I'm way late on this list but I loved it! So interesting! I counted 10 that I knew...we had those long beans in the Caribbean...they are neat.

If you can't find fresh (most likely in a Mexican market), you can usually find napolitos in jars in the ethnic section of grocery chains. Most often they are pickled, but try different brands and some are more lightly preserved than others and can be rinsed to remove some of the heavy vinegar and salt taste.

It is, but be careful how you cook it. Like okra, it can get slimy if not handled properly. I'd check out recipes from Mexican chefs like Aaron Sanchez or Marcela Valladolid, who have experience handling it.

Have you ever tried it raw? EXCELLENT!!! Of course I like okra anyway, but when it is raw there is noone of the sliminess that turns so many people off. If you haven't tried it raw for snacking or sliced and tossed into a salad, give it another go - it'll surprise you!

Facinating! I was surprised to have know about 2/3rds of these and have cooked with almost half. Must say that I really have never met a vegetable that I didn't like, at least if they were well prepared. (or raw)
