I'm a bit eccentric. At Lunchtime, I eat my Dinner--the big meal of the day. So my supper is more like most people's lunch.

I had a large bowl of salad: red leaf lettuce, small hass avocado, plum tomato, 1/4 cup mushrooms, 1/4 cup cauliflower florets, 1/4 cup celery, 1/4 cup vidalia onion, 2 slices of Oscar Meyer mesquite smoked turkey breast. And then I ruined it all with 2 Tbsp of Kraft Ranch Dressing. And a tall glass of homemade green iced tea that I'd steeped with orange peels.

But HEY. I've got a small room for a pantry that's stocked like a personal mini mart, and I can't afford to just chuck all the no-no's out the window (okay, donate to a food kitchen), so one by one I'm going to eat my way through and replace with healthier choices. It was the Ranch Dressing's turn to get opened.

A tortilla wrap with chicken shaved deli meat, lettuce, avocado, salsa, and three tbs of Mexican rice. It was pretty damned good.

We always eat lunch on Sundays at our church's potluck meal. I had a small pierogi, some kind of dumpling w/ rice and onions, a big serving of salad and a small (very small!) piece of cake. I am always going to eat a little bit of everything everyone brings but just small samples of the starchy things and heavy on the salad. I must have done a good job being careful because I am still a little hungry which beats the days when I would leave the fellowship hall stuffed to the gills!

I made two tortilla paninis. I take a tortilla, put in 1/2 oz grated cheese. Add 1 oz cooked pork loin each (we had jerk the other day so I'm using up leftovers). Added a bunch of cilantro from my garden.

Fold and grill on my panini machine until cheese is melted and pork warmed. up.

Yummy and keeps me full until suppertime.

Soup! Chicken broth with tapatio & packed in bean sprouts, bell peppers, mushrooms, black beans, onion, shredded carrots, cilantro and 10 grams of basmati rice w/ lots of pepper and some cumin. Yum!!! So easy!

Today I had a Turkey sandwich with low fat cheese, lettuce, tomato and mustard. I also had 17 Special K crackers and a wedge of Laughing Cow Cream Cheese. I had a glass of water to drink with it all :) The sandwich was so good!

Restaurant lunch today: linguine with tiger prawns and a picante sauce, non-creamy. Even stole a couple of my wife's onion rings. Nutrition counter says I stayed well within calorie, fat and sodium ranges for one meal. I'm happy.

Campbells' Gardennay Red Lentil and Vegetable soup. Higher in sodium than I'd like, but rich in fibre and protein. Also had reduced-sodium vegetable cocktail, vinta crackers and an ounce of low-fat cream cheese.

Very stressful morning, avoided comfort eating, had instead 4 corn thins topped with shaved low fat cheddar cheese, followed by an apple for dessert. This afternoon I decided I deserved a reward for managing to resist some huge temptations these past few days, I went with a friend and had a 'wildberry smash smoothie' at our local McDonalds. Only 170 calories, 0.7g. of fat, 40.1 carbs, 34.0 sugar, 1.9 protein and 79g sodium, and it brought my nutritional count to just about perfect for today.

I deserve to be healthy and happy, and no one can do that for me but myself!

I had a turkey sandwich on 12 grain bread with mayo, tomato, mustard, romaine lettuce, and a slice of cheese. A Big glass of water and an apple were my side items.
