soak the barley in warm to warm/hot water for about an hour. If you buy too much barley, you can freeze the rest after soaking it in the water, or you could put it in the over overnight at 175 degrees to dry it out. Dried barley is good for other recipes, such as breakfast bars. The rest of the wet barley can be used for bread making.

3 meat balls per serving.

I've never tried to use wheat germ instead of barley. I wonder how that would turn out.

If you cannot find barley in a local grocery, or health foods store, you could use some quinoa. Quinoa comes in a box and it is found in the rice isle. You could also use some brown rice.

where does one get barley and would something like wheat germ work in its place? Sounds yummy :o)

I forgot to mention that you could boil the meat balls too instead of putting them on the skillet with oil. Boiling would cut down the calories, and gives the meat balls a different texture, less crunchy.

Ingredients
1 lb of lean ground turkey
2 eggs
¼ cup wet barley
½ cup chopped onion
1 Tbsp Worcestershire sauce
1 tsp salt
½ tsp pepper
¼ cup milk
1 piece of sandwich bread toasted dried
2 Tbsp olive oil

Directions
1. Mix turkey, eggs, barley, onions, Worcestershire sauce, salt, pepper in a bowl,
2. Mix in milk
3. Tear up bread into peas sized pieces and add
4. Make golf ball sized meat balls
5. Heat skillet to medium with olive oil
6. Cook meat balls evenly until no pink remains


Makes 9 servings
CALORIES PER SERVING: 140 cal
