That BLT sounds good. Salads are nice and cool. Mandarin Chicken salad is my fav. as well as fresh fruit. I like fruit salad and cucumber salad.
Corn on the cob grilled is hard to beat too.
Anybody for a chilled beet borsch soup?

We barbecue to avoid using the oven. Usually chicken breasts, lean ground beef or well trimmed pork. Green salad on the side (just lettuce, tomatoe and celery. But if we are both really tired we usually just have eggs and toast (winter or summer).

What doesn't kill me makes me stonger.

My favorite summer meal is BLT (made with turkey bacon), corn on the cob and cucumbers/onions in vinegar/water.

But my family isn't as crazy about that as I am. I just try to make sure that if I am going to heat up the kitchen by turning on the stove, that I make it worth the while and cook more than one batch of whatever I'm making!

Salade nicoise. I use a layer of potato salad along with the layers of green beans, lettuce, tuna and the toppings include hard boile egg, tomato, olives, sometimes anchovies. Yum!

we eat the same thing every night but it's perfect for a cool summer meal...
a good green salad...a big one...mixed lettuces with lots of other veggies and some times some black beans, sometimes a little cheese etc. and a piece of grilled chicken or fish or turkey burgers (no bun...put it on lettuce)....I try to use different things in the salad to mix it up and various marinades on the meats.
It's simple but it's filling and satiating and low cal. Works for us....
