I made the Broccoli-Raisin Salad on SparkRecipes - I didn't use any raisins though. It was delicious and seriously upped my daily fiber intake. I can't wait to make this again! Taking the leftovers with me to work tomorrow, and added some sweetcorn to the mix as well :)

Grilled chicken (leftover) on fresh bakery bread with all the fixin's

My belly says full, so I'm ignoring the tracker which says I'm short on calories. There is no way I was short ANYTHING with a sandwich that size.

An adzuki bean recipe (1 of 4) that I found here, with a broccoli side. Not sure which one I am going to try. But the they all look interesting. Adzuki beans have such a wonderful delicate taste. One of my favs.

This evening I made pork chops, garlic green beans with toasted almonds, and potato wedges. We are still trying to use up the freezer full of meat we bought at bargain prices last summer, and we are down to the last few packages of pork chops. My daughter gave me the ultimate compliment tonight. She said, "Mom, I am friends with several professional chefs, and not one of them has the instinct for cooking meat to the exact right temperature that you have."

Am I bragging? Oh, YES, I am bragging! And strutting around a bit.

We were craving clam chowder yesterday. So I tried Light & Creamy Crab Chowder (used clams instead) out of the SparkPeople cookbook. Was hesitant because the word "light" doesnt usually go with chowder! Much to my surprise it was awesome! Using mushrooms added a richness and the potatoes thickened it slightly. Overall really tasty and easy,,I recommend giving it a try!

Child expressed an interest in Pioneer Woman's Chicken Spaghetti casserole. I halved the portions (except for veggies, doubled those!) And the results didnt fit into my dish! Froze somefor later consumption. Meal was solid if unimaginative. We all need a few of these casseroles in our repertoire.
