emoticon Summertime fruitcake!

think of the center cut into an oblong round tall cylinder shape...

take some honeydew slices and cut into leaf shapes, some cantaoupe slices & cut into flower shapes (tulips & daisys :) cut some grapes in 1/2 and then stick all of them with toothpics on the watermelon sides...

then decorate around the bottom and on top with some pretty melon wedges, strawberries, blueberries, grapes around the bottom & on top & serve :)


saw a pic of that & am dying to make & take it somewhere! could probably sprinkle on some raisins or craisins too ;)

emoticon fruitlicious popsicles

Ingredients:
3 cups watermelon puree (seedless if possible)
1/2 cup fresh blueberries
1/2 cup chopped fresh strawberries
1 kiwi, peeled and sliced
1 peach or nectarine, diced small
handful fresh cherries, pitted and chopped

Cut the watermelon into chunks and then puree it in a blender until smooth. Set aside.

Set out about 1 dozen popsicle molds (amount needed will vary depending on size of molds). Fill each one with the chopped fresh fruit. Then pour in the watermelon puree until each mold is full to the top. Place a popsicle stick into each one. Place into your freezer and freeze for about 6 to 8 hours.

When ready to serve, run the popsicle molds under warm water for a few seconds and then pull each one out.

some freggielicious ideas...

emoticon vitamin waters, just in time for sping & summer :)

1) The classical : lemon/cucumber:
Mix in a pitcher: 10 cups of water + 1 cucumber and a lemon, thinly sliced + 1/4 cup fresh finely chopped basil leaf + 1/3 of finely chopped fresh mint leaves. Leave in the refrigerator overnight before serving.

2) The granite : Strawberry/Lime or Raspberry/Lime
Mix in a pitcher : 10 cups of water + 6 strawberries / 0r Raspberries and one thinly sliced lime + 12 finely chopped fresh mint leaves. Leave in the refrigerator overnight before serving.

3) The digestive : Fennel/citrus
First: infuse 1 to 3 grams of dried and crushed fennel in 150 ml of boiling water for 5-10 minutes. Allow to cool.
Mix in a pitcher: 10 cups of water + lemon juice (put the leftover lemon in the mix) + a small thinly sliced orange + 12 fresh chopped mint leaves + the infusion of fennel seeds. Leave in refrigerator overnight before serving.

4) The antiOX : Blackberry/Sage
Note that a part from the berries, sage leafs is the herb that has the highest antioxidant content.
Mix in a pitcher : 10 cups of water + 1 cup of blackberries that have been very slightly crushed + 3-4 sage leaves. Leave in refrigerator overnight before serving.

5) WATERmelon : watermelon/Rosemary
Mix in a pitcher : 10 cups of water + 1 cup of watermelon cut into cubes + 2 rosemary stems. Leave in refrigerator overnight before serving.

6) The exotic : Pineapple/Mint
Mix in a pitcher : 10 cups of water + 1 cup of pineapple cut into cubes + 12 fresh mint leaves finely chopped. Leave in the refrigerator overnight before serving.

7) The traditional : Apple/cinnamon
Mix in a pitcher : 10 cups of water + 1 cup of apple cut into cubes + 2 cinnamon sticks + 2 teaspoon of ground cinnamon. Leave in the refrigerator overnight before serving.

8.) The zingibir : Ginger/tea
In advance: heat 1 teaspoon of ginger in two cups of tea, let it cool down.

Mix in a pitcher: 10 cups of water with two cups of the ginger tea + 4-5 pieces of fresh ginger cut into cubes. Leave in the refrigerator overnight before serving.mm

Wow... sounds great. I love new ideas. Making salad dressing is fantastic. I love olive oil.

Garlic added to fish is delicious!

Salsa is ideal too. I bought some Brushetta veggies from Costco but the container was opened so I need to return it.

regarding fish ~ baked with very thinly sliced sweet onions and very thinly sliced lemon (or lime)... i usually sprinkle on top with some garlic powder & blackening seasoning... If it is a whole fish, i put it in the middle.... If it is on low heat on the bbq, yummers! (dh usually adds a dollop of butter on top of any fish)


& salsa... last summer started making fresh on the bbq...

cook all low & slow & when cool, peel off burnt skins

cut a large sweet onion in 1/2, until all transclucent
1 large red bell pepper (cut top & remove seeds/core)
4 med-lg tomatos

chunk & put cooked items in a food processor/blender
with 1/2 bunch (1/2c) torn cilantro, couple dashes or 1/4 tsp of garlic powder, coriander, cumin & blackening seasoning... and juice of 1 sm lemon or lime, I usually add some zest from the lemon or lime too

My tip: Lately I've been making my own salad dressing - so I can control how much olive oil (calories) goes in it.

Last night I made one with olive oil, orange juice and balsamic vinegar - it was great.
My favorite is olive oil, red wine vinegar and fresh basil over greens, chicken and roasted red peppers. yum

I recently read chunk light tuna is better than solid.
I don't eat enough fish (and I live by the ocean LOL)
I'm allergic to scallops, but not anything else.

Wow, that is great. I am allergic to fish and wish I could have some. The doctor said my allergy is not as bad and I could try it but I am afraid to have a real serving. What kind of fish do you enjoy?

emoticon just started reading Mediterranean Diet Cookbook for dummies, we ordered after the news reports recently about the benefits fo the Mediterranean diet. Seems really practical, realistic and helpful for exploring this kind of eating.

emoticon looks like we'll be eating more fish, will have to watch for the sales and get some put up in the freezer....

Thanks for the tips! Check out some of the websites I posted that have ideas for keeping in the Mediterranean way of living and eating. emoticon

I love walking in the spring time before it gets too hot. I am also trying to walk even more in the evenings when I watch the news. I'll let you know if it helps at all.

I have been doing pretty good.

This is not really a tip but yesterday I bought the book "Slimmer, The New Mediterranean Way To Lose Weight" by Harry Papas. I started reading it and then I want to try following what he says. I will let you know how I like the book and its recipes and if the plan is working for me. It will take a while but I will keep you posted.

emoticon What with the Weather, and a Crazy Work Schedule, it can be a Challenge to get in my 10,000 Steps every day. I have discovered that if I try to get 100 extra steps every hour that I am awake -- Usually at least 10 - 12 hours a Day, I hit the 10,000 Step Mark almost every day.
