And with the cats, the snot was flying everywhere. It was truly astonishing.

Anyway ... I've not been eating right this week, it's been a rough one, but yesterday I had a vegan vegi burger on flax bread.

The day before that I had a salad with mache from the garden, tomatoes, broccoli, sunflower seeds, sunflower oil, lemon juice, home-made marinated mushrooms, and chicken style seitan.

Today will probably be Fennel and Tomato salad (with cucumbers, lemon juice, yogurt) and chicken style seitan as I've not yet had breakfast and that's ready from yesterday.

I was sick last week but feel much better today. I sure hope you both get well soon.

Trillian we are coming down with something in this house too. Runny noses and coughs started with my 2.5 year old on Thursday, by Friday my 3 month old had it and I got it on Saturday. Hubby came home from work today complaining that he wasn't feel well. oh dear!

For lunch today I had leftover 3-bean vegetarian chili that I made in the crockpot served over some brown basmati.

I'm still sick but feel more up for my regular raw foods - sort of.

Today I made a blended soup with soy milk, soy protein powder, spinach, tomatoes, celery, cucumber, onion, garlic, fresh lemon juice, alfalfa sprouts, and sesame seeds.

I went easy on the onion and garlic, but it's amazing how good those are for healing when you have a cold or the flu.

I think that helped, but I'm feeling like I need to go back to some cooked vegan things. It sure is no fun being sick!

I've been sick so I've been having miso soup with chicken style seitan, nori, and sometimes green onions. I have been using the red miso paste as it's vegan - turns out most of the miso you get has fish paste in it.

I also found a WONDERFUL Vegan "Chicken" Noodle Soup on the internet, and it's been SO REJUVENATING. I just love this soup. I made it with chicken style seitan and used those shiritaki noodles. Though I'm sick and my BF isn't, we've both been sort of 'battling' over who gets to eat it!! LOL!! Yep, it's that good.

I certainly ate lunch, let me tell ya! hahaha!

Yesterday I had a half a sandwich (lean ham & spinach) that my husband made me and the last of the apple & chard quiche.

Today I have another half a sandwich (turkey & spinach) from the hubby and I'll probably also eat the little bit of cod au gratin that I made that's leftover from Tuesday's supper.

Today I had baked salmon, steamed asparagus and red potato, tossed salad, fruit salad and mushroom artichoke soup. I had to eat out so made the best choices available.

I've grown mache before and enjoyed it a lot--very delicate fresh flavor.

Today for lunch I had a grapefruit, deviled eggs my chickens laid for me (but they didn't do the deviling!), tossed salad, and roasted veggies in season: garlic, rutabagas, turnips, potatoes, and carrots.

Today I had a light salad with mache, a couple leaves of dinosaur kale, a white button mushroom, peeled cucumber, alfalfa sprouts, some pine nuts, and aged olive oil & balsalmic vinegar (aged is soooo much better than most stuff you get).

Oh I forgot to mention I also put in fresh parsley from the garden (most of it was from the garden), plus kelp granules and Celtic Sea Salt.

It was really good!

In case you're curious, mache is a delicate leafy plant that is very easy to grow, and is higher in nearly every nutritional component than spinach is, even iron. And loads of Vitamin C, and lots of calcium too.

And it's also much sweeter and lighter than spinach, which can often taste bitter or tangy. Even when it's flowering, mache is nearly always sweeter than spinach.

Today I was eating at our cafeteria:

Mission tomato basil wrap filled with 1/4 C hummus, 1/4 C black beans, 1/4 C corn, 1/2 C cheese, and 2 slices red onion. Wrapped, grilled, and served w/ salsa. YUMMY!

I rely on my easy, but good for you sandwich of natural peanut butter and organic bread. I tried to make my own bread but it dried out too fast, and trying to make entirely whole wheat bread makes it REALLY, REALLY thick.

And then an apple and orange.

Simple, but it works.

About the coconut curry, I have a recipe for vegan coconut curry soup and I'd be happy to post that if anyone is interested. It's really quick, takes about 10 minutes to make, including chopping.


So, as I mentioned I was out of town, and while I tried to make reasonably healthy (at least balanced) food choices, it was vacation so I was more relaxed about it than I'd ordinarily be. Also, while I am primarily vegan, I find it incredibly difficult to eat at ordinary, common, everywhere, restaurants, be vegan, and feel nutritionally balanced, so I did eat some meat. Plus, I was in seafood territory, so I definitely had to have some fresh seafood and fresh San Francisco sourdough!!

Fri 1/9 – Egg rolls, hot & sour soup, cashew chicken, some vegetables, white rice

Sat 1/10 – Crab patty on San Francisco sourdough bread with avocado, lettuce and tomato (YUM!)

Sun 1/11 – Roast beef panini with roasted red bell peppers, tomato, Asiago cheese, tomatoes and Chipotle mayonnaise on Focaccia bread (Sooooo good!!! WOW!!)

I had yogurt, a fruit cup of pairs and lettuce. I had forgotten to bring my salad dressing but I was fine just eating the lettuce. This is a very helpful topic. I get to see what everyone else is eating and it gives me ideas for the next day or week. But I still have yet to understand what constitutes as a new Whole Food. I don't know what to buy when I get to the supermarket. I saw a green vegetable called chayote, but I didn't know if it was considered a new whole food. Maybe one day I'll try it anyway.

Thanks Blue Temple for your compliment on the coconut curry.

