I just bought two pie pumpkins and will have to look up some recipes to figure out how to use them. I imagine you can just sub for butternut squash as well -- might do a search for that.

Well, I did check out SP recipes and even compiled a little cookbook of pumpkin recipes to try.

It includes some soups, a frittata, oatmeal, Afghan Pumpkin, and Red Lentils with Pumpkin (Indian) as well as some breads, muffins, cookies, and bars. However the breads seem to outnumber the veggie dishes so I thought I would post here for more ideas.

I will check out that Spicy Squash Casserole, and perhaps some other general squash recipes as well!

LOL! That certainly IS a lot of pumpkin! Well, pumpkin is "just" a squash, so I would suggest trying the Spicy Squash Casserole. DH and I loved it with butternut squash, but don't see why it wouldn't work with pumpkin just as well. And I believe I've seen a recipe or two on SparkRecipes for pumpkin soup. At any rate, just go to SparkRecipes and plug in pumpkin for an ingredient, and you should get a pretty good list of possibilities. Good Luck!

Does any one have anyone have main meal ideas that include pumpkin? My husband bought 2 that together total 80 pounds. That is a lot of pumpkin!

Laurie thanks so much..perfect and exactly what I have been looking for to mix a good layer of herbs and spices. I can easily sub the salt for "NO SALT" which tastes and measures like real table salt without the sodium..and the tomato products are easily gotten in the low/ no sodium version. Very much appreciated!

Put each meal you know how to make on an index card and then try a new recipe each week and if you like it add it to a card. That way you just choose 7 cards for the week.

I love trying new recipes! But I find sitting down and planning meals for the week hard. Thanks for some of the suggestions I plan to do some big batch cooking this weekend. emoticon emoticon

Also, try Giada de Laurentis' Chicken Spezzatino. It seems pretty low on the fat and calorie level and pretty high on the delicious factor. I recommend googling "chicken spezzatino giada recipie" to find it.

I also like the barefoot contessa chicken piccata, but I don't bread the chicken, I use about 1/3rd less butter than the recipie, and then put the chicken on a layer of roasted thinly sliced zucchini. It's really all you need instead of pasta.

Every week I go through my cookbooks to find one new recipie that I haven't done in awhile that would work within my bidget and witht he other groceries I am buying. I've got Ellie Krieger, Giada de Laurentis, Julia Child, Betty Crocker, plus some thai, chinese, and mexican cookbooks to keep in good rotation.

i look at the ads first then plan our meals around what's on sale. i've found a lot of good recipes on sparks recipes. usually, we'll have 1 or 2 meatless nights a week.

These are great ideas! My problem is that I am now cooking for one and so many of the recipes are for 4. I have cut them in half and then have two meals for one cooking! I just have to be sure to freeze the other half or plan on having that on a day when things are rushed.

I have found great recipes in the Light and Tasty magazine (from my local library) and they have all the nutritional values printed with each recipe.

Explore new foods or foods you'd like to revisit.

Make a list of foods you'd like to try, search sparkrecipes for two or three new recipes. Make sure to set up your cookbook of these recipes you want to try, once you start you'll find several.

I keep cookbooks next to my coupons, and I go through the coupons and cookbooks together to plan my meals. This helps me save the most (a big plus with two teenage boys)

I ran through a mental inventory of fridge, freezer and pantry before I sat down to make my menus. I listed the proteins I had in the freezer and the fresh produce. I began to mix and match them until I had meals outlined.

I shuffled them around based on what I was going to be doing that day. So far it's working great.

Since money has gotten tighter, I have switched my planning routine. Now I look first to see what is on sale, then I go through my nutrition planner and plan the dinners based on what I can afford to buy. Good thing we like beans and rice sometimes!

I do one crock pot recipe a week. I sometimes pick a cookbook and make every dinner from that cookbook. Or one recipe from that cookbook a week. Or I'll pick a family favorite and make it healthier.

I do plan my meals for the week. I try to do two seafood, two vegetarian, and then the other three different meats including chicken, pork, beef, turkey, and lamb. I also try to have at least one thing that comes from my freezer that I made in a prior week.

I like to make my menu out for the week and try to make one new recipe each week. Of course I repeat the favorites. I have found good recipes on this site, but also entered my recipes into the recipe calculator and saved them. I tend to buy meats on sale and put them in the freezer so I make my menus out with what I have on hand most of the time. It takes time to do all this but I think we are worth it.

I'm just learning too. I went to Sparks Recipes and found some to print out. I just searched dinner meals. I picked a couple of ingredients - that made it a little easier. If I can get it together, I like the idea I've read where some others pick a certain type of food for each day of the week...like Mexican Mondays, Chinese Tuesdays, etc. I am going to try to get that going...that would really help limit the search.
