Zucchini pizza (zucchini, eggs, and cheese are the crust) It is great. You can even freeze the zucchini and have it any time of year!!

emoticon a favorite summer meal can revolve around smoked turkey. A smoked turkey leg at an outdoor Fayre.

Or easy for friends and family, a purchased smoked turkey served with a variety of salads.

We grill a lot during the summer so our favorite easy quick meal is a grilled chicken salad. We add a spring mix of greens with our favorite salad toppings. YUMMY!!

I am trying breakfast for supper while I don't have many family here. Kind of slows my overeating. Seems a bowl of cereal is just that.

One of my best times this summer was when DS took us to a Japanese restaurant for our anniv. GD and baby Zai were visiting. He's 20 months. He was so good. He can really enjoy eating rice, etc and he love ginger. I mean he LOVES it. He is learning early to eat some things that are good for him.

love to cook with the squashes-grate them and add a little olive oil,chille powder ,grated coconut,turmeric and salt and cumin seeds-delicious!

So many good ideas for summer meals. This will help on those days I don't feel like cooking or doing much of anything.

MRSQUTPIE55, how do you make your summer dressings. I'd like to give them a try.

Oh Bri, you make me miss my grill more and more. When we get back home that is one thing that I need to replace. Grilled veggies, chicken and grilled peaches ... MMMMM!

Ellen, eggs are always a standby at my house. We use them in so many different ways.

Those veggies sound good DustyPrairie.

My summer meal is a protein breakfast for visiting grandkids, along with some fruit. Know they are started well even if the rest of the day goes awry. Eggs and sausage are a favorite.

Roasted veg in foil packets. I open them the last few minutes for the smoky flavor. Put them next to a grilled chix thigh with grilled peaches and I'm in Heaven!

I like to make my own sald dressing from vinegar and summer fruits like raspberries, strawberries and pears. I make a lot of salads during the summer. I also make chutney from fruits and vegetables to serve with my chicken dishes. emoticon emoticon

My husband and I like to use fresh veggies from the garden. We saute yellow sqash,zucchini, onions and red and green peppers. Don't even need oil as the veggies are watery enough. we just season with Mrs Dash assortments. Yummy.

Sounds quite yummy Kathleen. I luv mixed greens with BBQ chicken, pear, walnuts and raspberry or balsamic vinaigrette. Fruity salads are soooo good during the warmer months.

My favorite summer meal is a large salad, with lettuce, cucumbers, radishes, onions and tomato with homemade ranch dressing. Take some leftovers from a rotisserie chicken, and I'm ready to go.