It's pretty easy except for lots of time-consuming chopping, but then pretty much all the food I make is pretty time-consuming in terms of chopping.

For today, I made a big pot of bean soup using the bean mix from Bob's Red Mill, adding about 1/2 cup of barley, a carrot, some onion, garlic and half a celeriac (celery root). When it was close to done I added some ham that we had frozen from a previous meal.

Seems like there are a lot of vegetarians/vegans out here. Neither the curry nor the soup are vegan. The curry has a tablespoon or so of fish sauce and the soup has chicken broth and obviously the ham, but tamari or sea salt would work as well as fish sauce and veggie stock works as well as chicken and the soup really isn't missing anything without ham. If I didn't have that, I would have sauteed the vegetables in a little olive oil.

I was so good today, I chopped up about 1/4 head of iceberg lettuce, sliced 1 cup baby bella mushrooms, 1 cup cherry tomatoes, 3 oz cut up chicken breast, and 1/2 cup 1% cottage cheese. For my dressing I took about 2 tsp whole grain mustard and mixed it with balsamic vinegar. Oh so yummy!!!

Oh, since I'll be eating the same thing for lunch today and tomorrow, and not posting until I get back, I figured I'd post Thursday's lunch:

Rather than eat out, I'm packing a lunch so I'll be having Spring Rolls (rice paper, cabbage, tomato, avocado, sweet & sour sauce, chicken style seitan).

I'll be eating the same thing for a while ... We're going out of town on Thursday morning and while I planned all my meals out, I didn't make most of them (though that salmon burger last night was so great)!

So I have loads of fresh produce I need to eat before it goes bad, so that means either a Arugula Cumin salad or an Arugula Spinach Salad, adding seitan to each, morning, noon and night through Thursday morning. (The recipes are on my Salads blog if you want them.)

For our trip, I went to www.happycow.net to find vegetarian, vegan or veg'n friendly restaurants, as well as health food stores like Whole Foods.

I find veg'n / veg'n friendly restaurants to have the most healthy, tasty and whole food oriented foods. If we don't eat there, we can always go someplace like Whole Foods and get something from the deli. And if it's a regular restaurant, I'll pick the best option - I know I'll be having the Jungle Safari Soup at The Rainforest Cafe!

Today I have a salad w/ baby spinach, mushrooms, shredded carrots, slivered almonds, and strawberries. I warmed up some grilled chicken to have with it. No dressing b/c I used all of mine and my DH's is icky.
I'm also having strawberry yogurt w/ granola.

One negative is that the chicken on my salad was out of a package. AND, DH bought the package and didn't check the ingredient label, so it has three different types of sodium in it. Ugh. Just what I need to motivate me to cook some real chicken tonight. I need to make sure I do the shopping from now on!

Glad to see so many people participating! Lots of great lunches, and good to see people making healthy choices when they can't have homemade foods.

Today's lunch will be a turkey sandwhich on sprouted grain bread with a touch of olive oil mayo. I have pita bite crackers to go with it and a big bottle of water. I still need to go grocery shopping from the holidays and everyone's veggies are sounding so good!

Like someone else said yesterday, I too generally eat leftovers for lunch. Less expensive and better than something I could buy. Today, I have a coconut curry with yellow beets, sweet potatoes, carrots, onions and broccoli over brown rice. I also have carrot sticks and a pear.

Yesterday was a six inch chicken breast sub from Subway. I was an hour and a half from home, and I resisted four other offers that my husband made for pasta, Chinese... It wasn't perfect, but I'm proud.

I was craving sushi today so I bought and ate 5 california rolls, took out the fake crap in it and replaced the crap with fresh cucumbers from home .1 small orange and handfull of almonds , lemon water.

I chopped onions, carrots, celery, mushrooms, steamed cauliflower, zucchini put it in a pot with 1 can stewed tomatoes and added chicken stock. It is quite yummy and I had 1/2 cup of 1% cottage cheese.

I had a salad made with butter lettuce, raw broccoli, raw cauliflower, and baby carrot. I sprinkled on some grated parmesan cheese and some whole wheat croutons. I chopped 1/2 slice of turkey breast meat (from a real turkey, not deli meat). Then I topped it off with a little Newman's Own Lite Italian dressing.

I almost always eat leftovers for lunch. Today it was a dish of pork loin, bok choy and rice noodles with a sauce of soy sauce, rice wine vinegar, sesame oil, demerara, garlic & ginger. Sounds like a lot but all told is was about a cup and a half of food.

I'll start with yesterday as I've not decided which meal (the stir fry or the salad) I'll have for lunch and which for dinner.

1/4 - 2 bean burritos: refried beans, vegetarian cheese, tomatoes, cilantro, romaine lettuce, on a flour tortilla (this was more of a "treat" meal, not the kind of thing I ordinarily have).

Today, I have a cornish pasty (extra from Saturday's dinner). I made these with grassfed beef from a local farmer and the lard in the crust is from the same farmer (though rendered by the butcher they use). Rutabagas, carrots, onions and potatoes from our winter CSA farm share. I also have some raw carrots, a pear and my snacks if I need them are two dates and a small handful of tamari almonds.

I thought a monthly game might be fun, so let's give this a try!

Come back each day in January, if you can, and post to this thread with what's in your lunch today. The purpose is to help share ideas of good whole food meals, but if knowing that you're going to post your meal helps you make healthier choices, then that's great too!
