beef roast with vegetables but i could see it was too big a recipe for my old crockpot so cut back on veggies and the crock pot is full to the top, found it in Sparks but if I ever make it again i will pare it down more or buy a bigger crock pot.. Also give myself more time to do all the chopping.

I am attempting a recipe from another feed....3 packets plus beef or something like that, substituting chicken breast for the beef. Plus adding veggies...Never made it before so I'm curious to see how it turns out.

pork chops in barbecue sauce with onion and garlic. quick, easy and easy for my hubby to chew the tender pork as he has no bottom teeth. I make this one a lot. Cold and windy here so it will be a nice warm meal.

Lasagne (of sorts) I went to the cupboard to get the noodles only to find the back of the cupboard is damp! The lasagna noodles had gone mouldy, I ended up improvising with spaghetti.

Not sure what it's called - -
frozen chicken breasts
Salsa
Black Beans
Corn
Last hour I will cube and throw in an 8oz block of reduced-fat cream cheese - I will shred the chicken before adding the cream cheese

tonight we will eat it over a baked potato
tomorrow the kids will eat it cold as a dip with chips, Doritos or Corn Chips - I like it with Wheat Thins(hot or cold)

it's thick enough it's also very good wrapped up in a soft shell eaten as a burrito.

I make this chicken recipe about every other week as it's so versatile and my kids love it.

It's late, so nothing right now. I did make some lemon pepper chicken in the crock tonight. I ate it with some waxed beans. The crockpot makes meat so tender, one reason I cook with it alot.

I made chicken stew, hamburger soup and ravioli stew all in the crockpot this weekend. Then I put it into containers, serving sizes and freeze some of it for later. I have these for lunch, helping me much with weight loss. Can't go wrong with low fat crockpot recipes that have lots of veggies and some meat for protein. Glad I discovered this, works for me! emoticon

Thawing out a pot roast to make shredded beef burritos tomorrow. I can't remember the last time I made them with ground meat. It comes out awesome in a slow cooker. Snow day today and probably tomorrow, so I need some healthy comfort foot. Have to put lots of vegges on it and no sour cream anymore. emoticon emoticon

sooo... hubby made the chicken cordon bleu, and let's just say hubby has NO clue about PORTION CONTROL!!! OMG! Needless to say, while I enjoyed the night off, I think I will be cooking more than him! LOL! I tried to explain that what he had was more like FOUR portions of chicken, but he wouldn't listen to me! popped it in the oven and it took twice the amount of time to cook because he didn't cut the chicken into smaller portions first...lol... we ate and it was delicious! but, also kinda comical... :) love my hubby to pieces! :)

I made a low fat ham and scalloped potato recipe for Christmas, on Christmas eve, then made some beef vegetable soup on Christmas day, even with lots of people visiting. Today I made a vegetable minestrone soup. Freezed some of all, for lunches at work tomorrow and next week. Crockpot food is healthy, comforting and filling. Can't beat it! You lose weight while eating it, because no bread, cheese, lunch meat or take out food in there. Just lots of fresh seasoned veggies and a little meat for protein to keep you full. It also warms you up in winter time. It's filling and satisfying, a good thing! emoticon

Nothing at the moment. I did make a low fat chicken stew and ravioli stew in the crockpot over the weekend though. Taking them to work for lunches. Helping me with weight loss, because the crockpot meals are filling, healthy and low fat. I'd recommend light crock pot recipes to everyone! They warm you up too, something hot when its cold.

This morning I made Casserole for Skinnies from a cookbook called Fix It and Forget It Lightly - all crockpot recipes - great cookbook! It has chopped cabbage, onions, tomatoes, lean ground meat, celery and green beans seasoned with basil, oregano, and thyme. Good and filling too! emoticon

Chicken breasts in the Sous Vide again. I love having the cooked chicken in the fridge for lunch, dinner, snacks, or any time I need to increase my protein without increasing fat or carbs. I wish I had more capacity. I'll be cooking chicken today, tomorrow, and the next day too just to get 6 breasts done.

now I am a fan of the slow cooker

I made a bed of onion, carrots and celery, then put a whole chicken on it....minee was done in six hours and it is great, I took as many bones out as I could.

I loved the steak I did in the sous vide the other day. Today I'm doing chicken in it. Started with frozen breasts and set the timer for 10 hours. This is my second attempt at chicken. I expect this one to go much better.

I'm glad the thread asks what I'm slow cooking and not specifically what's in my crock pot. I got a Sous Vide machine last week and today I'm doing New York strip steak in the water bath. I'm still in the process of learning how to do it.

I learned last week that if you cook chicken on 165 for 8 hours you're still going to dry it out. Turns out if you're going to go that long, cooking it at 142 is better and surprisingly safe - who knew? Luckily since I cooked the chicken in a vacuum bag all the juice that came out of the chicken was still in the bag. So I just shredded the chicken, added the juice back in there and added some BBQ sauce for BBQ pulled chicken sandwiches. But I don't think that's going to happen to my steak.

I wanted to try the machine with a cheaper cut of meat, but the store had a sale and they were out of all the less-expensive meats. NYSS was the cheapest cut of meat they had left. Cheaper cuts of meat would also let me cook the meat longer without running the risk of turning mushy. Based on when I leave the house and when I return, all my slow cooking takes 11 hours.
