Ok JINLYNN here is the Eggplant Parmesan recipe, I hope you try it and enjoy it!

Eggplant Parmesan
Ingredients:
1 medium eggplant
2 whole eggs, or 1/2 cup liquid egg substitute
2 to 3 Tbs olive oil
2 cups Italian seasoned bread crumbs
1 30 ounce jar of spaghetti sauce
2 to 3 cups of shredded Italian 4 cheese blend
grated parmesan cheese to shake on before eating if desired
Directions:
Preheat oven to 425 degrees.
Wash eggplant and remove stem. You can remove eggplant skin, but you'll be loosing nutrients. I don't remove the skin.
Slice eggplant 1/4-1/2" thick.
In shallow medium size bowl beat egg and oil with a fork.
In another shallow, medium sized bowl pour in the bread crumbs.
Spray an 8 x 10" baking dish with non-stick vegetable spray.
Dip eggplant slices into egg/oil mixture and then coat with the bread crumbs on both sides.
Place coated slices in baking dish in a single layer.
Bake 8-10 minutes, until golden brown.
Top with spaghetti sauce and then cheese.
Bake 5-10 minutes more until cheese melted.
Serves: 6 - 8
Note: I use a garlic and onion spaghetti sauce, but you can use what ever you prefer.
If you want to use this same recipe with chicken- I use 6-8 chicken breasts and bake about 20 minutes. We love garlic, so we use it a lot. I often put extra garlic powder and dried basil and oregano in the bread crumb mixture.
*I have not run this recipe through the recipe calculator on the spark site, so I don't know the calorie count etc.

I make eggplant parmesan sometimes. I basically use eggplant instead of chicken. I'd give you the recipe if you like.
I'm making stuffed pasta shells tomorrow. I stuff the cooked shells with a mixture of ricotta cheese, parmesan, egg and spices. Then I cook it all with some italian spaghetti sauce in the oven. Yum. This is one that the whole family likes too!

Fritters remind me of corn fritters that I used to get for breakfast some days at a camp I went to in the summer. I'd love a recipe for those if anyone has one, that is if corn is on this diet.

In our house, eggplant appears rarely and gets used one of two ways:
I make Moussaka
DH makes ratatouille

Eggplant Fritters:

1 med. eggplant
1egg beaten
3 Tablespoons flour
1/2 teaspoon salt
1/2 teaspoon baking powder

Peel and slice eggplant. Steam until tender and drain. Mash until smooth.
Add egg, flour, salt, and baking powder and mix well.
Form into patties and fry in deep hot oil.
I have not tried this but you might be able to bake or saute this. emoticon

Thanks Nola - I don't have a BBQ for grilling, but it gave me an idea. Maybe I will try oven roasting it with some parmesan cheese. I have been wanting to try a new veggie and the egg plant looks interesting.

The only time I had eggplant is was grilled in spears and Yummy! Many people use it in casseroles and soups. A dish I know of is called Ratatouille. I had a neighbor who told me about it.

I have looked through the book on a library line. I do have The Mediterranean Diet by Marissa Cloutier. I have found several Mediterranean type recipes in Cooking Light Fresh Food Fast and Fresh Food Super Fast.

Since taking the time to prepare and chop all my veggies for salads when I bring them home I find that I am eating a lot more veggies than before. emoticon

I saw the book and have been wanting to get it. I did pick up another one by the same people called Everything Low Cholesterol, which I have only used one recipe out of it so far. I also have the Mediterranean Heart Diet cookbook. I haven't used it yet.

I picked up a book called "The Everything Mediterranean Diet Book" by Connie Diekman - has anyone heard or read it? And if so - what did you think of it? It seems to be a fairly good reference book and has some recipes in the back. Haven't tried any of them yet, but there are a few that sound interesting.

Keeping all my salad makings in bags is working out well. I hate making salads, so this way I don't have to spend time every day making up a fresh salad. Has anyone else tried this?

I went grocery shopping today - came home and chopped up all my salad stuff and put them in zip lock bags, so all I have to do is take a handful of this and that and my salads are ready for the table. Now I will have no excuse for not eating some healthy fresh veggies every day.

Why is it that salads always taste so much better
when someone else makes them?


I do, however, sometimes enjoy getting into a good deep breathing, calming zone when doing a big chopping job, usually happens late afternoon/early evening with sun flooding thru windows onto counter. It turns it into a stress buster exercise.... the "Zen of Chopping" maybe? LOL

Tonight I actually turned on some appliances and cooked a real meal - grilled chicken, oven roasted asparagus and potatoes and I opened a bag of salad (I dislike making green salads - all that chopping is a pain, but I like eating them).
It tasted so good I should do it more often!

I went to the local library yesterday and got out a mediterranean diet cookbook - it has a lot of interesting info in it. Right now I am in the process of making a pot of chicken and rice soup. I have my stock on simmering. I have been looking for a recipe on line that appeals to me, but haven't found any. So I am going to do what the book suggests and just improvise my own.

What I like about the mediterranean way of cooking is the emphasis on fresh, whole, unprocessed foods. I am excited to be starting this journey to a healthier way of cooking.

Hi all-
My first "real day" on the diet yesterday and I must say it wasn't bad. I was craving snacks last night like crazy while hubby ate his popcorn so I had 2 stalks of celery with some garlic hummus on it. Was filling and yummy!

That sounds good. My mom has made a coleslaw with apples and a vinegrette dressing. I love sweet and sour.

