I make a feaux chicken salad with Tempeh.
First you have to simmer it for about 15 minutes.
Then cut it into chunks about 1 square inch mix with any other ingredients you would usually put in chicken salad. I like onions, celery sundried tomatoes, pickle relish & nayonnaise.
I cut a whole wheat pita in half & warm it in the microwave for about 20 seconds then stuff it with the mixture. sometimes I put sprouts in the pita too.
