I like all veggies except the ones I mentioned. The only reason I mentioned them was to give an example of the question. I'm just trying to bring up topics for discussion.

well, that's a doozer. The whole point of Jamie's recipes, other than cooking with love, is throwing some veggies in there. And the ones you listed are usually the "base". Are there veggies you DO like? Use those in leu of the peppers (my hubby hates peppers too, so I use shredded or minced carrots) As for onions, you could totally leave those out, but put in Ms Dash or maybe some garlic or garlic powder if tolerated?

In any case, substutions are the norm to the rule. Ya just have to remember to put in some veggies somewhere! Even if it's on the side of the meat dish :o)

How comfortable are you with making substitutions to any of Jaime's recipes? I'll admit right off that there are a few things that I don't eat...onions, any kind of peppers and celery. I just can't being myself tomdevop a taste for them.
What do you do when you encounter a situation like that?
