I'm fairly new too ... Still learning lots from other reading but feeling kind of at loose ends as far as a team participation ...

Am enjoying my olive oil and fruits and trying to get in more veggies... still puzzled about appropriate meats and I don't do many grains due to celiac [must be gluten free] - so can you share your progress and maybe we can get some feed-back.

Hi, is this team active? I just joined, but it doesn't look like it gets posted in very often. I'd love to see it get busier. I just found out about the Mediterranean way of eating, and I would love to learn more and turn it into a lifestyle. Hopefully some of you are still active here!

There are a lot great things to add to oatmeal... even a little dark chocolate and cinnamon. I eat natural olives for some good fats and avocado too. Nuts are also great but I have a lot of allergies and need to be careful. Flax seeds are similar to nuts so I can't have them often either.

I cannot eat fish and have a severe allergy to salmon and scallops.

thx for that info!! i'm trying not to eat many eggs due to trying to lower my cholesterol. but the other things mentioned i can do!! woohoo!! i just talked to the owner of our local herb store, and she was telling me about flax oil. gonna get it next time i'm there and add a little to my daily oatmeal!

ELIZWILLB140 - I'm no expert, but, I have heard in many places that whole grains are an excellent source of protein as are legumes, beans, the lean meats and nuts. Nothing much going on here. Supposed to rain this weekend and be HOT! I will be taking care of my dog, who just had his ACL repaired. He had surgery on Weds and is doing very good. We need to do his physical therapy and icing and massage afterwards. Spoiled dog!!

emoticon It was a rainy, dull day today - not the kind of day I want to be out and about, but had appointments to keep. I drove my Mom to the hospital as she had an appointment at the Renal Care Clinic. She is in stage 4 renal failure (stage 5 is dialysis). We have been going there for about a year & a half now. Mostly they just monitor her health and answer questions - very nice, caring group of people. Then I had my weekly massage appointment. After my long drives I need it. She massages my knees - makes a big difference in my level of mobility and pain management.
Tomorrow I have a lunch date with a dear friend. And then its the weekend!!

Just spent some time straightening up three hot spots. I think my cats must pile stuff up when I am not looking!! If only they could be taught to do house cleaning, etc. And if they cooked too that would be great!

More rain today, but it doesn't stop God's blessings from coming. I got a phone call this morning and will soon be having visitors. Two cousins from Oregon are going to drive up to visit with my mom and me over the coming weekend. So there will be lots of fellowship, laughter, and fun for all!!

Have had a great weekend so far, and it is not over yet as tomorrow is a holiday up here in Canada.

Started my weekend off by going to a Paul Brandt gospel concert where I got to sit next to Elvis! We have an Elvis impersonator who lives here in town and he and his girl friend came and sat beside me in my row. This guy dresses and sounds like Elvis, even when he is not doing a concert. I thought how sad it was that he has spent so many years being someone else that he can't even be himself when he is not working. Most people seem to be on a quest to discover themselves, but apparently not him. But the gospel concert was great and I came home with a CD to remember it by.

Yesterday I went shopping for my garden among other things. Bought some more plants and a very nice bird bath that was 50% off - I love finding a bargain.

Today I went to see the movie "42" - what a wonderful story of courage and inner character. I would recommend it highly. And tomorrow I am going to see the new Star Trek movie.

And then I need a rest!! emoticon

Not sure where it was listed regarding the TMW book called Slimmer. Just wondering if the person that brought it up read the book and what where her thoughts. I just started reading the book, so far the food sounds yummy and it looks easy enough to follow. I have the library book and if I like it further than where I am at, I may buy the book to have it on hand.

Way to go on the loss! I was just told by my doctor to lose some weight and my joints should feel better. Not only that I also have high bp and cholestorol, so good reason to get moving and eating right. time to get out the MTW cookbooks!! Besides, I also have a class reunion to go to if I want to.

You know, it's funny that I haven't really been into plants or gardening much and then this year I am. So far so good with our plants. Last week or so we had a night with very cold temps (close to creating frost) but thankfully our plants made it through just fine. Cherry tomatoes have two flowers on them so hopefully my usual brown thumb has in fact got some green in it! emoticon Best of luck to everyone else who is gardening, too!

