Great for in between snack... light and healthy ...(Low carb)
Deli-meat: ham, turkey, chicken, etc.
Low fat cheese
Red Roasted peppers
Diced tomatoes, cucumbers (optional)
Green onions or sliced red onions
Hummus (... my favorite is: Roasted Red Pepper Hummus
Spread the lettuce with the hummus and add the meat, cheese, peppers, onions, etc...; add salt/coarse black pepper if desired and roll-up.

You can also add cooked black beans, garbanzo beans, etc.
