I do use aluminum foil and I usually double layer it.

Thanks so much for the help! Do you cover the regular baking dish with aluminum foil? Just wondering if that seals very well...In the past, I've only frozen vegetables and that was in freezer bags.

I freeze the spaghetti in plastic and the lasagna in disposable pans (alum.) or a regular baking pan. I line the pan with tinfoil to make for easy clean up. My concern is using the microwave for defrosting in plastic though so I either let it sit out to thaw or microwave it just enough to get it out of the plastic container.

I am a busy mom too..What type of containers do you freeze the spaghetti and lasagna in? I'm always afraid that I won't put it in the right container and it will get freezer burn...

I also have 4 kids, a FT job and very little time. I use my crock pots often, but I will cook two meals at once, one in each, and I freeze a lot of stuff. I like to use the crock pots when I am home, but I don't always. When I make lasagna,chili, spaghetti I make two batches. We eat one and freeze the other. If you google-once a month cooking, you will get a lot of hits. Good luck, it is worth having a meal ready on those long days. by the way, cooking some chicken or hamburger (I cook 10 pounds at a time often) ahead of time and freezing cuts off a lot of time, even if it is not in a prepared meal.

I will try to reconsider crock pots. The 2 pots I have were a gift for my wedding (many years ago) and have been sitting on a shelf in the garage since. Perhaps to make me feel more at ease about using would require that I purchase a new one myself. And maybe using it on the weekends and seeing how it works might help me overcome my fear. :p

Thanks for the site! I had some time to check it out....this would be good; however you have to pay a price for this. Call me el cheep-o :), but I like a free deal. They did have a sample of what a week's meal menu looks like with recipes and shopping lists. Maybe I'll try out this sample and see if it's worth the purchase. Thanks again! :)

Even though I only have 2 kids, I am still running out of time.

I don't freeze food. But, I do cook on Sunday for at least Monday and Tuesday. My family does not mind leftovers. I cook one main dish that lasts a few days and then do salads and fast side dishes on weekdays. It has been working very well. I usually get home around 5:30 and we can eat about 6:00.

I would love for you to reconsider using crock pot. I use mine at least once a month and I love it. Now that the weather is getting colder, it's great to come home to a nice warm stew after work. Crock pots are designed to be left alone. I usually put mine in the middle of the counter where it is not touching anything.

With 4 kids, a FT job & FT classes, it is very difficult for me to spend time to cook up a healthy nutritious dinner for my family in the evening, 7 days a week. I'm very weirded out about using a crock pot while no one is home so I was thinking of taking the advice I read in an article to freeze meals. However, I can't find that article again.

Does anyone do this once a week and suggest any nutritious recipes for the family? How long does this process take? And do you know of a great website to use as a resource for recipes and the health/safety facts on doing this?
