Thanks everyone for your suggestions :) I made the Ratatouille last night and it turned out pretty good! I have to say eggplant is a strange veggie, but the tastes of all the veggies put together really were wonderful together... even my 5 year old ate it!! We will try this strange veggie again ;)

I did not know the mouse visited people to cook. He did a great job in the show . anyway that said . the best job you can do for your family is to cook different vegetables every week . I try to buy a new one every week and fix it . If we did not like it i still buy it again and fix it another way . we might have not like the dish fixed the first way . love eggplant now find the best ones are small . hubby loves the smell that comes from the oven when we cook this .

I LOVE Ratatouille - its one of my favorite things to make... and eat!
I would suggest cutting any dense vegetables (eggplant, sweet potato, pumpkin) into 1 inch cubes and baking them (with a light spray of olive oil in the bottom of the pan AND again on top of the vegies) for about 20-25 minutes before tossing in with the rest of the ingredients... this gives it a more wholesome earthy flavour - and makes sure that they're cooked through properly!

ps: I never salt or peel my eggplant - I find that the roasting also takes the bitterness out of it :o)
The one thing about eggplant is that it can be bitter if you don't treat it right. Most recipes call for salting the slices and letting them sit for awhile. This draws out excess moisture and also the bitterness. You can rinse the salt off and pat them dry afterwards. Don't skip that step!

My family started a new thing about 2 mo ago now where every 2 weeks we get a fruit/veggie box from an area farm. The box that I will be getting today has an eggplant in it and honestly I have never made and I don't believe tasted eggplant before. I looked up some recipes and found Ratatouille which I thought could be fun if I have my kids watch the movie before dinner ;) But I'm wondering if there are any tricks or suggestions for making it.
