Tried two new recipes this weekend...from a Cooking Light Magazine. They are both yummy and since I modified them a bit they are even LESS calories than in there! I think that's a bonus round for me! First recipe is Spinach Lentil Soup, the other Chicken with Olives & Lemon. They are both do-again recipes!
Tonights dinner: Sweet potato with the Chicken, and home canned wax beans. yum! I still have a few calories left for later-I might have a bit of my Skinny Cow Caramel Cone ice cream!

crockpot chicken and stuffing---chicken, box of stuffing, fat-free cream of chicken soup, carrots and greenbeans. Put it all in the crockpot with some water and let it cook a few hours. Delicious!

Today for BREAKFAST I had scramble eggs, onion, yellow and red bell peppers, with cheese, pork sausage with a whole wheat tortilla wrap.. Ate half of it and the other will be for 2morrow breakfast....
LUNCH had chicken breast meat w/ cheese and stuffin, no vegetable, and a orange
DINNER will have chicken thigh baked in Hawiian sauce, Yellow Rice and Mixed Vegetables...
SNACK will have pineapple cup and Herbal Tea

The shame is that I cannot buy the Spark Book as America or Canada does not deliver to Malta. Its a shame.
Any way roast lamb with loads of veggies and a small portion of pasta (got tired of potatoes) was on the menu today followed by stewed apples.

Used up what I had on hand! Combined steamed rice, sugar snap peas with roasted,seasoned chickpeas and drizzled low sodium soy sauce over it! Fairly tasty for a last-minute meal!

I made a new recipe for dinner today. It was a Cooking Light recipe. I try to make most of my dinners from their recipes. This dinner was Chicken w/rosemary sauce and 1 cup of angel hair pasta. Was very good and the kids liked it.

A crazy morning so coffee was the breakfast...
Although I had a KFC Grilled Breast & Side of Mashed Potato & Gravy
Dinner was beef stroganoff (Sparkrecipes) over long grain rice, mixed vegetables, and pears.
and of course, the evening snack - a braeburn apple...
Hopefully tomorrow won't start so hectic to enjoy the morning and have breakfast!

After seeing Coach Jen's post about Chef Meg's Vegetarian Chili, I looked at the recipe-- and after checking that I had everything, I made it tonight. It's supposed to be done in a slow cooker, but I did it on the stove. Very good. Definitely a "keeper"!

(It was a crazy day) Pre-breakfast was a CarbControl protein shake. Breakfast was a yogurt parfait with granola, bananas, blueberries, strawberries. Lunch was a protein bar, and 2 cups of orange segments. Supper was a tossed salad, cauliflower, celery with Laughing Cow cheese, and (leftover) Pizza Pasta Casserole.
Still have an apple and some almonds to eat.

Breakfast was my usual cereal, plus yogurt and a cup of orange segments. Lunch was chicken breast, cooked carrots, celery with Laughing Cow lIght cheese. Dinner is going to be Chef Meg's cocoa crusted Pork, with a baked potato, salad, and beets. For snacks, I've had a low carb protein shake. After supper I'll have my favorite-- almonds and a small apple.

Lunch was Chef Megs Slow Cooker Chicken Marinara with .5 cup cooked sweet potato, .5 cup each, roasted cherry tomatoes and green peppers with skim milk and dinner is my own menu of lean beef and venison sausage meatloaf, steamed broccoli and cooked sweet potato.

I am losing inches but no more weight. I had Raisin Wheats with milk and a cup of tea for breakfast and for lunch I had a pork chop with loads of veggies and a small portion of mashed potatoe. Tonight I have having 2 slices of toast with an egg and some fruit.

Had a satisfactory weigh-in this morning, so I allowed myself an egg for breakfast. Soft-boiled, with dry toast. Delicious! Kept the calories down for the rest of the day by having chicken/baked bean soup for lunch and a chicken bbq pattie with sweet potato fries and a huge salad for dinner.

About 800 calories more than I should have eaten today, but boy, was it good: pulled pork sandwich for lunch, Christmas cake for dessert at dinner, peanut butter and toast for breakfast. Everything *so* tasty, so salty and so fat : ( Averages for the week OK though, so this damage should be minimal. Tomorrow's weigh-in will tell the tale.

Met a group of folks for dinner out, so I planned ahead by looking up the menu on the restaurant website, then checked out calorie counts on SparkPeople. I decided ahead of time what to order, ordered it, and enjoyed it. I'm right on track for my calories for the day, so I feel good about being able to have fun without fretting about my food. A great low calorie breakfast food - one piece of bread (I always toasted "lightly") ... mix 1/2 cup of small curd cottage cheese w/one package or sweetner. Spread the cottage cheese mixture over the bread - put in the oven under the broiler section ... just till you see it start to brown.

Lunch- salad made from lettuce, cherry tomatoes, scallions, grated carrot, tuna and cottage cheese, with a slice of granary bread and orange juice Dinner- Jacket potato, bolognese sauce made with Quorn, tomatoes, mushrooms, peppers and onions, having some low fat cheddar with it also. Snack- low calorie jelly, grapes
I am making two portions of the bolognese sauce so that I can have something healthy and quick to hand tomorrow.

Sliced my slightly frozen chicken in thin slices, seasoned them and cooked them and put them on a whole grain roll with light mayo, avocado, romain lettuce, thin slice fried extra lean ham and a slice of pepperjack cheese. Was so good!!
