Parboil the carrots before you put them in the crock pot.

That sounds good, the only problem I have is that my carrots in my soup never seem to get soft in my crockpot, no matter how long I have it on.

Chicken soup freezes beautifully, but don't add the starch (noodles, rice, etc.) until you actually intend to serve it.

My family; my daughter and myself don't eat much meat, basically ground turkey and chicken, red meat just has too much fat, and is too expensive. I would like to know if anyone has any good chicken recipes, such as casseroles that would be good to freeze. I like to make big batches of food and freeze them, since we are constantly on the go. Thanks
