Baked acorn squash filled with mushrooms, walnuts, onions, garlic and rice, topped with Parmesan cheese and crushed Honey Dijon Kettle Chips. Okay - it was healthy until the chips, but it is so delicious with them, and I only do this once a year!

Jellied cranberry sauce mixed with crushed pineapples! We eat it on the Grands flakey biscuits.....delicious!
Also my sister's macaroni and cheese made from scratch with LOTS of cheese. I've yet to meet anyone who makes it as good as she does!

Our traditional family side dish is "bell pepper casserole." After living 30 years in the southwest it changed to "green pepper casserole," which incorporates roasted hot green peppers. When red and yellow bell peppers are on sale it becomes "fiesta pepper casserole," which also includes the roasted green peppers.

We usually have dinner with friends So there is quite the variety of sides. Uncle Bob's stuffing and scalloped onions, my dad's recipe.
(over a hundred people in the course of the day, mostly their family in this huge old house it actually works well they have done this for four generations and hopefully the 5thgeneration will be there this year)

Actually, this year I'm really craving stuffing. Not sure why because it has never been one of my favorites. Also- I always crave my aunt's spinach casserole- we fight over it!

I love Thanksgiving! It is the holiday that I host. I love to have everyone make time to stop and spend time together. I love every dish we all make so I need to watch out not to eat to much. But I will be up and moving on Thanksgiving morning and after dinner we will take a walk if it is not raining.

I absolutely DREAD them all around. I know I sound like a scrooge here, but it's all about food and spending way too much money. The real meaning of the Thanksgiving and Holiday season gets lost in all of this hoopla.
My "side dish," if anything, is really the main dish of being with my family, which is shrinking fast these days.

My favorite Thanksgiving side dish is candied sweet potatoes. I will not be the one preparing it this year so I do not know what recipe will be used. I do plan to eat it though!
