Greek Eggplant with Bread Stuffing from Glorious One Pot Meals by Elizabeth Yarnell. I often make this for vegetarian nights and we love it! There's only a tiny 1/2 cup of bread crumbs despite its name. (I hope it's okay to name a cookbook here - I'm new) emoticon

I'm going to do the roast pork slices again. I really love those. I'm thinking I want carrots as my veggie. And at least one slice of 12 grain whole wheat bread. Now I just have to clean up the kitchen so i can start the marinade.

tonight its stouffers again. I've been trying to catch-up with my life recently and it's one of those the hurrieder I go the behinder I get. I did get some chicken to try a new recipes with this week. And my butcher was able to slice the pork loin 1/4 inch thick for the roast pork slices asian style. Love that.

isn't it funny how tastes change over time? Cabbage, cooked took me some time to enjoy. I love it for St Patty's day with corned beef.

Tonight we had a cheese souffle and salad.

My husband is on his way over with some foie gras for me, I'm so excited. I haven't had foie gras in years, we can't get it in California anymore. I think that I'll sear it and serve it with brioche toasts and fig jam.

Tonight we are having chicken pot pies and sherried green beans and wild mushrooms.

Just came back from the asian market, I needed wild mushrooms for tonight's dinner, and that's where I get them. I was able to pick up some unagi, but the price has gone way up, which is frustrating. Also, they had a good price on mini peppers, so I need to figure out what I'm going to use them for.

Got to go, I've got nuts in the oven candying.

I've never used frozen before. I think they have frozen clam meat at my local asian market. I usually use fresh for linguine and clam sauce, but canned for clam chowder.

Tonight we are going out. My parents come every Thursday and take my kids and I out to dinner.

I bought fresh this morning and have some frozen littlenecks that I'll use as a "bump up". I prefer the fresh/frozen to canned but will use canned along with fresh if that's what's available.

I love linguine with clam sauce. Are you using fresh clams or canned? I was able to get some beautiful fresh cockles at Costco about a month ago, pricey but nice. They made a lovely linguine with clam sauce.

Tonight we are have sweet potato gnocchi with apple cider sauce, and peach salad. Peach salad is one of my fav's right now. Homemade peach dressing, peaches, goat cheese, almonds, homemade pink pickled shallots and lettuce.

I made the Broccoli-Raisin Salad on SparkRecipes - I didn't use any raisins though. It was delicious and seriously upped my daily fiber intake. I can't wait to make this again! Taking the leftovers with me to work tomorrow, and added some sweetcorn to the mix as well :)

An adzuki bean recipe (1 of 4) that I found here, with a broccoli side. Not sure which one I am going to try. But the they all look interesting. Adzuki beans have such a wonderful delicate taste. One of my favs.

This evening I made pork chops, garlic green beans with toasted almonds, and potato wedges. We are still trying to use up the freezer full of meat we bought at bargain prices last summer, and we are down to the last few packages of pork chops. My daughter gave me the ultimate compliment tonight. She said, "Mom, I am friends with several professional chefs, and not one of them has the instinct for cooking meat to the exact right temperature that you have."

Am I bragging? Oh, YES, I am bragging! And strutting around a bit.

We were craving clam chowder yesterday. So I tried Light & Creamy Crab Chowder (used clams instead) out of the SparkPeople cookbook. Was hesitant because the word "light" doesnt usually go with chowder! Much to my surprise it was awesome! Using mushrooms added a richness and the potatoes thickened it slightly. Overall really tasty and easy,,I recommend giving it a try!