I'm doing well in general. Making healthier choices, more home cooked food, working on being more active and looking forward to the BLC to begin in June. One step at a time! emoticon emoticon

GETTINGFIT4HIM, SOPHIEMAE2007 & RESAMARIE may we be successful with what we believe to be normal eating/exercise. I'll keep working on making exercise a normal part of my life. Not there yet.

I too have planted and already harvested because I live in a tropical zone. Had great success with soybeans, bok choy, kale, okra, basil, rosemary & other herbs. I am having pest problems the peppers though. I planted some more seeds today; green beans, more corn and carrots. The plum tomatoes and cantaloupe seeds I planted last week already germinated. Yea!

I also read the Normal Eating article and agree with the thought that the workout you will stick with is the one or ones, you enjoy!

AND, I, too, have planted some fresh veggies and herbs in the backyard. We went with containers as we also have a new puppy so in ground may not be the smartest plan right now. We planted some heirloom/beefsteak tomatoes, black cherry tomatoes, hot peppers, bell peppers, cilantro, Italian parsley and basil. I have not historically had a green thumb but so far so good! Hoping it continues to go well and we have a nice harvest from our plants! emoticon

I bought veggie seeds last week and started germinating them over the weekend. I have a few coming up in containers. Can't wait until they're big enough to plant. I have green beans, sugar snap peas, cucs, cherry tom., lettuce, carrots, sweet peppers and I bought garlic to plant. Whew does it stink, but I love garlic. Can't wait to try it, never planted it before.

Hello everyone. I have been around in a long while. Hope all is good by you.

I read this Spark Blog "Have You Found Your Inner 'Normal Eater'? and thought it was worth mentioning here. For years I have been trying to find out what is normal eating and its different for everyone. All I know is that normal eating is sensible and enjoyable. Read it and see if had it pertains to your "normal eating" style. For me, on a daily basis I focus on eating healthy foods and I make them tasty by trying different recipes. I also indulge from time to time and enjoy socializing with friends without worrying about what I eat and the calories that I consume. What I must focus on is the exercise. I don't do enough.

Thank you sooo much for your insight. I do know my mentor is smart but he is a little off sometimes when he tells to this mover that and then says to move it back, etc. He is confusing me so I called him and all went better. WHEW!

An 'off-the-cuff' observation about your dissertation mentor being too fussy ... mine wasn't fussy enough and I feel I was let off too easy to produce my best work.

Maybe that is what is happening with me and my diet plan ... I let myself off too easy? Hummm, food for thought. But back to the dissertation - you'll be happier with your end result for having been pushed beyond your comfort zone - at least I would have been happier! Take care - do good - be happy!

I have been working on and off and it is a constant struggle. Now I will be tutoring online at night up until midnight but the great part is that is at home! At the same time I am working on my dissertation... yet a headache. My mentor is just too fussy and I don't need the stress.

As far as meals are concerned, yesterday I made a nice salad and soup. It is freezing cold here in Florida! I used chicken and bones from a rotisserie chicken to make the broth the other day. Then on Sunday I added onion, spinach, celery, carrots and fresh spinach. I usually add a little olive oil and Romano cheese. Olive oil loses its properties when heated tho. I just veggie fettuccine broken up in the soup. It was delicious. I will have to post a pic I took of it. LOL

I made my husband pork meatballs that were very low in fat. It was like an Italian wedding soup.

Now for today... I have no idea.

Between school and work, I've been too busy and feel like I haven't had any "me" time and I feel and know i am neglecting my dogs. I started this job at the very end of last year and I work different hours each day, which I hate. I took the job, because I needed the job as my unemployment was running out and it paid more than unemployment. I have 2 jobs that I am hoping to hear from, which would a regular 8-5 schedule. I'm just stressed and tired.

