I prefer something I can make ahead of time & just re-heat. One of my favorites is Chicken Cacciatore. Like most things with tomatoes, it is even better the next day, after the flavors have a chance to mingle.
I wouldn't call it easy (though it's not really difficult - just time-consuming), as I cut up all of the chicken instead of keeping it on the bone as in traditional CC, but the make-ahead factor makes up for this.
It is basically a healthy meal, with the onions, peppers, black olives, tomatoes, & chicken. (Plus a glass of red wine!) These days, of course, I serve it over a high-fiber pasta (like Dreamfields) rather than traditional white pasta.

I seldom have people for meals. I'm Vegan and most people want meat with every meal and don't want "fake" meat. I've even had people run to the bathroom after realizing something they thought was meat wasn't.

My favorite is tamales. I don't make them often, but usually when we have company.