3 weeks post surgery and I finally put on jeans. I wasn't sure how uncomfortable they would be on my incision, but they seem to fine. I was getting tired of wearing sweatpants. 2 more weeks and I will be back to work!

FBD was a variation of Mediterranean Diet.....
They just spend more time focusing in on getting good fats (mono & poly unsaturated) into every meal. If you put in the good fats and still give yourself a nice meal of proper total calories etc --well -- you force the bad fats out of your diet.

It was part of an ongoing process of focusing on "fixing" macro/micro nutrients in menus, one or two at a time.

Since I wanted to lose some weight during the first phase, I knew I'd be resticting calories ... so it could be easy to not meet vitamin requirements daily while getting the kinks out of my menu plannning. First step : I picked a good multivitamin supplement so as to avoid that problem.
For my menu work, I picked sodium and fats to start focusing on first. Since then I added fiber, protein, and calcium. That is what I was formally tracking but I also informally limit sugars.... by limiting sugar as an ingredient in recipes and buying low sugar groceries. I go for low fat & low sugar but avoid most nonfat & artificially sweetened stuff --- But that's a whole other soap box ....

Eventually, I'd like to see my needs met more readily without supplements but still have some kinks to work out of my planning system first. It was going okay for awhile but then life happens and the system falls apart some (which says that the system isn't enough of an instituted habit yet and has a few kinks). Its an ongoing battle.

Kim - glad to hear that despite the annoying setback, you are on the mend.


Nola- Yes it is amazing how improved eating can change your palate over time!

I didn't drink much soda but after all those months of water, water, water that if I am somewhere and have a little soda, I usually don't like the taste. I find soda now tastes like bad syrup.
Likewise, the milk I always used to drink and love all my life now tastes like I trying to chug heavy cream .... and it makes me feel ill. Ice cream and cheese were making me feel bad often too, especially if the serving was too big. I thought I might be starting to have some lactose issues. Further investigation turns up that that is not the case. There were some other nondairy items that were bothering me too.
You know what it was? It was the fats! It seems that after all the months of FBD where I logged menus and worked to:
1) keep total fat in the proper range as % of total calories
2) worked to make significantly more than 50% of that fat be mufa/pufa, not saturated fat
I don't eat much saturated fat anymore. I also don't eat many processed foods anymore (hence much fewer of those mystery chemicals consumed). So now when I do eat something fatty or strangely/overly processed - like many ice creams - my gut complains.

I seems the more I eat the good foods, the less I want of the bad. Even when I have a craving for an old favorite that is in the not-as-good-for-you category, I still may have it but I'm often satisfied by a much smaller quantity.

Hi! Recovery is coming along slowly. I went to the doctor on Monday and I found out that I had a hematoma (like a blood clot) at my big incision site. The doctor had to drain it in the office, so I was there for a little longer than I hoped. She said it should continue to drain the rest of the day and couple of days. It has drained a little. I have to go back today for another check. This was why the incision wasn't healing (closing) in a couple of spots. I had to get gauze pads and bandages and tape. Trying to get them on correctly and taped up was not an easy feat! I had to lay down to do it and look in a mirror to make sure I got taped up correctly. Haha!!

I slept the couple days away. Today or as I am typing, I have more energy than I have the last week. I haven't been eating right or hardly anything at all since nothing sounded good. Last night I did have my sisters come over and we went to Bob Evans and I had chicken strips and a baked potato and coleslaw. I think the protein really helped!! I did have my sisters take me to the grocery store to pick up a few things. I was in there about 10 minutes and I was exhausted when I was done.

I will keep you posted on my recovery.

Kim - so sorry to hear that your surgery couldn't go as you'd hoped. It's now been about two weeks,,, Hopefully the recovery has proceeded well so you can be moving forward again.

Haley - WOW! I don't envy you that bad, really bad country song you've been living. I'm sure that everyone understands and just hopes that day by day things start turning around bit by bit. Every leader deserves a little break now and again so don't worry about us. Come back when you can and in the meantime we'll muddle through.


Best thing we can all do is continue to follow "The Way".

Had my surgery on Friday. It started out robotically, but there was too much scar tissue that the doctor needed to remove and ended up do it the old fashioned way. I was cut open. Therefore, I was in the hospital for a couple days and will be off work a little bit longer than 2 wks. I am sore and tender, but hopefully will be feeling better soon.

Sorry for all your losses. I cannot imagine losing so many in a short time. Hope things get better for you.

I also found out I will be losing my job this year. If I cannot find something else by the time that comes around, I will probably lose my house as well. I am going to speak to a lawyer about bankruptcy and seeing what I can do to not lose my house.

I am having surgery this Friday. It is a major surgery that is being done robotically...this is relatively new. It means that it is less invasive and less recovery time. I will only be in the hospital the day of surgery about 6 hrs after. That is if all goes well. Recovery time will be cut form 6 wks to 2 wks. I will be out for a couple of days ....at least from Spark. So I will probably check in next week.

Hello everyone! Welcome to our new members! I see there are a lot of good things going on and that 2012 seems to be looking up for many of us.

I apologize for disappearing but it couldn't exactly be helped. We had a LOT of deaths in the family (my grandmother, DHs grandfathers (both maternal & paternal), 2 of my uncles, my aunt, my great aunt, 2 members of our church and a family friend....and to make it even more like a country song? My dog was killed AND my job is iffy....STILL!

Anyway, I would like to say I'm back and ready to jump all in but the truth is I just don't know! I totally understand if you want me to resign as team leader (because I've done a poor job thus far) but my goal is to take things day by day. Hopefully, that will include logging in here because I've missed checking in on you all!