I tried to do some of the regular Thanksgiving foods at the potluck at the apartments this week and was sick for 2 days. I really am so limited to the foods that I can have. I can't eat the Mediterranean foods or go by my South Beach that I so enjoy.
I will have a simple day at home for Thanksgiving but the kids will be in town for Black Friday shopping Thursday night so I will get to see them. emoticon

I am up way too early on a Saturday morning. Something woke me, like wood smoke, and I had to check it out. I don't know if my neighbor started a fire in his fireplace or we have a lot of leaves on the ground, so someone may have started a leaf fire or I was dreaming I smelled a campfire burning. I got up to look around to make sure my house wasn't on fire too. I think I must have been dreaming it. Weird. I even went outside with my dogs to check. I had to been dreaming it.

I know my family started a couple of weeks early to see whatever one is going to make and start buying what we need. We have family coming in this year, so it is going to be a big Thanksgiving. We have the traditional turkey and sometimes my sister in law will fix a duck, but she is the only one that eats it.

Hi - It's been far too long since I have posted here and I thought I better get back into the swing of things.
I hope all my US team mates are getting into the spirit of Thanksgiving. In Canada we celebrate Thanksgiving on the second Monday in October, so my Thanksgiving has come and gone.
I live very close to the Washington state border (about 5 miles away) so we get a lot of advertising and news about your Thanksgiving. In some ways it often seems like we have two Thanksgivings. Do you have your menus planned in advance? Will you be having a traditional turkey dinner? I bet it will be delicious.

I haven't been doing much of a Mediterranean Diet in a long time. I did try the Greek Beans that was posted on the site for the recipe of the day or whatever it was a few weeks ago. To me it wasn't so much greek but italian. It had tomato paste and that is why I thought italian. They still were good!

Went shopping this afternoon and bought all the ingredients I need to make Eggplant Parmesan which I plan to make for dinner tomorrow (Thursday). I have invited a friend over - she is going to be my guinea pig. If it doesn't turn out there is always McDonalds!

I must say that I agree with Karen. The recipe for Ribollita soup does sound delicious. I will be adding that one to my list of new recipes to try.
Still haven't gotten around to trying the eggplant yet, but I will make a commitment to try it before the end of August.
This is a great group for helping out with recipe ideas!

Karen, on the bread, I don't see why not.
Around here that bread step with its extra 8 hour wait usually wouldn't get done. The soup would get attacked right away but there would be some good crusty rustic bread to have with it.

thank you so much SKIPSIDE for that recipe.
Just reading the recipe made me real hungry and it looks so healthy.
Do you think I could use a whole wheat or another high fiber bread in it?
I still haven't gotten around to roasting the leeks with other veggies, but I'll do that today.

All I can think of off the top of my head is soups.
The first time I ever bought leeks was to make vichyssoise (potato&leek soup pureed and normally served cold).... but it also can be one of the zillions of veggies thrown into a good vegetable soup like Ribollita (classic Tuscan soup that's made up of vegetable soup mixed with pieces of rustic bread).

There are many many versions of Ribollita out there due to there being numerous veggie combinations that are possibilities. I had a good recipe that I think may have used fennel rather than leeks (though you could probably use both too). A decent looking recipe example for this is

though I'd use diced tomatoes rather than paste
and would add parsley, basil, thyme
(and maybe a lttle garlic as long as I'd not been too heavyhanded with onion quantity)

I WOULD LIKE LEEK RECIPES PLEASE

I bought a bunch (4 tied together) at the store and the roasted root vegetable recipe I want to try calls for one leek, not 3. So I'm wondering what to do with the rest.

Roasted Eggplant and Peppers- From the South Beach Diet Book
1 Eggplant, peeled, halved and sliced
2 Red Bell Peppers, cut in thick strips
1 Green Bell Pepper, cut in thick strips
1 onion sliced
1/2 Cup extra virgin olive oil
Fresh Basil (optional)

Preheat oven to 350 degrees. Place the eggplant, peppers and onion in a nonstick baking dish. Drizzle with olive oil. Bake in the oven for 20 minutes, basting regularly.
Arrange the vegetables on a serving dish and garnish with fresh basil if desired. Serves 4

per serving-193 calories, 2 g protein, 16 g carbohydrates, 14 g fat, 2g saturated fats, 5mg sodium, 0 cholesterol, 5 g fiber.
