I've been away for awhile but ready to get back on track with the cooking challenges. I think it would help to get the new recipe by Sunday b/c that's the day I go shopping and try to cook for the week on Sunday evenings. I am all about continuing with it though and hope other's are still up for it!

Unfortunately it looks like I'm on my own here. Talk about disappointing...

One thing that was not disappointing though were the recipes. Everything was delicious! My mom even said that the chicken was the best she'd ever had!

I'll be posting a blog with a picture (just took one of the finished project...forgot until the veggies were in the oven) a little later today. Please check it out!

The recipe turned out really well! Did anyone else try? I hope so!
I especially loved the applesauce. Jaime's recipe called for orange zest plus the juice squeezed from the same orange. I've never thought of infusing applesauce with orange before but it was absolutely amazing!

Just in case anyone is doing this anymore here are the new recipes for this week.

Pan-fried glazed pork chops (pg 230) glazed with applesauce (pg 210) and served with perfect, basic rice (pg 95)

I'm not making mine tonight because of prior obligations but I will post as soon as I make it.

Week 3 Challenge!

Hello all. Since it's almost Memorial Day Weekend here in the States, I'm assigning a bbq/potluck/picnic worthy meal that can be made either on the stove, in the oven, or on the grill.

The Pork Kabobs on page 238 and, to get this in before the season passes us by, the Dressed Asparagus on page 215-ish. Naturally, feel free to adjust what you stick on your kabob-- bell peppers and thick-sliced zucchini will almost certainly be found on mine! Serve with a carby side of your choice, or maybe just a big, refreshing spinach salad, since it's hot and no one wants to be eating sparked-up mashed potatoes at a time like this!

Have a great week and a fabulous 3 day weekend, if that is in the cards for you. Blogs about this tasty meal-to-be should be posted on Tuesday, June 1st.

Week 2 Challenge!

For our second week cooking together, let's make the Spicy Moroccan Stewed Fish with Couscous on page 26 with the Evolution Carrot Salad (any way you want it) on page 116. Get ready, because this is going to be awesome!

Not a fish person? Make the same base and replace the fish with either chicken or lamb (or anything, really...)

And here are links to a couple similar carrot salad recipes. Jamie's calls for very thinly sliced/grated carrots, but if you have the time to marinade and don't want to haul out the food processor, you can slice them in rounds or even leave them whole.

That's weird..I didn't see anything about lettuce in the peas recipe. Just peas and mint and the oil and salt...So was it possibly a different recipe?

I think the recipes for the peas that is posted below is a different recipe than what is in the Food Revolution book,too. Not that it really matters which one we are each doing though... I think one has lettuce in it, and the other one doesn't. Both still have mint though.

I'm glad I didn't turn up my nose at the minted peas, they were wonderful! Calorie count for both was reasonable the way we divided up the chicken (huge chicken breasts from Costco, two easily made enough for four to six servings depending on how hungry you are) and restrained ourselves on the peas. Yum, yum, yum!

If you go to the recipe calculator in Sparkrecipes, you will be able to plug in the exact ingredients and amounts you use to get the most accurate nutritional information. If you use chicken breasts and bake the chicken rather than pan fry it, you will have a pretty low cal dish.

Hello Everyone! The story here is we're going to work our way through Jamie Oliver's newest book, "Jamie's Food Revolution" and each week make the same set of recipes from it. The idea here is to get us to maybe try something different, to adjust recipes to be healthier, learn and practice some easy cooking techniques, and get inspired cooking ideas from other Sparkers. Look at it as a virtual potluck where we all bring varying types of the same dish (think potato salad-- each one unique in its own way :-)

Each Tuesday I'll announce what we'll be making for the week and sometime before the next Tuesday you make your meal. On that next Tuesday, we each post a blog about our meal, tell everyone what kind of tweaks or outright changes you made to the recipe and generally how you felt about the whole thing. Pictures would be great! Make sure that your blog title reads "Tuesdays with Jamie: insert recipe name here" so other participants can easily find it. Anyone can participate and even if you don't have the book, I'll include a link to a similar recipe and encourage you to join in. I'm going to leave part of the meals open-ended, since it is a pretty basic cookbook and we'll run out of sides and veggie dishes pretty fast. This way we can learn some healthy family recipes from each other, too!

This forum will be great for asking recipe and cooking questions throughout the week and I'll also post the next week's challenge here on Tuesdays. Feel free to also post a link to your Tuesdays with Jamie blogs as you write them!

So without further adieu, let me tell you about our first challenge, to be posted about on 18 May!

Main recipe: Crunchy Garlic Chicken from page 241

Veggie: Minted Peas on page 220-ish (for some reason there aren't page numbers in the veggie section...)

Side: Open! Maybe something in the book, maybe your mom's secret mashed potato recipe, maybe something you have been inspired to make for ages-- the choice is yours (though if you need suggestions, by all means post to the forum and ask. I made this last night with whole wheat spaghetti tossed with olive oil, roasted garlic, and fresh basil. A worthy side!)

Master chefs: Jamie's Food Revolution is a bit of a beginner's cookbook, so if you want more of a challenge, here is a link for a goat-cheese and thyme stuffed chicken recipe you might try:
