Last night I made a Sparkpeople menu that included chickpeas, tomatoes and green bell pepper. I added a couple of slices of jalapeno pepper to kick it up a notch and enjoyed it. I heated it in a skillet and added a couple of teaspoons of low fat sour cream at the end. Wasn't sure that I was going to like it, but I did and will probably make it again.

My children do not care for most veggies. I grated a very large zucchini into meatloaf and they loved it... they didn't know. I think I'm going to try to add a variety of veggies to the meatloaf to see how it goes.

I made the lowfat meatloaf I found on Sparkpeople and added frozen chopped spinach to the meatloaf mixture, and I hated spinach, and it came out delicious, I am looking forward to trying it with shredded or chopped carrots
You can make roast in the crockpot without veggies, you know the cream of soup pot roast; then fix veggies on the side (for yourself). Also some things like broccoli rice & cheese you can make with small, fine pieces of broccoli - it's visible but can't taste it for the cheese, the macaroni, the rice, etc.
There's a fairly common mac & cheese recipe that has winter squash in it - and you seriously can't tell. It's delicious. It is on SparkRecipes as well as Food Network, All Recipes, etc.
Jerry Seinfield's wife wrote a very cute book about it. Did she put zuchini in brownies? I think so. You could look that up on Amazon.
You can do searches with the words "chick peas", "garbanzos", "zuchini" in them. Many times you can make pumpkin bread, zuchini bread, carrot cake, etc. Chick peas can be made into low-cal sandwich spreads, non-spoiling filling for deviled eggs, etc.
hi all, i'm looking for some quick, healthy meal ideas that maybe hide veggies in them. i currently live at home and my mom and step-dad don't have the best of eating habits. i am really trying to help them w/ their weight loss goals but my step-dad hates just about every vegetable!! does anyone have any ideas/recipes that maybe have some vegetables in them w/o really knowing it?
