Ive never heard of peach butter before-Ill have to give it a try as my daughter loves peaches

Peach Butter in the Crockpot
Not sure where I got this one either, but I love peach butter.

* 6 c. unsweetened peaches
* 3 c. white sugar
* 1 1/2 c. apricot nectar
* 2 tbsp. orange or lemon juice
* 1 tsp. vanilla

Put peaches through food mill or food processor. Mix all ingredients together well and put in crockpot. Bring to a good boil, uncover and boil until thick or 4 hours, high or low to keep it boiling. When it boils good, remove cover.

Crockpot Apricot Preserves
These preserves are really beautiful and so easy to make. If you'd like, flavor them with some ground cinnamon, nutmeg, or allspice after the mixture has thickened.
Not sure where this one came from.

INGREDIENTS:
1 lb. dried apricots
1 3/4 cups sugar
3 1/2 cups water


PREPARATION:
Chop the apricots finely using a knife or food processor. Place in a 3-1/2 quart crockpot with the sugar and water and stir to combine. Cover slow cooker and cook on high for 2-1/2 hours, stirring twice during cooking. Uncover and cook on high 2 hours, stirring occasionally, until thickened.
Ladle preserves into clean, hot jam jars, seal tightly, and keep refrigerated up to 3 weeks. You can process these in a boiling water bath if desired.

Crockpot Chutney

cooking spray
2 cups chopped onions
4 cups fresh peaches or frozen peaches, peeled and sliced
1 cup golden raisins
1 cup light brown sugar
1/4 cup crystallized ginger
1 teaspoon mustard seeds
1/2 teaspoon ground ginger
1/4 teaspoon cinnamon
1/4 teaspoon ground cloves
1/4 cup flour
1/4 cup cider vinegar


spray a skillet with cooking spray and saute onions until softened.
add onion and next 8 ingredients to a 3 quart crockpot.
combine flour and vinegar with a whisk, stirring well.
add to peach mixture.
cover and cook on low for 5 hours.
serve.

This is great to put on a ham before slowcooking it.

Sweet Potato Butter
Makes 20 servings

4 cups peeled sweet potatoes, cut into slices 1/8 to 1/4 inch thick
2 cups peeled, cored, and chopped apples
3/4 cup sugar
3/4 cup firmly packed light brown sugar
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 cup water

Combine all ingredients in slow cooker and stire.
Cook on high until sweet potatoes are fully cooked. Mash or beat iwth an electric mixer until well blended.
This mixture will be a little thicker then apple butter.

Makes 2 pints.
