BAKE 15 MINUTES
SERVES 16
CALORIES 107

NEEDED
1 CUP WARM (105-115 F) WATER
1 TABLESPOON SUGAR
1 PACKAGE ACTIVE DRY YEAST\2 TABLESPOONS OLIVE OIL
2 CUP BREAD FLOUR
1 CUP WHOLE WHEAT FLOUR
2 TEASPOONS SALT
HOW TO MAKE
1.MIX WATER, SUGAR, AND YEAST IN BOWL; LET STAND UNTIL FOAMY, 5 MINUTES. STIR IN OIL, FLOURS, AND SALT WITH A WOODEN SPOON UNTIL DOUGH STARTS TO GATHER AROUND SPOON. TURN DOUGH ONTO LIGHTLY FLOURED SUFACE; KNEAD UNTIL SMOOTH AND ELASTIC, 8 TO 10 MINUTES.
2. SPRAY LARGE BOWL WITH NON STICK COOKING SPRAY ADD DOUGH. SPRAY DOUGH WITH NON STICK COOKING SPRAY AND TURN TO COAT. COVER BOWL LOOSELY WITH PLASTIC WRAP AND LET RISE IN WARM SPOT UNTIL DOUBLED IN SIZE ABOUT 45 MINUTES.
3. MEANWHILE PREHEAT OVEN TO 475 DEGREES F. SPRAY HEAVY 10 X 15 JELLY-ROLL PAN WITH NON STICK COOKING SPRAY.
4. PUNCH DOUGH DOWN. PLACE DOUGH IN PAN; PRESS WITH FINGER TIPS TO COVER BOTTOM OF PAN. DIMPLE TOP OF DOUGH WITH HANDLE OF WOODEN SPOON AT 1 INCH INTERVALS, BAKE UNTIL GOLDEN BROWN, ABOUT 15 MINUTES. TRANSFER FLATBREAD TO RACK AND LET COOL SLIGHLY. TRANSFER TO CUTTING BOARD AND CUT INTO 16 RECTANGLES. SERVE WARM OR AT ROOM TEMPATURE.
