Not my own, I have made some changes to the original recipe, it is out of FAT BURNING GO FOR IT cookbook RAINBOW SALAD makes for to 5 cups (when my grand daughter was about four she called it pretty salad because the red cabbage turns the dressing purple)
3cups shredded green cabbage 1 1/2 cups shredded red cabbage 2 carrots, grated or julienned 2 stalks celery, thinly sliced 3 green onions, sliced ( I use any onions I have) 1 small green apple, finely chopped or julienned ( I use what ever apples I have) 1 tablespoon lemon juice (I forgot it last time and couldn't tell the difference) 1/2 cup non-far Miracle Whip (I'm sure any mayonnaise of your choice would be great) Apple Cider vinegar (to taste) 1 tablespoon sugar (to taste)
the only nutritional information with the recipe is: serving 1/2 cup 38 calories .5 g protein 5 g carbohydrate 1.4 g fat 71 mg sodium With the changes I've made or any changes you make this may be a little off as the recipe calls for a Tofu Mayo that I don't use and it calls for apple juice concentrate that isn't in my recipe.

I have been posting new recipes that I try on my cooking blog. Most of the time - I take recipes that sound good - and try to make them healthier. And since I work full time - all the recipes are SIMPLE - as in - 30 to 45 minutes prep / cook time.
Check it out - you might find something worth making!
I take a salad for lunch every day - it's how I get my greens in - but they were getting kind of boring. Today - I decided to experiment with something new:
Barbecue Chicken Salad:
2 Cups Favorite Salad Greens (I used 1 cup Romaine / 1 cup green leaf lettuc) 2 oz cut up cooked, boneless / skinless chicken breast 0.5 oz shredded cheese (I used the preshredded mexican blend) 1/4 cup canned corn (or cooked frozen corn)
For the dressing - mix 1.5 Tbsp of your favorite low-fat / low-calorie ranch with 0.5 Tbsp of your favorite BBQ sauce.
The combination of it all reminds me of a good old fashioned BBQ in the summer time. It's awesome!
Not a recipe of my own but I got from spark recipes...its called stuffed zuchini ...ITS WAS SOOOOOOOOOOOOO GOOD...you guys have to try it...I made it last night with a lil brown rice... and the family loved it!!!
