I like my salmon fillet right on top of my salad greens, along with mandarin orange segments. You won't miss the dressing.

Also, for a more filling side dish, "Near East" makes an awesome parmesan-flavored couscous (I add mushrooms to it), and it's so easy to make. Just boil the water, dump in the mix, then wait 5 min's, and you're done.

I like salmon with brown rice and one of the Birds-eye steamfresh veggie combinations. For lunch I sometimes have it on a whole wheat roll with light mayo and tomato. It's a very versatile fish, but I find it's worth buying good quality salmon. If you have a Wegmans near you, they sell Atlantic salmon in bags of about 8 individually wrapped portions. It's the best frozen option I've found. Tastes fresh and never smells fishy.

I'm going to agree with everyone else and say asparagus. That is what I always make when I have salmon.. We also make chicken rice with it too. I love asparagus and usually end up eating about 15 spears! It's probably my favorite veggie.

I echo the asparagus thought... and a nice salad completes the meal. If you need a grain, lay the fish over some brown rice. yummy!

Hi Everyone!

About the Salmon, I had the brand wrong. It was actually Tom Thumb's brand of Salmon. It's frozen and has two large size pieces in them. I can get 4 meals of them. Thanks guys for the side dish ideas. I really like the sound of rice and asparagus.

Chef Sophie took the word right out of my mouth! Asparagus! It doesn't compete with the delicate flavor of tilapia. Not being a big salmon fan, I can't answer for sure, but I think asparagus goes with EVERYTHING! lol!

For lunch it's great in a salad. For dinner it's good with whole wheat couscous and grilled or roasted asparagus.

I purchased some Gorton's Grilled Salmon in both Original and Lemon Butter as well as the Tilapia. I was just wondering what I can pair Salmon or Tilapia with, to make a healthy Lunch or Dinner. I'm fresh out of ideas on Lunch and Dinner.
